In summer, people like to get together in the garden or park with friends and family. Some people fire up the barbecue, while we prefer to cozy up with something sweet and a few drinks. These little Strawberry Tarts are quick and easy to prepare and really delicious. The perfect sweet treat for the next summer party!

Sometimes those get-togethers in the park are a little more spontaneous – at least for us. This means there is not much time to plan stuff. When it happens, we are quickly going to the supermarket after work to get everything we need. On the weekend, you can easily bake something. Keep a roll of puff pastry in the fridge as well as some toppings (e.g. strawberries) and you can make something in a flash.
Puff pastry tarts are quite versatile – you can bake something sweet or savory. Whatever you like. For these small tarts, we spread some cream cheese on the puff pastry and topped that with fresh strawberries. If you prefer something sweeter, you can use vanilla custard instead of cream cheese. You don’t have strawberries at hand but blueberries or cherries? No problem. ;P

These tarts are part of the »Bake Together« with my favorite blogger colleague Andrea from Zimtkeks & Apfeltarte. Once a month we get together and bake (or cook) based on a theme or topic. This month it’s all about picnic. You might have guessed that already from my little introduction. ;P
To be honest – picnic as a theme is not very specific. There is a lot you can prepare for a picnic – everything from drinks to salad, bread, or sweet stuff. (All very) Open to interpretation. I wonder what Andrea came up with – could be something very similar or something completely different. Well… it’s supposed to be a surprise! Let’s see! ;)

As already mentioned, the little puff pastry tarts really easy to prepare. If you got some puff pastry in the fridge or freezer, you can bake something quickly. Strawberries work great here, but other berries are also fine. Fresh or frozen does not matter. We always have some frozen blueberries at hand, so they are always an option…
When it’s time to go to the park, these little tarts are quickly wrapped. Or maybe better stored in a plastic container or something similar. You don’t want to squash them in your picnic bag under beer bottles or stuff like that. ;P

INGREDIENTS / ZUTATEN
(6 small tarts)
3 frozen puff pastry sheets (each 7.3×4.5 inches), lightly thawed
2.1 oz. (60g) cream cheese
1/4 tsp. vanilla extract
16-18 strawberries, sliced
1 small egg, lightly beaten
some brown sugar for sprinkling (optional)
some chopped pistachios for sprinkling (optional)
(6 Tartelettes)
3 TK-Blätterteigplatten (je 18,5×11,5cm), leicht angetaut
60g Frischkäse
1/4 TL Vanille Extrakt
16-18 Erdbeeren, in Scheiben geschnitten
1 Ei (S), leicht verquirlt
etwas braunen Zucker zum Bestreuen (optional)
einige gehackte Pistazien zum Bestreuen (optional)

DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 200°C (390°F). Line a baking sheet with baking parchment. Let the frozen puff pastry sheets thaw lightly, then cut in half and place with some space in between on the baking sheet. Score the puff pastry sheets lightly with a sharp knife to create a small border –that area should puff up in the oven to create elevated sides. Prick the center of the pastry with a fork.
2. Mix the cream cheese with the vanilla extract until well combined. Spread the cream cheese within the scored area on top of the puff pastry rectangles (see picture).
3. Wash and dry the strawberries and remove the green leaves. Cut the strawberries into thin slices and place those slices slightly overlapping on top of the cream cheese – try to stay within the scored area.
4. Whisk the egg a bit, then brush the edges of the tarts with the egg wash and sprinkle everything with some brown sugar (optional). Bake the tarts for about 15-17 minutes or until the puff pastry has a nice golden brown color. Take out of the oven, sprinkle with some chopped pistachios (optional) and let cool down for some time on a wire rack. The small tarts are best when still a bit warm, along with some whipped cream.
1. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Die gefrorenen Blätterteigplatten leicht antauen lassen, dann halbieren und mit etwas Abstand zueinander auf das Backblech legen. Die Blätterteigplatten mit einem scharfen Messer leicht einschneiden/ritzen, um einen kleinen Rand zu erzeugen – dadurch kann der Rand später ungestört im Ofen aufgehen. Die Mitte der Teigplatten mehrmals mit einer Gabel einstechen.
2. Den Frischkäse mit dem Vanille Extrakt verrühren. Den Frischkäse innerhalb des eingeritzten Bereichs auf dem Blätterteig verstreichen (s. Foto).
3. Die Erdbeeren waschen, trocknen und die Blätter entfernen, dann in dünne Scheiben schneiden. Die Erdbeerscheiben dann leicht überlappend auf den Frischkäse legen – dabei sollte man möglichst innerhalb des eingeritzten Bereichs bleiben.
4. Das Ei etwas verquirlen, dann die Ränder der Tartelettes damit bestreichen und alles mit etwas braunem Zucker bestreuen (optional). Die Tartelettes für etwa 15-17 Minuten backen – die Ränder sollten schön Farbe bekommen haben. Aus dem Ofen holen und mit gehackten Pistazien bestreuen (optional). Auf einem Kuchengitter etwas abkühlen lassen. Die Tartelettes schmecken am besten, wenn sie noch leicht warm sind… mit etwas Schlagsahne obendrauf. ;)
