Cheddar Bacon Scones

    I am pretty sure you all heard of scones or even made them already, right? Scones are one of those typical British bakes you get with your tea. Normally served with clotted cream and jam. Delicious treat! For these scones with cheddar and bacon, I recommend something else: sour cream with herbs or just some salted butter. Maybe a beer. Jam would be weird… but who knows. I bet some folks would like that too ;))

    I like scones a lot when they are sweet. With fruits, berries or nuts. There are so many nice options. I already made many and posted some recipes here on the blog. Today’s scones are not sweet. I wanted something savory for a change. They are great for a non-sweet breakfast, as a side for soup or as bread for your next BBQ.

    If you made scones already, you know it’s quite easy to prepare them. The dough needs only couple minutes, no matter if sweet or savory. You shape a little disc and cut it like a pizza. Done. Or the classic shape would be round made with a large cookie cutter. Well… whatever you like best. It’s easy – that’s what I wanted to say ;) These cheddar bacon scones are even less work for you, cause they don’t need a glaze on top. Take them out of the oven and they are ready to eat (if you give them 5 minutes to cool down a bit). Easy peasy ;)

    I told you already, that I have some recipes for sweet scones on the blog – maybe there is something you like. There is only one thing I never serve with my scones: clotted cream. You can’t get it here in stores and make it yourself at home takes time. Time I don’t have normally ;) Some butter and jam work fine though. Or nothing at all – most of them you can enjoy plain ;)

    INGREDIENTS / ZUTATEN

    (6 scones)

    1 3/4 cups (230g) all-purpose flour
    1 1/4 tsp. baking powder
    1/2 tsp. salt
    1/8 tsp. white pepper
    1/4 cup (60g) cold butter
    2.5 oz. (70g) cheddar cheese, grated
    1.7 oz. (50g) bacon, diced finely
    1-2 tsp. fresh thyme
    1/2 cup (120ml) buttermilk
    1 large egg
    2 tsp. mustard

    (6 Scones)

    230g Mehl (Type 405)
    1 1/4 TL Backpulver
    1/2 TL Salz
    1/8 TL weißer Pfeffer
    60g kalte butter
    70g Cheddar, gerieben
    50g Speck, fein gewürfelt
    1-2 TL frischer Thymian
    120ml Buttermilch
    1 Ei (L)
    2 TL Senf

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 425°F (220°C). Line a baking sheet with baking parchment and set aside.

    2. Mix the flour, baking powder, salt, and pepper in a large bowl until well combined. Add the butter in small pieces and cut with a pastry blender until you get pea-sized crumbs. Add the grated cheese (keep some for sprinkling the scones), bacon, and thyme and mix in. In a small bowl mix the buttermilk with the egg and mustard. Add to the large bowl and mix until just combined. Place the dough on a floured surface, dust with some additional flour if sticky and form a disc with a thickness of about 1.2 inches (3cm). Cut the disc into 6 equal slices like you would do with a pizza. Place the slices on the prepared baking sheet, sprinkle with the remaining cheese and bake for 12-14 minutes – they should have a nice golden color. Take out of the oven and let cool down on a wire rack.

    1. Den Backofen auf 220°C (425°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.

    2. Das Mehl mit dem Backpulver, Salz und Pfeffer in einer großen Schüssel vermischen. Die Butter in kleinen Stücken dazugeben und dann mit einem Teigmischer oder Messer in etwa erbsengroße Stücke zerteilen. Den geriebenen Käse dazugeben (etwas zum Bestreuen der Scones zurückbehalten), ebenso den Speck und Thymian. Alles vermischen. Die Buttermilch mit dem Ei und Senf in einer separaten Schüssel verquirlen und dann zur Schüssel mit den restlichen Zutaten dazugeben und alles kurz verkneten. Den Teig auf eine bemehlte Fläche setzen und zu einer etwa 3cm (1.2 inches) dicken Scheibe formen, dann wie eine Pizza in 6 gleich große Stücke schneiden und auf das vorbereitete Blech setzen. Die Dreiecke mit dem verbliebenen Cheddar bestreuen und dann für 12-14 Minuten backen. Die Scones sollten etwas Farbe bekommen haben. Aus dem Ofen nehmen und auf einem Gitter abkühlen lassen.
