Banana bread is probably one of the best-known classic bakes from the U.S. – Americans even celebrate the »National Banana Bread Day« in February because they like this loaf/cake so much. My first encounter with banana bread was… of course, in Florida back in the days when I worked for the mouse. These banana breads come in many different versions – my Walnut Banana Bread here got a big load of walnuts added. Obviously. Really nice addition to the banana.

You do not need years of baking experience for baking banana bread – most of the recipes are quite easy. It’s basically just mashing the bananas and then mixing everything together in a big bowl. Anyone can do that. Since these kinds of loaves contain a lot of moisture, they need a while in the oven. But this also means they have a great texture when baked and stay fresh for several days – and even get better each day.
The recipe can be adapted easily. If you are not fond of walnuts, you can exchange them for chopped hazelnuts or pecans. Really nice. If you like chocolate, you can add that as well. A little bit of chocolate never hurts.


A little tip: When baking banana bread, it’s always a good idea to do the toothpick test. Depending on the baking tin, the oven, the room temperature, the size of the bananas, or whatever, the baking time can vary quite a bit. The toothpick test quickly tells you whether the banana bread is baked through or needs a little more time. Nobody wants a soggy, doughy bit of bread after baking.

INGREDIENTS / ZUTATEN
1 3/4 cups (230g) stronger all-purpose flour*
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup (75g) butter, softened
2/3 cup (130g) sugar (fine)*
2 medium eggs
2 tbsp. milk (or plant based milk)
1 tsp. vanilla extract*
1 cup mashed ripe bananas (approx. 2-3 bananas)
1 cup (130g) chopped walnuts
1 banana for decorations
230g Mehl (Type 550)*
2 TL Backpulver
1/2 TL Natron
1/2 TL Salz
75g weiche Butter
130g Zucker (fein)*
2 Eier (M)
2 EL Milch (oder Milchersatz)
1 TL Vanille Extrakt*
2-3 reife Bananen, zerdrückt
130g Walnüsse, gehackt
1 Banane für die Dekoration


DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 350°F (180°C). Grease a loaf tin* and line with a stripe of baking parchment. Set aside.
2. Add the flour, baking powder, baking soda, and salt to a small bowl and mix. Set aside. Chop the walnuts and set aside. Mash the bananas and set aside as well.
3. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the eggs one by one and mix well after each addition. Next, add milk, vanilla extract, and mashed banana and mix in. Add the flour mixture and mix until just combined. Add about 2/3 of the chopped walnuts and fold them in. Pour the batter into the prepared loaf tin and smooth out the top.
4. Cut the banana for the decoration lengthwise in half and place it (with the cut sides up) on top of the batter. Sprinkle the remaining walnuts on top and bake the banana bread for about 55-60 minutes or until a skewer inserted into the center comes out clean. Take it out of the oven and let it cool down in the baking tin for about 10 minutes, then remove it carefully and let it cool down completely on a wire rack.
1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Eine Kastenform* einfetten und mit einem Streifen Backpapier auslegen. Zur Seite stellen.
2. Das Mehl mit Backpulver, Natron und Salz in einer kleinen Schüssel vermischen und zur Seite stellen. Walnüsse hacken und zur Seite stellen. Bananen zerdrücken und ebenfalls zur Seite stellen.
3. In einer großen Rührschüssel die Butter mit dem Zucker hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Milch, Vanille Extrakt und zerdrückte Bananen dazugeben und unterrühren. Die Mehlmischung dazugeben und nur kurz verrühren. Etwa 2/3 der gehackten Walnüsse dazugeben und unterheben. Den Teig in die vorbereitete Form füllen und glatt streichen.
4. Die Banane für die Dekoration der Länge nach halbieren und mit der Schnittkante nach oben in den Teigdrücken. Die restlichen Walnüsse darüberstreuen und dann in der Mitte des Ofens für etwa 55-60 Minuten backen – mit einem Holzspieß testen, ob noch Teig kleben bleibt, und erst herausholen, wenn er sauber herauskommt. Das Bananenbrot für etwa 10 Minuten in der Form abkühlen lassen, dann vorsichtig herauslösen und auf einem Kuchengitter komplett abkühlen lassen.
