Christmas is the time to give it all. Gifts, decorations, and food. It’s the time to treat others and yourself, of course, after a hard year of work. Oh, yes… and because of Jesus and his friends, of course. This should not be forgotten since it’s his birthday. Without him, there would be no Christmas ;) So let’s forget our healthy lifestyle for a moment and indulge ourselves with some delicious Peanut Butter Brownie Trifles. You can go back to the treadmill in January ;P
To be honest – I am not the biggest fan of Christmas. It’s a stressful time. All that decorating, the gifts shopping, family visits… would not mind doing one of these things for Christmas but not all at once ;P I also prefer traveling in spring or summer and not when it’s f*ing wet and cold outside.
The only thing I (really) enjoy about Christmas is the food. Who would have guessed ;P For everyone else this might be an additional task that causes additional stress, but I really like preparing loads of food for Christmas. Including planning everything in advance, the shopping, the extra time in the kitchen… I love it. Well… the shopping right before Christmas can be a bit annoying, but that’s because all the others are so annoyed and that rubs off a bit ;P
Anyway. I wanted to share my trifle recipe here and not stories about Christmas shopping and decorating the house. Let’s focus on the important things: food! Delicious calories assembled in a glass to make it look kind of fancy ;P The delightful end of a great Christmas dinner.
To be honest – again – this dessert is not for everyone. If you don’t like peanuts or peanut butter or if you are allergic to these nuts you better leave immediately. There is a lot of those nuts involved in this dessert. Don’t ask me if you can omit the peanuts or peanut butter with something else. Yes that happens. No! No! No! It’s peanuts, chocolate and whipped cream or nothing ;P
Classic trifles follow the same rules (more or less): layers of some type of custard (here with peanut butter), something cakey like vanilla sponge or brownies, some whipped cream or mousse and loads of decorations. Well and fruits/berries, of course, if you are into that kind of stuff ;) You can do the layering in fancy glasses or plain old bowls – doesn’t matter. You could also double/triple the recipe and build yourself a giant trifle similar to the Summer Trifle I arranged in a “mini aquarium” ;P Do whatever you think works best for you!
INGREDIENTS / ZUTATEN
For the peanut butter pudding:
2 cups (480ml) milk or plant-based alternative
1.4 oz. (40g) cornstarch
2 tbsp. sugar (or xylitol)
1 tsp. vanilla extract
2 tbsp. peanut butter
For the trifles:
7 oz. (200g) heavy cream, cold
1-2 tbsp. confectioners’ sugar
5-6 chocolate brownies
some warmed peanut butter for drizzling
some melted chocolate for drizzling
some chopped peanuts for sprinkling
some Reeses Mini Peanut Butter Cups (optional)
Für den Peanut Butter Pudding:
480ml Milch oder pflanzliche Alternative
40g Speisestärke
2 EL Zucker (oder Xylitol)
1 TL Vanille Extrakt
2 EL Erdnussbutter
Für die Trifles:
200g kalte Sahne
1-2 EL Puderzucker
5-6 Brownies
etwas erwärmte Erdnussbutter
etwas geschmolzene Schokolade
einige gehackte Erdnüsse
einige Reeses Mini Peanut Butter Cups (optional)
DIRECTIONS / ZUBEREITUNG
1. Add the cornstarch and sugar (or xylitol) to a small bowl, add some of the milk, and mix to combine. Set aside. Add the rest of the milk and the vanilla extract to a small pot and bring to a boil while stirring constantly. When you see bubbles add the cornstarch mixture and stir in. Let cook and thicken for a moment, then pull off the heat and stir in the peanut butter. Place a piece of plastic wrap directly on the pudding to avoid skin from forming and let cool down completely. You can do that a day in advance.
2. When ready to assemble the trifles add the cold heavy cream to a tall bowl, add the confectioners’ sugar and whisk until stiff peaks form. Set aside. Remove the plastic wrap from the pudding and mix with a handheld mixer (or use your hands and a whisk) and mix the pudding until soft and creamy. Add about 2 tablespoons of the whipped cream and fold in.
3. To layer the trifles, start with some of the peanut butter pudding, then add some broken brownie pieces on top, add some more of the pudding, then add some whipped cream. Decorate with some more brownie pieces, drizzle with warm peanut butter, melted chocolate, and drizzle with chopped peanuts. Add some Mini Peanut Butter Cups (optional) and enjoy.
1. Stärke und Zucker (oder Xylit) in eine kleine Schüssel geben, einen Teil der Milch dazugeben, gut verrühren und dann zur Seite stellen. Die restliche Milch und den Vanille Extrakt in einen kleinen Topf geben und unter ständigem Rühren zum Kochen bringen. Sobald Bläschen aufsteigen, die Stärkemischung dazugeben und einrühren. Die Mischung aufkochen und eindicken lassen. Vom Herd ziehen und die Erdnussbutter einrühren. Ein Stück Klarsichtfolie direkt auf den Pudding auflegen, damit sich keine Haut bildet und dann vollständig abkühlen lassen. Den Pudding kann man einen Tag vorab zubereiten und dann im Kühlschrank lagern.
2. Für die Zubereitung der Trifles dann erstmal die Sahne mit dem Puderzucker zusammen steif schlagen. Den durchgekühlten Erdnussbutter-Pudding mit einem Handrührgerät kurz aufschlagen, damit er schön luftig und cremig wird. Etwa 2 EL der aufgeschlagenen Sahne unterheben.
3. Als Erstes etwas Pudding in die Gläser geben, dann einige zerbröckelte Brownie Stücke darauf verteilen. Als Nächstes noch einmal Pudding, dann Sahne einfüllen. Mit kleinen Browniestücken dekorieren, mit aufgewärmter Erdnussbutter und geschmolzener Schokolade beträufeln und dann mit gehackten Erdnüssen bestreuen. Wer mag, kann noch einige Peanut Butter Cups auf den Trifles verteilen (optional).
