Is everyone in the Christmas spirit yet? If not, it’s about time! Maybe a little Advent calendar, something to nibble on, and Christmas music will do the trick and get you in the right mood? »Last Christmas« is already playing on a continuous loop around here. On top, I can offer you the 9th door of the Food Blogger Advent Calendar with some delicious Marshmallow Jammy Sandwich Cookies. I case you ended up here in spring or mid-summer, all the Christmas talking might not interest you… but that’s ok. Just jump to the recipe at the end. ;P

Back to the Christmas spirit… these sandwich cookies are part of a cute little Advent calendar – one created by food bloggers with 24 different recipes and surprises. Unfortunately, this calendar is not filled with chocolate that can be eaten, but you will get loads of recipes you can do at home. Like these sandwich cookies.
The day this recipe is published, is December 9th 2016 – this means it’s the 9th door of the Food Blogger Advent Calendar… but I already mentioned that. ;P If you want to know more about the Advent calendar, what’s behind each door, who is taking part – take a look at our Facebook page. Well. Since today is also Friday, it was quite obvious to hide some cookies behind that Advent calendar door – Cookie Friday, you know! Not necessarily Christmas cookies, but something that could maybe become one of your new favorite cookie… that is also fitting for Christmas. ;P We love these sandwich cookies. Two chocolate cookies with a marshmallow and jam filling, covered all around with dark chocolate. Sounds good, right?!
To be honest, we’re not the biggest marshmallow fans here. That stuff is just too sweet and too sticky for us. Eating them on their own would never come to our minds. However, if you combine them, for example, with some jam, cookies, and chocolate, everything starts looking much better instantly. :P

What type of jam (marmalade) or jelly you use for these sandwich cookies is up to you. I like to use classic raspberry jam. The combination is great, but you can go any other way as well. If you like it less sweet, we recommend using a more tart orange marmalade – it balances out the sweetness of the marshmallows. Luckily, you can easily test which combination you like best – just prepare one or two sandwich cookies with different types of jam and eat them. You will know immediately what you like better…

INGREDIENTS / ZUTATEN
(20 cookies)
For the dough:
1/2 cup (120g) butter, at room temperature
3/4 cup (150g) sugar
1 medium egg
2 cups (260g) all-purpose flour
1/2 tsp. baking powder
1 tbsp. cocoa powder
1 pinch of salt
For the filling/decoration:
10 large marshmallows
100g marmalade
14 oz. (400g) semi-sweet chocolate coating
(20 Cookies)
Für den Teig:
120g weiche Butter
150g Zucker
1 Ei (M)
260g Mehl (Type 405)
1/2 TL Backpulver
1 EL Kakao
1 Prise Salz
Für die Füllung/Dekoration:
10 große Marshmallows
100g Marmelade
400g Zartbitterkuvertüre


DIRECTIONS / ZUBEREITUNG
1. Add the butter and sugar to a large bowl and mix on high until light and fluffy. Add the egg and mix until well combined. Next, mix flour, baking powder, cocoa, and salt and add to the bowl – mix/knead until you get a nice smooth dough. Shape it into a ball, flatten it and wrap in plastic wrap. Place in the fridge for about 30 minutes.
2. Preheat the oven to 180°C (350°F). Line two baking sheets with baking parchment and set aside. Roll out the dough on a floured surface and cut out 40 rounds – each about 6cm in diameter. Place them on the baking sheets and bake one baking sheet after another for about 8-10 minutes. Take out of the oven and let cool down on the baking sheet for a moment, then transfer to a cooling rack and let cool down completely. Repeat with the second baking sheet – do not turn off the oven.
3. Half the marshmallows. Turn half of the cookies (20) upside down and place them on a baking sheet. Place a marshmallow piece on each of those cookies. Brush some marmalade on the backside of the other cookies and set them aside. Place the ones with the marshmallows in the oven and bake them for about 2-3 minutes. Take them out and immediately place the cookies with the marmalade on top of the cookies with the marshmallows and press them together. Let cool down on a wire rack.
4. Chop the chocolate coating and melt it in the microwave or over a small pot with simmering water. Coat the cookies with the chocolate and let them cool down completely on a wire rack.
1. Butter und Zucker in einer großen Schüssel hell und luftig aufschlagen. Das Ei zugeben und gut unterrühren. Mehl mit Backpulver, Kakao und Salz vermischen und zur Schüssel dazugeben, kurz unterrühren und dann zu einem glatten Teig verkneten. Den Teig zu einer Kugel formen, platt drückend und in Klarsichtfolie wickeln. Für etwa 30 Minuten in den Kühlschrank legen.
2. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Zwei Backbleche mit Backpapier auslegen und zur Seite stellen. Den Teig auf einer leicht bemehlten Arbeitsfläche ausrollen und 40 Teigkreise mit jeweils 6cm Durchmesser ausstechen. Die Teigstücke mit genügend Abstand zueinander auf die Bleche setzen und dann jeweils ein Backblech in den Ofen schieben und für 8-10 Minuten backen. Aus dem Ofen holen, kurze Zeit auf dem Blech abkühlen lassen und dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Die restlichen Kekse ebenso backen. Den Ofen danach nicht ausschalten.
3. Die Marshmallows halbieren. Die Hälfte der Kekse (20) umgedreht auf ein Backblech legen (Unterseite zeigt nach oben) und mit jeweils einem halben Marshmallow belegen. Die Unterseiten der restlichen Kekse mit der Marmelade bestreichen und zur Seite stellen. Als Nächstes die Kekse mit den Marshmallows für etwa 2-3 Minuten im Ofen backen, herausnehmen und dann sofort mit den Keksen mit der Marmelade zusammendrücken. Auf einem Kuchengitter abkühlen lassen.
4. Die Kuvertüre grob hacken und schmelzen – entweder in der Mikrowelle oder über einem Topf mit köchelndem Wasser. Die Kekse damit überziehen und dann auf einem Kuchengitter trocknen lassen.
