Almond Tahini Cookies

    I got a fresh batch of cookies for you today!! Happy Cookie Friday! Yay! Some of you might be a bit surprised about the ingredients in these cookies. Not the common chocolate chip cookie but I can promise these Almond Tahini Cookies are really delicious. Also slightly healthier than other cookies cause they are made without sugar. And also vegan. Good, right?! :)

    Some of you might have read my last blog post (with a recipe for a sugar-free apple cake) – I was talking a bit about what’s going on in my life right now and why I am cutting back on sugar. It’s health-related, yes ;) Well, I do not want to Quit sweets and cakes completely so I have to get used to some alternatives when it comes to baking that stuff. That’s the reason why you get a recipe today without any white sugar… but still sweet and delicious. Instead of the sugar, I used maple syrup to get some sweetness into the cookies.

    Some people might say „yeah, but maple syrup has sugar in it“… well yes – but it’s a slightly better sugar. Fewer calories plus some vitamins and minerals. Better than regular sugar. Simple as that. Your blood sugar level will still get high with these cookies but I did not say you have to eat them all ;P All jokes aside. Reducing white sugar is almost always a good idea, so exchanging it with something else is a good thing. If you want to get rid of the sugar completely use some sugar-free sweeteners. The amount of maple syrup is pretty small anyway so using something else should work.

    Well… besides that… just try them. I personally like them a lot. For me, they are super sweet – probably of my „almost no sugar diet right now“. If you like sesame these cookies are definitely made for you. Sugar reduced or not ;) My colleagues at work liked them a lot and my bf almost ate half of the first batch by himself. That says a lot about the cookies ;))

    INGREDIENTS / ZUTATEN

    (15 cookies)

    5.3 oz. (150g) ground almonds
    1/4 tsp. baking soda
    pinch of salt
    3.5 oz. (100g) tahini (sesame paste)
    4 tbsp. maple syrup
    1/2 tsp. vanilla extract

    2-3 tbsp. white sesame seeds
    2-3 tbsp. black sesame seeds

    (15 Cookies)

    150g Mandeln, gemahlen
    1/4 TL Natron
    Prise Salz
    100g Sesampaste (Tahini)
    4 EL Ahornsirup
    1/2 TL Vanille Extrakt

    2-3 EL weißer Sesam
    2-3 EL schwarzer Sesam

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside.

    2. Add the ground almonds, baking soda, and salt to a large bowl and mix. Add the tahini, maple syrup, and vanilla extract and mix until well combined. Make 15 walnut-sized balls out of the dough. Mix the sesame seeds in a small bowl and roll the balls in that mixture. Flatten the balls a bit and place with some space in between on the baking sheet. Bake for about 8 Minutes until set and slightly golden in color. Take out of the oven and let cool on the baking sheet until you can move them (they are still a bit soft when they come out of the oven). Transfer to a wire rack and let cool down completely. Store in a cookie box in dry place.

    1. Den Ofen auf 180°C (359°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.

    2. Die gemahlenen Mandeln, Natron und Salz in einer Schüssel vermischen. Tahini, Ahornsirup und Vanille Extrakt dazugeben und alles gut verrühren. Aus dem Teig etwa 15 walnussgroße Kugeln formen. Die beiden Sesamsorten in einer kleinen Schale vermischen und die Kugeln darin wälzen. Die Kugeln etwas flach drücken und dann mit etwas Abstand zueinander auf das Blech setzen. Für etwa 8 Minuten backen – die Cookies sollten einigermaßen fest sein, wenn man draufdrückt und etwas Farbe bekommen haben. Aus dem Ofen holen und auf dem Blech abkühlen lassen, bis man sie bewegen kann und dann auf ein Kuchengitter legen zum kompletten Auskühlen. In einer Dose an einem trockenen Ort aufbewahren.
