    Valentines is around the corner and as we all know: The way to a man’s heart goes through his stomach! Good for you, you ended up on a food blog, right? ;P Imagine you were looking at a fashion blog now, you would be completely lost – ok, you would probably get good advice on what to where on a Valentine’s Day Date – but no food! Not good! No food no love! ;)

    Just kidding – this is a respectable food blog, so no more fun :P Valentine’s Day is a serious thing! Especially if you are in a relationship or about to end up in one! Everybody else relax and take a cookie – there is enough for everybody! Just kidding. Again. But there are really enough cookies – that is true ;))

    You probably noticed I have guests for my Cookie Friday for quite some time now. Today I am happy to introduce you to one of my favorite bloggers! I am a big fan of her blog and her recipes – and since I’ve met her in real life some time ago, I am also a big fan of her as a person :) You could say – love at first sight! :))

    Maybe I should let her speak for herself (in German) now – so enjoy Cookie Friday with…..

    Hello….. it’s me…. Nein, leider nicht Adele, sondern Andrea. Normalerweise unterwegs auf ZimtkeksundApfeltarte.de. Dort schreibe ich seit Ende 2012, in der Hauptsache gibt es Süßes. Aber denkt jetzt mal nicht, ich könnte nicht gut kochen…. nein, der Grund ist, dass ich häufig Bilder von Gekochtem echt unsexy finde, da gibt so ein Cupcake fototechnisch doch echt mehr her :)
    So, und heute darf ich erfreulicherweise als Cookie-Queen am Cookie-Friday bei Bake to the roots fungieren, yeah!!!
    Es ist mir eine riesig große Freude, hier für Marc einen Beitrag schreiben zu dürfen, sind wir doch – wie ich finde – so etwas wie Geschwister im Geiste…. uns verbindet nicht nur eine große Liebe zu den USA, auch was das Backen anbelangt haben wir häufig ähnliche Ideen… Manchmal muss ich echt schmunzeln, wenn ich etwas poste und kurz darauf etwas sehr ähnliches bei Marc auftaucht, oder umgekehrt. So passiert jetzt erst kürzlich mit den Scones oder aber den Cinnamon Rolls… Daher hoffe ich sehr, dass mein heutiges Rezept etwas ist, was der liebe Marc auch selbst machen würde :)
    Ursprünglich hatte ich mir für den Cookie-Friday etwas ganz anderes überlegt, aber als mir klar wurde, dass ich ja den Freitag vor Valentinstag erwischt habe, kam mir sofort die Idee, einen Valentins-inspirierten Cookie zu backen. Tja, und herausgekommen ist ein wirklich leckerer Red-Velvet-Oreo-Cookie, der hier im Hause “ZimtkeksundApfeltarte” ganz besonders gut ankam. Bei Euch hoffentlich auch, aber wer liebt sie nicht, diese feinen Schoko-Cookies mit Vanille-Füllung?

    So, das war mein Beitrag zu Cookie-Friday. Ich hoffe, er hat Euch gefallen! Dir, lieber Marc, ein ganz herzliches Dankeschön, dass ich hier zu Gast sein durfte!

    INGREDIENTS / ZUTATEN

    • Deutsch
    For the cookies:
    7 oz. (200g) butter, cold
    1/2 cup (100g) confectioner’s sugar
    pinch of salt
    1 sachet of vanilla sugar (1 tsp. vanilla extract)
    2 cups (275g) all-purpose flour
    1 egg yolk
    2 tbsp. cocoa powder
    red food color (e.g. wilton)

    For the filling:
    1 1/4 cups (150g) confectioner’s sugar, sifted
    2/3 cup (150g) butter, at room temperature
    seeds of a vanilla bean pod

    Für die Cookies:
    200g kalte Butter
    100g Puderzucker
    1 Prise Salz
    1 Päckchen Bourbon-Vanillezucker
    275g Mehl
    1 Eigelb
    2 gehäufte EL Back-Kakao
    rote Farbe (ich nehme Gel-Farbe von Wilton)

    Für die Füllung:
    150 g Puderzucker (gesiebt)
    150 g weiche Butter
    Mark einer Vanilleschote

    DIRECTIONS / ZUBEREITUNG

    1. Cut the butter into small pieces and add together with the confectioner’s sugar, vanilla sugar (or vanilla extract), salt and egg yolk to a large bowl and knead until well combined. Sift the flour and cocoa powder on top and mix. Add some food color and mix in. Knead (with your hands) until you get a nice and smooth dough. Place in the fridge for about 1 hour.

    2. While the dough is cooling, prepare the filling by mixing the confectioner’s sugar, vanilla seeds and butter on high speed until light and fluffy. Place in the fridge as well.

    3. Preheat the oven to 390˚F (200°C). Prepare 1-2 baking sheets with baking parchment. Roll out the dough on a floured surface with a thicknes of about 0.12 inch (3mm). Cut out round pices with a cookie cutter and place on the prepared baking sheet (continue until all dough is used and you have an even number of cookies). Bake the cookies for 10-12 minutes. Take out of the oven and let cool down.

    4. Take two cookies and place a good amount of filling on one of the cookies and press the other one carefully on top. Store the cookies in the fridge. Take out of the fridge for about 30 minutes before serving.

    1. Butter klein schneiden, zusammen mit dem Puderzucker, Vanillezucker, Salz und Eigelb mit den Knethaken des Handrührers oder der Küchenmaschine verkneten. Mehl umd Kakao darüber sieben, Farbe dazu geben und weiter kneten. Nun den Teig mit den Händen weiter verarbeiten und zu einem geschmeidigen Teig kneten. Für mindestens eine Stunde in den Kühlschrank stellen.

    2. Inzwischen für die Füllung den Puderzucker mit der Vanilleschote und der Butter cremig aufschlagen. Kühl stellen.

    3. Den Ofen auf 200°C (390°F) vorheizen. 1-2 Backbleche mit Backpapier auslegen und zur Seite stellen. Den Teig auf einer bemehlten Arbeitsfläche ca. 3 mm dick ausrollen. Mit einem runden Keksausstecher Kreise ausstechen, evtl. stempeln und auf das mit Backpapier ausgelegte Backblech legen. So verfahren, bis der komplette Teig aufgebraucht ist (und eine gerade Zahl an Keksen ausgestochen wurde). Cookies im heißen Ofen für 10-12 Minuten backen. Abkühlen lassen.

    4. Nun jeweils zwei Teighälften mit einem guten Teelöffel von der Füllung bestreichen und zusammen drücken. Fertige Kekse am Besten im Kühlschrank aufbewahren und 30 Minuten vor dem Servieren heraus nehmen.
