Peaches ‘n’ Berries Summer Cobbler

    There are so many delicious things you can make for dessert. The choice can be quite overwhelming, to be honest. If you are as indecisive as me sometimes, I recommend trying this simple Peaches ‘n’ Berries Summer Cobbler and serving it with some ice cream on top. It’s an extremely tasty dessert that can be prepared in no time at all and doesn’t require fancy ingredients. Most of them can be found in your kitchen cabinets I assume – with one small exception maybe ;)

    With that »one small exception«, I do not mean the peaches or berries. Well… I guess those fruits are normally also not layin’ around in your cabinets all year round. I actually meant the ground ginger that’s listed as an ingredient for the cobbler. It’s a spice not many have at home. We use it a lot here for our bakes, but it’s not very common I think. But that doesn’t matter, because you can leave it out if you don’t have any at home. No problem. The cobbler will be still very delicious.

    Anyway. This type of dessert is quite simple and easy to prepare. Grab some fruits/berries – it actually doesn’t matter if it’s peaches and berries or something else. You can use pretty much anything that grows on trees and bushes for a cobbler. Also, the fruits/berries don’t necessarily have to be fresh from the farmer’s market – you can perfectly use frozen fruits for a cobbler. I often use fresh fruits that need to go and then add more frozen until I got enough to make the cobbler. Frozen fruits and berries are typically cheaper and a great way to serve a dessert with fruits/berries even in winter when the fresh ones are nowhere to find. Winter in Germany is not the season for fruits and berries from local sources ;P

    Besides the fruits/berries – the ingredients for the doughy part of the dessert are pretty basic. If you got the ingredients for a basic sponge cake you are good to go here as well: flour, sugar, butter, baking powder, and some heavy cream. I assume that’s the stuff many people have at home on a regular basis. Stir everything together, spoon it on top of the fruits, pop it into the oven and in about 30 minutes you got yourself a delicious, bubbling dessert on the table. Served with some ice cream, this is a great sweet treat!

    Cobblers can be prepared in several ways. In this recipe here, the batter is quite soft and is spooned onto the fruits. In other recipes, the dough is a bit denser and can be torn into pieces you add on top, or you could cut out small circles and place those on the fruits. The main goal is to cover everything – whatever way you manage to do that ;P

    Over the years I’ve tried many cobbler recipes already. The ones below show the different ways you can prepare the dessert. The Cobbler with raspberries and strawberries has a top where the dough was cut out with a round cookie cutter and the Cobbler with plums and apples has a topping where the dough was torn into pieces…

    Anyway. The recipe today is (once again) one of many in the »Bake Together – The baking surprise« series with Andrea from Zimtkeks & Apfeltarte. Once a month we pick a topic and based on that we both create something and surprise each other with the results. And I assume you guessed it already – this month we chose »cobbler« as our topic ;)

    INGREDIENTS / ZUTATEN

    (4-5 servings)

    For the fruit filling:
    2-3 peaches
    9 oz. (250g) mixed berries (frozen is ok)
    1 tbsp. lemon juice
    1/2 tsp. vanilla extract
    3 tbsp. cornstarch
    2 tbsp. brown sugar (or xylitol)

    For the topping:
    1 cup (130g) all-purpose flour
    2 tsp. baking powder
    3 tbsp. brown sugar (or xylitol)
    1/2 tsp. ground ginger
    1 pinch of salt
    1.4 oz. (40g) butter, melted
    4.2 oz. (120g) heavy cream

    (4-5 Portionen)

    Für die Fruchtfüllung:
    2-3 Pfirsiche
    250g gemischte Beeren (gefroren ist auch ok)
    1 EL Zitronensaft
    1/2 TL Vanille Extrakt
    3 EL Speisestärke
    2 EL brauner Zucker (oder Xylit)

    Für das Topping:
    130g Mehl (Type 405)
    2 TL Backpulver
    3 EL brauner Zucker (oder Xylit)
    1/2 TL gemahlener Ingwer
    1 Prise Salz
    40g Butter, geschmolzen
    120g Schlagsahne

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 375°F (190°C). Wash and dry the peaches, remove the stones, and cut them into thin slices or small pieces. Add together with the mixed berries to a 9 inches pie dish* (or similar). Add lemon juice and vanilla extract. Mix the cornstarch with the sugar (or xylitol) and sprinkle over the fruits/berries. Mix everything well. Set aside.

    2. In a large bowl mix the flour with baking powder, sugar (or xylitol), ground ginger, and salt. Add the melted butter and heavy cream and mix with a rubber spatula until just combined. Use two spoons to create small dough portions and distribute them evenly all over the fruits/berries. Bake in the preheated oven for 30-35 minutes or until the top is golden and the juices of the fruits/berries have started bubbling up. Take out of the oven and let cool down a bit. Serve warm with some vanilla ice.

    1. Den Ofen auf 190°C (375°F) Ober-/Unterhitze vorheizen. Die Pfirsiche waschen, trocknen, entsteinen und in dünne Scheiben oder kleine Stücke schneiden. Zusammen mit den gemischten Beeren in einer 24cm Pie Form* (o.ä.) verteilen. Zitronensaft und Vanille Extrakt hinzugeben. Die Speisestärke mit dem Zucker (oder Xylit) mischen und über die Früchte/Beeren streuen. Alles gut vermischen. Zur Seite stellen.

    2. In einer großen Schüssel das Mehl mit Backpulver, Zucker (oder Xylit), gemahlenem Ingwer und Salz vermischen. Die geschmolzene Butter und Sahne dazugeben und nur kurz verrühren – ein Teigschaber ist hier am besten. Mit zwei Löffeln kleine Teigportionen abstechen und gleichmäßig auf den Früchten/Beeren in der Backform verteilen. Im vorgeheizten Ofen etwa 30-35 Minuten backen – Oberfläche sollte goldbraun sein und der Saft der Früchte darf hier und da hoch geblubbert haben. Aus dem Ofen holen und nur ein wenig abkühlen lassen. Noch warm mit Vanilleeis servieren.
