France has many baked goods that have made their way around the world. Croissants and baguettes are likely the first things that come to mind for most people. Having grown up in a corner of Germany not far from Switzerland and France, I always think of a simple Quiche Lorraine as well here. That delicious tart with bacon, onions, and eggs… at least, that’s how it was always prepared by my family. An incredibly tasty dish!

Many people are probably familiar with Quiche Lorraine. It’s not just French restaurants that serve this delicious quiche/tart. Here in Berlin, for instance, it’s sold in many delis because it is incredibly tasty and can be eaten either warm or cold. Something like that is perfect for a simple lunch or dinner when served with a small side salad. So good!

Once you’ve baked a quiche like this at home, you can enjoy it over the course of several days. I theory. It keeps beautifully in the fridge and can be quickly reheated in the microwave or the oven. Quiche Lorraine also freezes well. You can thaw and reheat it whenever you’re ready to eat. There are plenty of options…

A classic (original) Quiche Lorraine is prepared without onions. The original version didn’t use shortcrust pastry, either, but rather a simple bread dough. However, things have changed over the centuries. What started as a dish made from leftovers by farmers – using up bread dough, a bit of cream, and bacon – has evolved into a popular delicacy. I couldn’t say exactly how onions found their way into the recipe, but I think they go wonderfully with the other ingredients.

Preparing a Quiche Lorraine is very easy, thanks to the shortcrust pastry base. If we were still making it with bread dough, we’d probably have it much less often on the menu. Too much effort.

Speaking of shortcrust pastry… In this recipe, the quiche crust and filling are baked all at once. To be honest, we do this for the sake of convenience. If the crust is rolled out nice and thin, it’s really not a problem. However, if the crust is a bit thicker, the chances are good you get a soggy bottom after baking. To prevent this, you can simply blind-bake the crust for about 12-15 minutes without the filling, which significantly reduces the risk of a soft base.

This quiche recipe is part of the »Bake Together – The Baking Surprise« series with my dear blogger friend Andrea from Zimtkeks & Apfeltarte. We’ve been getting together once a month for several years now to pick a shared theme and develop recipes for that. This month, we chose a theme that fits the current season perfectly: savory quiches and/or tarts. They are ideal for the colder months of the year.

Over the years, we’ve accumulated hundreds of recipes across our two blogs — a colorful mix of baking recipes and a few savory cooked dishes as well. While that might seem to contradict the »Bake Together« theme, you can’t live on cake alone, right? If you’d like to see what we’ve created so far, you can take a look here.

Beyond the »Bake Together« series we’ve got plenty of other recipes for tarts and savory treats here on the blog as well. One recipe I can highly recommend is our Zucchini, Chorizo & Cheese Tart. It’s extremely tasty and perfect for an evening when guests come over.

If you’re looking for something closer to a classic Quiche Lorraine, you should check out our German Onion Cake aka. Zwiebelkuchen which is made with yeast dough. Here, too, onions, bacon, and cheese take center stage – only this time, they’re nestled in/on top of a fluffy yeast dough base. If you have a little extra time, you should definitely give this simple onion cake a try. It’s an absolute treat!

INGREDIENTS / ZUTATEN

For the dough:
9 oz. (250g) all-purpose flour*
1/2 tsp. salt
5 oz. (140g) cold butter, cut into pieces
1.7 fl. oz. (50ml) ice water, plus some more if needed

For the filling:
some oil for frying
9 oz. (250g) smoked bacon, finely diced
3 yellow onions, finely diced
1.7 fl. oz. (50ml) apple cider*
7 oz. (200g) sour cream
4 medium eggs
5.3 oz. (150g) Gruyère, finely grated & divided
salt, pepper
some grated nutmeg

Für den Teig:
250g Mehl (Type 405)*
1/2 TL Salz
140g kalte Butter, in Stücken
50ml Eiswasser, ggf. etwas mehr

Für die Füllung:
etwas Öl zum Anbraten
250g Räucherspeck, fein gewürfelt
3 gelbe Zwiebeln, fein gewürfelt
50ml Apfel Cidre*
200g Schmand
4 Eier (M)
150g Gruyère, fein gerieben & aufgeteilt
Salz, Pfeffer
etwas geriebene Muskatnuss

DIRECTIONS / ZUBEREITUNG

1. Combine the flour and salt for the dough in a bowl. Add the cold butter (cut into small pieces) and use a pastry blender* to cut it into even smaller pea-sized pieces. Next, add the ice water and work everything into a smooth dough. If the dough doesn’t hold together, add a little more water and work it in. Wrap the dough in plastic wrap and place it in the fridge for about 1 hour.

2. Lightly grease a 24cm tart tin with a removable bottom* and set it aside. Roll out the dough on a lightly floured surface until it is slightly larger than the tart tin, then place it in the tin and press firmly against the bottom and sides. Trim off any excess dough overlapping the edges. Prick the base several times with a fork and place in the refrigerator until ready to use.

