Caesar salad is a standard in our house when it comes to dinner (and not just in summer). We love making this salad – especially, when no one wants to cook (or eat) a big meal. We almost always have some homemade Caesar Salad Dressing ready in the fridge. It’s so easy to make, stays fresh for quite some time, and tastes great, of course! We love it!

Caesar salad isn’t necessarily one of the healthiest salads, to be honest. The dressing adds quite a few calories and fat to your diet – thanks to the mayonnaise! At least in our version, it’s mayo. Other versions of this dressing use a generous amount of oil, for example. No matter if you use oil or mayo – those calories and the fat make the dressing so delicious. You have to admit that. ;P
If you want to make the dressing a little healthier and lower in calories, you can replace the mayo with Greek yogurt or something similar, of course. It will taste a little different, but no less delicious. We’ve also tried a vegan version of the dressing – with cashews as the main ingredient and capers (instead of anchovies) and some yeast flakes for extra flavor. You can do that too, but similar to the yogurt version, it just tastes different… not bad at all, just different.

The dressing can be used for 3 to 4 days when stored in the fridge. In case you make a little extra, like we do, you can eat Caesar salad for several days in a row. Whether it’s the classic salad with just romaine lettuce and a few croutons, or the version with chicken or other proteins. All are very tasty. These days, we love to make Caesar Chicken Pasta Salad – another version that that requires a little extra work because you have to cook some pasta as well. But to be honest – still an easy and quick Caesar salad version. ;)
If you don’t want to eat salad all the time, the dressing is also great for sandwiches. Just spread a little on toasted bread, add your favorite toppings (cold cuts, cheese, lettuce, etc.), and you’ve got a delicious snack, lunch or dinner. The dressing also works well on burgers – instead of ketchup and mayo, simply drizzle a little dressing on top of your burger patty or grilled veggies (if those are the stars of your burger).

You can also use the dressing for our BLT Caesar Chicken Wraps. Caesar salad with a twist, you could say – wrapped in a large tortilla flatbread so you can take it anywhere you want without a salad bowl. Maybe something you want to do for your next picnic in the park… ;P
You could even use the dressing as a dip if you like. We have a recipe for delicious Zucchini Fries here on the blog that are actually served with a ranch dip… but the Caesar dressing would also work great as a dipping sauce. There is so much you can do with a simple Caesar dressing…
INGREDIENTS / ZUTATEN
(8 servings)
1–2 garlic cloves, finely chopped
1 tsp. anchovy paste*
2 tbsp. lemon juice
1 tbsp. olive oil
1 tbsp. white wine vinegar
1 tsp. Dijon mustard* (or hot mustard)
1 tsp. Worcestershire Sauce*
9 oz. (250g) mayonnaise*
1.8 oz. (50g) Parmesan cheese, finely grated
salt, pepper
(8 Portionen)
1–2 Knoblauchzehen, fein gehackt
1 TL Sardellenpaste*
2 EL Zitronensaft
1 EL Olivenöl
1 EL Weißweinessig
1 TL Dijon Senf* (oder scharfer Senf)
1 TL Worcestershire Sauce*
250g Mayonnaise*
50g Parmesan, fein gerieben
Salz, Pfeffer

DIRECTIONS / ZUBEREITUNG
1. Peel and finely chop the garlic or press it through a garlic press*. Mix with the anchovy paste, lemon juice, olive oil, vinegar, mustard, and Worcestershire Sauce in a small bowl.
2. Add the mayonnaise and grated Parmesan, mix well, and season with salt and pepper to your liking. The dressing can be stored in the refrigerator for up to 3 days.
1. Den Knoblauch schälen und fein hacken oder durch eine Knoblauchpresse* drücken. Zusammen mit der Sardellenpaste, Zitronensaft, Olivenöl, Essig, Senf und Worcestershire Sauce in einer kleinen Schüssel verrühren.
2. Mayonnaise und geriebenen Parmesan dazugeben, alles gut vermischen und dann mit Salz und Pfeffer abschmecken. Das Dressing kann bis zu 3 Tage im Kühlschrank aufbewahrt werden.
