Homemade Licorice Syrup

Are you a licorice fan or do you hate it? I think there is not much in between loving it and hating it ;) At our house, there are two distinct parties – the licorice lovers and the licorice haters… I belong to the group that likes licorice. Of course! :P That’s why you are getting some delicious licorice syrup from me today. Homemade of course!

It is something very special – I have to admit it – liquid licorice. I am pretty sure there are a lot of people out there that think “eeewww”! Well – not me! Licorice syrup is something you can use for many recipes… as a topping on ice cream to give it an extra kick, for a vinaigrette, to mix cocktails… or for cooking and baking! Some say it’s also nice in milk and coffee, but that is not working for me. I tried ;)

You can make a really nice frosting or buttercream for licorice fans with the syrup or add it to a cheesecake filling… so good! You should try!

When making the syrup, you can actually define the intensity of the flavor by choosing the ingredients you use and by the proportions of the ingredients you use. I used sugar beet syrup as a base, but you could also use molasses which gives the product a more intense flavor. Making the syrup based on this recipe, it’s also important what kind of licorice flavoring you use. The flavors you can buy in stores are made differently and have different intensities. The one I used is very intense, so a couple drops are enough – with other products you might need a higher dosage… you have to check what the package says when you buy it ;)

INGREDIENTS / ZUTATEN

  • English
  • Deutsch
(about 6.7 fl. oz.)

1 1/2 tbsp. licorice powder*
3 tbsp. warm water
6.7 fl. oz. (200ml) sugar syrup
4-5 drops licorice flavor*
some black food color

(für ca. 200ml)

1 1/2 EL Lakitzpulver* (Süßholz gemahlen)
3 EL warmes Wasser
200ml Zuckerrübensirup
4-5 Tropfen Lakitz-Aroma*
etwas schwarze Lebensmittelfarbe

DIRECTIONS / ZUBEREITUNG

1. Mix the licorice powder with the water in a small pot. Add the sugar syrup and mix well. Bring to a boil and let bubble for a moment. Take off the heat and add the licorice flavor. Add black food color and mix in until you get the color you like (not much needed though). Remove foam from the mixture and fill into a bottle while it is still warm. Store in a cool place.

1. Das Lakritzpulver mit dem Wasser in einem kleinen Topf verrühren. Den Zuckerrübensirup dazugeben und unter rühren kurz aufkochen lassen. Wenn die Mischung etwas geblubbert hat, vom Herd nehmen und das Lakritz-Aroma dazugeben und unterrühren. Lebensmittel nach Belieben dazugeben, um den Sirup zu schwärzen. Entstandenen Schaum abschöpfen und dann für etwas abkühlen lassen, dann noch warm in ein kleines Fläschchen füllen. Kühl lagern.
