    Happy Cookie Friday! I got some cookies you today you probably haven’t tried or made so far. As you might know, I am always trying to come up with something new when it comes to cookies and today I made cookies with popcorn. And I have to say… the result is really nice! So grab one of these Caramel Popcorn Cookies quickly or they’re gone. Believe me ;P

    You can add pretty much anything to cookie dough. Chocolate or nuts are more or less standard ingredients (and sometimes boring, to be honest). It gets more interesting when you start using unusual ingredients or combine “weird” ingredients. Chocolate and salt are a good example. The combination sounded strange to many people several years ago, now everybody does it… because it’s freaking delicious ;)

    Combining salted popcorn and caramel is not the most daring or latest flavor combination you can find out there. It’s basically premade available in many supermarkets right now – you just have to pop it into the microwave, x-ray it for several seconds, and then you are ready to enjoy it ;P But using it in cookie dough? Not very common… at least not here in Germany ;) Americans probably made cookies like that in the 18th century already and kept it a secret from the world because it tastes so delicious…

    Anyway. I think the cookies are really good. I’m not allowed to stuff more than one of the cookies into my face, because there is quite a bit of sugar involved but I still like to take the risk from time to time. I have to drink a lot of water afterward and go for a long walk with the dog… but that’s ok. Just kidding :P

    The cookies are really delicious and crunchy because of the added popcorn. It’s a real pity that you can’t make caramel without real sugar… otherwise, I could make the cookies completely sugar free and bake them more often (and eat them more often). Well… getting one cookie once in a while is kind of OK – and the rest of the cookies are always gone fast and eaten by other happy cookie lovers ;P

    INGREDIENTS / ZUTATEN

    (12 cookies)

    1/2 cup (115g) butter
    1/2 cup (100g) brown sugar
    1 medium egg
    1 tsp. vanilla extract
    1 cup (130g) all-purpose flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    0.9 oz. (25g) salty popcorn, chopped
    1.9 oz. (50g) soft caramels, chopped

    (12 Cookies)

    115g Butter
    100g brauner Zucker
    1 Ei (M)
    1 TL Vanille Extrakt
    130g Mehl (Type 550)
    1/2 TL Backpulver
    1/4 TL Salz
    25g salziges Popcorn, feingehackt
    50g Sahnekaramellbonbons, gehackt

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Chop the popcorn finely. Chop the soft caramels as well and set both aside.

    2. Add the butter and brown sugar to a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix until well combined. Mix the flour with baking powder, and salt and add to the bowl – mix until just combined. Add the chopped popcorn and soft caramels and fold in. Use a cookie scoop or tablespoons and place dough portions onto the prepared baking sheet. Keep some space in between because the cookies will spread a bit. Bake for 12-15 minutes or until the edges are set and got a nice golden color. Take out of the oven and let cool down on the baking sheet for a moment, then transfer to a wire rack and let cool down completely. Repeat with remaining dough.

    1. Den Ofen auf 180°C (350°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Das Popcorn und die Sahnekaramellbonbons hacken und zur Seite stellen.

    2. Die Butter und den braunen Zucker in eine große Schüssel geben und auf höchster Stufe hell und luftig aufschlagen. Das Ei und den Vanille Extrakt dazugeben und gut verrühren. Mehl, Backpulver und Salz vermischen und dann zur Schüssel dazugeben und nur kurz unterrühren. Das gehackte Popcorn und Karamell dazugeben und unterheben. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln Teigportionen mit etwas Abstand zu einander auf das vorbereitete Blech setzen und für etwa 12-15 Minuten backen. Die Ränder der Cookies sollten fest sein und etwas Farbe bekommen haben. Aus dem Ofen holen, auf dem Blech etwas abkühlen lassen und dann auf einem Kuchengitter komplett auskühlen lassen. Mit dem restlichen Teig wiederholen, bis alles aufgebraucht ist.
