Today is #CookieFriday, and I am serving you some… Brownie Bites with Toffifay! You might think, »What the fudge?! That ain’t no cookies!! Shouldn’t there be cookies on Cookie Friday?!«. Well…

I thought something different for a change could be nice. Still in the »spirit of Cookie Friday« – which means quick and easy to prepare, bite size and delicious. But no real cookies. That ain’t no cookies, ma’am! ;)
I hope that’s ok for you. It seemed so many of you liked that Hazelnut Nougat Mascarpone Cake I made last week, so I thought why not making something else with Toffifay but less effort. Much less effort than the cake. :P I could not make real cookies with Toffifay because they won’t fit in a cookie, so I made these mini brownie bites…

You will be the king or queen if you bring them to a party you are invited. Believe me, they will be gone in no time! And the best thing about them, you can make them pretty much spontaneous. You need the ingredients and 30 minutes of time – that’s all! Perfect last-minute-snack-gift. :P
INGREDIENTS / ZUTATEN
( 14-16 pieces)
1/4 cup (60g) butter
1/2 cup (100g) brown sugar
1/2 tsp. vanilla extract*
1 large egg
1/3 cup (45g) all-purpose flour
1/3 cup (40g) cocoa powder*
1/4 tsp. baking powder
1 pinch of salt
1 oz. (30g) semi-sweet chocolate*, chopped
14-16 Toffifay*
(14-16 Stück)
60g Butter
100g brauner Zucker
1/2 TL Vanille Extrakt*
1 Ei (L)
45g Mehl (Type 405)
40g Kakao*
1/4 TL Backpulver
1 Prise Salz
30g Zartbitterschokolade*, gehackt
14-16 Toffifee*

DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 200°C (390°F). Grease a mini muffin tin* and set aside. Melt the butter and let cool down a bit.
2. Add the melted butter, sugar and vanilla extract to a large bowl and mix on high speed until well combined. Add the egg and mix in. Mix the flour with cocoa, baking powder, and salt. Add to the bowl and mix until just combined. Fold in the chopped chocolate.
3. Fill the molds of the mini muffin tin about 3/4 full (works best if you use a piping bag) and bake for about 8-10 minutes or until a toothpick inserted into the center comes out clean. Take out of the oven and press the Toffifay into the still warm mini muffins, then let cool down a bit. Remove from the tin and let cool down completely on a wire rack.
