Turkish Pasta – Viral TikTok Recipe

    In recent years, TikTok and other social media platforms have become a popular source of inspiration for many when it comes to cooking and baking. I am not excluding us here. ;P You see something in a short video and want to try it yourself. That’s what happened here with this Viral Turkish Pasta. It looked delicious and we had to make it. Unfortunately, you don’t always get all the information you want from these short videos. But that can be changed… ;P

    I’m sure many people know the problem – someone cooks or bakes something on TikTok or Instagram, but the exact quantities of ingredients are not always revealed. Sometimes it’s obvious what you need, but not always. Then you have to search, and might find all the information you require on other people’s accounts – people that recreated the recipes with complete ingredient lists and preparation steps and wrote everything down. Those people are called food bloggers. ;P Just kidding. Well, not really. ;P

    Anyway. Anna Paul is the TikToker responsible for this viral pasta dish. She showed how to make the pasta with her mom, but there were no exact quantities listed in the captions. Not a big issue, most of the time, for cooking recipes – you add many spices to your liking anyway. I guess that’s why so many people liked the video. For baking recipes, on the other hand, this could have been a little problematic. Without exact quantities, there is a lot that can go wrong…

    Well. The pasta recipe is really nice. It’s more or less a deconstructed version of another Turkish dish: Turkish dumplings with yogurt sauce. Some of you might know them already. They are called Manti. A super tasty dish, but a lot more time-consuming to prepare. There you first have to prepare some dough, create little dumplings with a meat filling, then cook them and finish them with yogurt sauce and paprika butter. It’s a really delightful dish. But time-consuming.

    Here you simply replace the Manti with good old pasta, cook the meat separately until crispy and then finish everything with yogurt sauce and paprika butter. Soooo much easier, but in the end not less delicious. ;P So if someone were to ask me, »Hey, is this viral recipe worth trying?«. Well, most definitely. It’s easy to prepare, it’s delicious, it’s the perfect weeknight dinner! So it’s worth trying!

    Something I like a lot about this recipe – the ingredients are easy to get and nothing fancy is needed. Everyone has dried pasta hat home, I guess. The only thing you probably need to buy in a supermarket is the meat and the tomatoes, maybe. We normally have all the spices and some onions at home, parsley is growing on the balcony… that’s it. The cooking can begin. ;P

    Even the Greek yogurt is a staple in our kitchen. Normally, we use that type of yogurt for desserts with some fresh fruit, but in this case it’s the perfect sauce for the pasta. Fits really well with the meat and the paprika butter…

    Another Turkish recipe we always like to prepare in summer, for example, is a Turkish Bulgur Salad (Kisir). Super easy to prepare, and it goes well with everything grilled. The perfect salad for a BBQ along with some bread and other small snacks.

    Have you ever tried Fellah Kofta? From the same region as the Manti (or the pasta here) and also finished with yogurt sauce. So good! Like Manti, the kofta balls are a bit more labor-intense to prepare – unlike the pasta here. The same applies to Turkish Bread Rings aka. Açma. They take some time and love to prepare… but the result is definitely worth it! The bread rings are super fluffy and the perfect side for Turkish dishes like Fellah Kofta, Manti, or even this pasta here. ;)

    INGREDIENTS / ZUTATEN

    (4 servings)

    For the yogurt sauce:
    10 oz. (300g) Greek yogurt
    3-4 garlic cloves, grated
    1 tbsp. lemon juice
    salt, pepper

    For the spiced beef:
    17.6 oz. (500g) minced beef
    2 tsp. onion powder
    1 tsp. paprika powder
    1 tsp. ground black pepper
    1 tsp. salt
    1/2 tsp. ground cumin
    1 tbsp. tomato paste
    1 large red onion, diced

    For the paprika butter:
    2-3 tbsp. butter
    1-2 tsp. paprika powder

    For the toppings (optional):
    some halved cherry tomatoes
    some chopped flat-leaf parsley
    some crumbled feta

    17.6 oz (500g) pasta (e.g. Cochiglie Rigate*)

    (4 Portionen)

    Für die Joghurtsoße:
    300g griechischer Joghurt
    3-4 Knoblauchzehen, gerieben
    1 EL Zitronensaft
    Salz, Pfeffer

    Für das Hackfleisch:
    500g Rinderhackfleisch
    2 TL Zwiebelpulver
    1 TL Paprikapulver
    1 TL schwarzer Pfeffer, gemahlen
    1 TL Salz
    1/2 TL Kreuzkümmel, gemahlen
    1 EL Tomatenmark
    1 große rote Zwiebel, gewürfelt

    Für die Paprikabutter:
    2-3 EL Butter
    1-2 TL Paprikapulver

    Für die Deko (optional):
    einige halbierte Kirschtomaten
    etwas gehackte (glatte) Petersilie
    etwas Feta (zerbröckelt)

    500g Nudeln (z. B. Cochiglie Rigate*)

    DIRECTIONS / ZUBEREITUNG

    1. Start with the pasta – cook it according to the package instructions until al dente. Drain when done and keep warm.

    2. While the pasta is getting ready, you can prepare the other components of the dish. For the yogurt sauce, peel and grate the garlic and add it to the yogurt. Mix in lemon juice and season well with salt and pepper.

    3. Add the ground beef to a cold frying pan without adding any oil. Heat up until the meat starts to brown. Add the onion powder, paprika powder, black pepper, salt, and ground cumin. Next, add the tomato paste and mix in. Let everything cook for a moment, then add the diced onion and continue cooking until the meat is nicely browned and crispy and the onion is soft – stir often so nothing burns.

    4. For the paprika butter, add the butter and paprika powder to a small saucepan and heat up. Let everything cook/bubble for a moment – that’s it.

    5. Add the cooked pasta to serving bowls, top with yogurt sauce, minced meat, and paprika butter. Decorate with cherry tomatoes, chopped parsley, and some crumbled feta and enjoy!

    1. Mit den Nudeln starten und nach Packungsanleitung bissfest kochen. Abgießen und warm halten.

    2. Während die Nudeln kochen, kann man den Rest schon zubereiten. Den Knoblauch für die Joghurtsoße schälen und reiben. Mit Joghurt und Zitronensaft verrühren und dann mit Salz und Pfeffer abschmecken.

    3. Das Hackfleisch in eine kalte Bratpfanne geben und ohne Öl anbraten. Mit Zwiebelpulver, Paprikapulver, Pfeffer, Salz und Kreuzkümmel würzen. Tomatenmark dazugeben und unterrühren. Die gewürfelte Zwiebel dazugeben und alles so lange anbraten, bis das Hackfleisch schön gebräunt und knusprig und die Zwiebelwürfel weich sind. Man sollte konstant rühren, damit nichts anbrennt.

    4. Für die Paprikabutter, die Butter und das Paprikapulver in einen kleinen Topf geben und die Butter schmelzen. Alles einen Moment lang blubbern lassen – das war’s.

    5. Die Nudeln auf Servierschalen/Schüsseln aufteilen, dann Joghurtsoße, Hackfleisch und Paprikabutter darüber geben. Mit Kirschtomaten, gehackter Petersilie und etwas zerbröseltem Feta garnieren und servieren!
