Happy Cookie Friday! Today I got super chocolaty cookies for you! Vegan Avocado Chocolate Cookies – packed with chocolate flavor… so much that I recommend a glass of milk to enjoy these little fellas. Some people are just not made for that much chocolate in one single cookie ;P Just kidding… but still – keep the milk close by!
Don’t worry… I might have exaggerated a bit to emphasize how delicious these cookies are. Most people will probably have no problems with the amount of chocolate. I could easily eat several of these cookies at once. I’m not doing that because of the sugar, but theoretically, I could ;)
I got many cookie recipes here on the blog and these here are probably on the “healthier” side of the cookie spectrum. They are vegan, made with wholemeal flour, avocado (as an alternative to butter or oil), and a relatively little amount of sugar. I used raw cane sugar here, but if somebody wants to make them sugar-free, you can use a sugar substitute like xylitol without any problems and of course, you can use sugar-free chocolate as well if you want to.
Because of the combination of chia and avocado the cookies are kind of moist and fudgy. I recommend storing the cookies in a cool place (e.g. the fridge). The cookies will stay fresh for several days, but of course, they are best on the first day… you know the drill I guess ;)
INGREDIENTS / ZUTATEN
1 tbsp. chia seeds
3 tbsp. water
1 ripe avocado (about 3 oz. of flesh), mashed
1/4 cup (50g) raw cane sugar
1/2 tsp. vanilla extract
1.8 oz. (50g) cocoa powder
1/3 cup (40g) wholemeal spelt flour
1/2 tsp. baking powder
1 tbsp. oats milk
1.8 oz. (50g) semi-sweet chocolate, chopped
1.4 oz. (40g) pecans, chopped
1 EL Chiasamen
3 EL Wasser
1 reife Avocado (etwa 85g Fleisch), zerdrückt
50g Vollrohrzucker
1/2 TL Vanille Extrakt
50g Kakaopulver
40g Dinkelvollkornmehl
1/2 TL Backpulver
1 EL Haferdrink
50g Zartbitterschokolade, gehackt
40g Pekannüsse, gehackt
DIRECTIONS / ZUBEREITUNG
2. Add the avocado flesh to a large bowl and mash until you get a smooth green paste. Add the sugar, vanilla extract, and the soaked chia seeds and mix until well combined. Mix the cocoa powder with flour and baking powder in a separate bowl. Add together with the oats milk to the large bowl and mix until well combined. Add the chopped chocolate and pecans and fold in. Use a cookie scoop or tablespoons and place dough portions on the baking sheet, flatten a bit and bake for 9-10 minutes. Take out of the oven and let cool down on a wire rack.
2. Das Avokadofleisch in eine große Schüssel geben und zerdrücken, bis eine glatte, grüne Masse entstanden ist. Mit Zucker, Vanille Extrakt und den gequollenen Chiasamen verrühren. Kakao, Mehl und Backpulver vermischen und dann zusammen mit dem Haferdrink zur Schüssel dazugeben und alles gut verrühren. Die gehackte Schokolade und die Pekannüsse dazugeben und unterheben. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln Teigportionen auf das Blech setzen, etwas flachdrücken und dann für 9-10 Minuten backen. Aus dem Ofen holen und auf einem Kuchengitter abkühlen lassen.