3. Finely dice the bacon for the filling. Peel and finely dice the onions. Finely grate the Gruyère cheese. Set everything aside.

4. Heat a little olive oil in a frying pan, add the diced bacon, and fry until it has taken on some color. Remove it from the frying pan and set aside in a bowl. Add a little more oil to the frying pan, heat it up, then add the diced onions and sauté them for a few minutes until softened and slightly browned. Deglaze the onions with the apple cider and let it cook down until almost completely gone. Add the onions to the fried bacon and mix well.

5. Preheat the oven to 200°C (390°F). Mix the sour cream well with the eggs. Add about 3.5 oz./100g of the grated cheese and mix it in. Season everything well with salt, pepper, and some freshly grated nutmeg.

6. Remove the prepared tart tin from the fridge and place it on a baking sheet. Spread the bacon and onion mixture evenly inside the crust, then pour the sour cream, egg, and cheese mixture on top. Ensure everything is distributed evenly. Sprinkle the remaining cheese on top and bake the quiche in the preheated oven for about 32–35 minutes. The filling should have set and nicely browned. If you think the filling gets too dark towards the end of the baking time, simply slide a baking sheet onto the rack above it to shield the quiche from some of the heat. Remove the finished quiche from the oven, let it cool on a wire rack for about 15–20 minutes, and then serve it (luke)warm or cold.

Notes:
+ It is better to let the quiche cool a little longer rather than too briefly – if you cut into it too soon, it may fall apart.
+ You can also bake the quiche in a 23cm pie dish* ​​– however, make sure to grease the dish thoroughly so the quiche releases easily.

1. Das Mehl und das Salz für den Teig in einer Schüssel vermischen. Die kalte Butter in kleinen Stücken dazugeben und dann mit einem Teigmischer* zu etwa erbsengroßen Stücken zerteilen. Das Eiswasser dazugeben und alles zu einem glatten Teig verarbeiten. Sollte der Teig nicht zusammenhalten wollen, ggf. noch ein wenig Wasser dazugeben und einarbeiten. Den Teig in Klarsichtfolie einschlagen und für etwa 1 Stunde in den Kühlschrank legen.

2. Eine 24cm Tarteform mit Hebeboden* leicht einfetten und zur Seite stellen. Den Teig auf einer leicht bemehlten Fläche etwas größer als die Tarteform ausrollen, dann in die Form legen und am Boden und den Seiten festdrücken. Überlappenden Teig an den Rändern abschneiden. Den Boden mit einer Gabel mehrmals einstechen und dann bis zur weiteren Verwendung in den Kühlschrank stellen.

3. Den Speck für die Füllung fein würfeln. Die Zwiebeln schälen und fein würfeln. Den Gruyère fein reiben. Alles zur Seite stellen.

4. Eine Pfanne mit etwas Olivenöl erhitzen, dann den gewürfelten Räucherspeck dazugeben und so lange anbraten, bis er etwas Farbe bekommen hat. Aus der Pfanne nehmen und in einer Schüssel zwischenparken. Noch etwas Öl nachlegen und erhitzen, dann die Zwiebelwürfel in die Pfanne dazugeben und einige Minuten anbraten, bis sie weicher geworden sind und etwas Farbe bekommen haben. Mit dem Apfel Cidre ablöschen und diesen fast komplett verkochen lassen. Die Zwiebeln zum angebratenen Speck dazugeben und alles gut vermengen.

5. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Den Schmand mit den Eiern gut verrühren. Etwa 100g vom geriebenen Käse dazugeben und untermengen. Alles gut mit Salz, Pfeffer und frisch geriebener Muskatnuss würzen.

6. Die Backform mit dem Boden aus dem Kühlschrank nehmen und auf ein Backblech setzen. Die Mischung aus Speck und Zwiebeln gleichmäßig auf dem Boden verteilen, dann die Schmand-Ei-Käse-Mischung darüber gießen. Man sollte hier darauf achten, dass alles schön gleichmäßig in der Form verteilt ist. Den verbliebenen Käse darüberstreuen und die Quiche dann für etwa 32-35 Minuten im vorgeheizten Ofen backen. Die Füllung der Quiche sollte gestockt und schön Farbe bekommen. Sollte sie allerdings gegen Ende der Backzeit etwas zu dunkel werden, einfach ein Backblech auf die Schiene darüber schieben, damit etwas weniger Hitze an die Quiche kommt. Die fertige Quiche aus dem Ofen nehmen und für etwa 15-20 Minuten auf einem Kuchengitter abkühlen lassen und dann (lau)warm oder kalt servieren.

Hinweise:
+ die Quiche lieber etwas länger als zu kurz abkühlen lassen – schneidet man die Quiche zu früh an, kann sie gerne mal auseinanderfallen.
+ man kann die Quiche auch in einer 23cm Pieform* backen – hier sollte man die Form allerdings wirklich gut einfetten, damit sich die Quiche nach dem Anschneiden gut herauslösen lässt.
