Oatmeal Coconut Cookies (gluten-free & sugar-free)

    Happy Cookie Friday! I got a fresh batch of cookies for you once again… like (almost) every Friday for the past 4 or 5 years… I can never remember how many years it’s been already ;) Anyway. It’s a new recipe for some delicious Oatmeal Coconut Cookies – sugar-free, gluten-free, and perfect for snacking all day long. If you wanna grab one, you better be quick! ;)

    This week’s recipes are all diabetic-friendly, sugar-free, or sugar-reduced in some way. Why you may ask… well, the answer is very simple: tomorrow is World Diabetes Day and I wanted to draw some attention to this day because I think it is an important day and people should know about it… well and about diabetes, of course. I am a diabetic myself for some time now, so I have to deal with it every day. You probably don’t have to think about your diet all the time, but knowing some facts and maybe use some dietary tips in your daily life can’t hurt, right? :P

    There are many websites out there that can give you more information about diabetes – one, for example, is the page from the German Diabetes Help (Deutsche Diabetes Hilfe): https://www.diabetesde.org – if you are interested in the topic I recommend reading some articles there about the disease and what you can do if you joined the “club” ;) Maybe you want to (or have to) cook or bake for someone with diabetes one day – knowing a bit more can help here.

    Well. These cookies here are a good example of a recipe that is suitable for diabetics. No sugar or white flour has been used here – instead, the sugar is replaced with xylitol (birch sugar), and the coconut flour, grated coconut, and oat flakes are used as the cookie dough base instead of carbohydrate-rich standard wheat flour. This means the cookies are low-carb, sugar-free, gluten-free (if you used gluten-free oats), and perfect for someone with diabetes type 2, for example ;)

    The cookies have a slightly different texture as you probably know from cookies with regular flour – since there is no gluten the cookies are a bit more crumbly. So don’t toss them around or throw them at people. Just hand them out on a plate or bowl ;P

    INGREDIENTS / ZUTATEN

    (8 cookies)

    1/3 cup (80g) butter, at room temperature
    1/4 cup (50g) xylitol
    1 large egg
    1/2 cup (65g) coconut flour
    1/2 cup (50g) shredded coconut
    1/2 cup (40g) rolled oats (gluten-free)
    1/2 tsp. baking powder
    pinch of salt

    (8 Cookies)

    80g weiche Butter
    50g Xylit
    1 Ei (L)
    65g Kokosmehl
    50g Kokosraspel
    40g Haferflocken (glutenfrei)
    1/2 TL Backpulver
    Prise Salz

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside.

    2. Add the butter and xylitol to a large bowl and mix until light and fluffy. Add the egg and mix until well combined. Mix the coconut flour with shredded coconut, rolled oats, baking powder, and salt in a separate bowl, then add to the large bowl and mix until a dough starts coming together. Use a cookie scoop or tablespoons and place 8 dough portions on the prepared baking sheet. Flatten the dough portions and bake for 10-12 minutes until lightly golden brown. Take out of the oven and let cool down a bit on the baking sheet, then transfer to a wire rack and let cool down completely.

    1. Den Ofen auf 180°C (350°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.

    2. Die Butter mit dem Xylit in eine große Schüssel geben und hell und luftig aufschlagen. Das Ei dazugeben und gut unterrühren. Kokosmehl, Kokosraspel, Haferflocken, Backpulver und Salz vermischen und dann zur Schüssel dazugeben und alles gut verrühren. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln acht Teigportionen auf das vorbereitete Blech setzen und flachdrücken. Für 10-11 Minuten backen, bis die Cookies leicht Farbe bekommen haben. Aus dem Ofen holen und erst auf dem Blech etwas abkühlen lassen und dann auf einem Kuchengitter komplett auskühlen lassen.
