Blueberry Walnut Banana Bread

    It’s time for another banana bread. You can never ever have enough banana bread recipes, right? Bananas turn brown so quickly in the kitchen and that’s the moment almost nobody wants to eat them anymore… and the moment they are perfect for some banana bread ;) This delicious Blueberry Walnut Banana Bread will be a great addition to any recipe collection! Don’t you think?

    Over the years, I’ve baked and eaten my fair share of banana bread. I just love them – no matter if it’s a plain one or »enhanced« with other ingredients besides the name-giving bananas. Banana Bread is always delicious, has almost always a great texture and normally stays fresh for days. Something you can’t say about every other bake out there ;P

    All of that only applies if you like bananas, of course. If the smell of (overripe) bananas makes you gag, we got a fundamental problem ;P In a case like that you will not make any friends with freshly baked banana bread. But that is ok – not everyone has to like everything. Are you weird if you don’t like banana bread? Maybe. Are you a bad person because of it? Of course not! ;P

    Well ;) As I mentioned before – you can do a plain ole banana bread with nothing else but bananas… but you can also add other stuff you like. You just need a basic banana bread recipe that works well and whenever you are in the mood you can change things up a bit. Additional nuts, dried fruits, fresh berries… there is a lot you can add if you like. Just don’t overdo it!

    My add-ons are not that weird or uncommon – blueberries and some walnuts. There are definitely some more adventurous combinations you could choose. Once I baked banana bread with peanut butter and bacon. That was special… and really delicious but probably not for everyone ;) If you want to see it on the blog just let me know in the comments…

    Walnut Banana Bread

    Wholemeal Cinnamon Banana Bread

    Anyway. We got a yummy and moist banana bread here that has a lot of fans out here. Instead of regular sugar and all-purpose flour, I used xylitol (a sugar replacement) and spelt flour. If you don’t have that stuff at home you can switch to a/p flour and white sugar – no problem. I don’t want you to not be able to make this delicious banana bread. Well… you definitely need some overripe bananas. Those are crucial for this delicious banana bread ;)

    INGREDIENTS / ZUTATEN

    3 very ripe bananas (13 oz./370g peeled)
    1/2 cup (100g) sugar (or xylitol)
    3 oz. (85g) butter, melted
    1/4 cup milk
    1 tsp. vinegar
    2 medium eggs
    1 tsp. vanilla extract
    2 cups (260g) spelt flour
    3/4 tsp. baking powder
    1 tsp. ground cinnamon
    1/4 tsp. ground cardamom
    1/4 tsp. salt
    3.5 oz. (100g) blueberries
    1.8 oz. (50g) walnuts, chopped (plus some more)

    3 sehr reife Bananen (ca. 370g, geschält)
    100g Zucker (oder Xylitol)
    85g Butter, geschmolzen
    60ml Milch
    1 TL Essig
    2 Eier (M)
    1 TL Vanille Extrakt
    260g Dinkelmehl (Type 630)
    3/4 TL Backpulver
    1 TL Zimt
    1/4 TL Kardamom
    1/4 TL Salz
    100g Blaubeeren
    50g Walnüsse, gehackt (plus etwas mehr)

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Line a standard loaf tin* with baking parchment and grease lightly. Set aside. Melt the butter and let cool down. Add the milk and vinegar to a small bowl and let sit for about 5-6 minutes.

    2. Add the bananas to a bowl and mash. Add the sugar (or xylitol), melted butter, milk vinegar mix, eggs, and vanilla extract – mix until well combined. Mix the flour, baking powder, cinnamon, cardamom, and salt. Add to the bowl with the bananas and mix until just combined. Add the blueberries and chopped walnuts and fold them in. Pour the batter into the loaf tin and smooth out the top. Sprinkle with some more chopped walnuts and bake for 50-60 minutes or until a wooden skewer inserted into the center comes out clean. Take out of the oven, remove the cake from the baking tin, and let cool down completely on a wire rack.

    1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Eine Kastenform* mit Backpapier auslegen und leicht einfetten. Zur Seite stellen. Die Butter schmelzen und abkühlen lassen. Die Milch und den Essig in eine kleine Schüssel geben und etwa 5-6 Minuten stehen lassen.

    2. Die Bananen in eine Schüssel geben und zerdrücken. Zucker (oder Xylit), geschmolzene Butter, Milch-Essig-Mischung, Eier und Vanille Extrakt dazugeben und alles gut verrühren. Mehl, Backpulver, Zimt, Kardamom und Salz separat mischen. In die Schüssel mit den Bananen geben und alles gut vermengen. Die Blaubeeren und gehackten Walnüsse unterheben. Den Teig in die Kastenform geben und glatt streichen. Mit ein paar gehackten Walnüssen bestreuen und etwa 50-60 Minuten backen – mit einem Holzspieß testen, ob noch Teig kleben bleibt und das Bananenbrot erst herausnehmen, wenn dieser sauber herauskommt. Bananenbrot aus dem Ofen nehmen, aus der Form lösen und auf einem Kuchengitter komplett abkühlen lassen.

    Description
