Description
One of my favorite desserts in summer – super easy to prepare and in and out of the oven in a hot second ;) Delicious Peach ‘n’ Berries Summer Cobbler. So good!
Ingredients
For the fruit filling:
2–3 peaches
9 oz. (250g) mixed berries (frozen is ok)
1 tbsp. lemon juice
1/2 tsp. vanilla extract
3 tbsp. cornstarch
2 tbsp. brown sugar (or xylitol)
For the topping:
1 cup (130g) all-purpose flour
2 tsp. baking powder
3 tbsp. brown sugar (or xylitol)
1/2 tsp. ground ginger
1 pinch of salt
1.4 oz. (40g) butter, melted
4.2 oz. (120g) heavy cream
Instructions
1. Preheat the oven to 375°F (190°C). Wash and dry the peaches, remove the stones, and cut them into thin slices or small pieces. Add together with the mixed berries to a 9 inches pie dish* (or similar). Add lemon juice and vanilla extract. Mix the cornstarch with the sugar (or xylitol) and sprinkle over the fruits/berries. Mix everything well. Set aside.
2. In a large bowl mix the flour with baking powder, sugar (or xylitol), ground ginger, and salt. Add the melted butter and heavy cream and mix with a rubber spatula until just combined. Use two spoons to create small dough portions and distribute them evenly all over the fruits/berries. Bake in the preheated oven for 30-35 minutes or until the top is golden and the juices of the fruits/berries have started bubbling up. Take out of the oven and let cool down a bit. Serve warm with some vanilla ice.
