If there’s one type of fruit we and many others have at home pretty much all the time, it’s apples. Right?! Well, they are available all year round from regional farms and are often cheaper than other fruit or berries. A good argument for apples, right? Next in line would be bananas and grapes. We also have bananas at home often – our French Bulldog Bruno loves them as a snack. ;P
In contrast to bananas, you can do a lot more with apples, we think. If you look at the countless recipes with apples on blogs and in baking books, we might be on to something here. ;P We also have quite a good selection of those recipes here – much more recipes with apples than recipes with bananas. But that does not mean we like bananas less…

Anyway. On the subject of recipes with apples, we got pretty much everything here on the blog. Cakes, pies, tarts, cupcakes, cookies, strudels, … I think there’s very little that we haven’t tried and tested. If you want to get an overview, just take a look at our page for apple recipes. The apple cake here is one of the easier recipes – a simple cake batter is topped with a good amount of sliced apples and streusels. It’s that easy. The result is a super moist apple cake with a crunchy streusel topping. An absolute delight with some vanilla ice cream or whipped cream on top!

As already mentioned, there are a lot of apples added to the cake batter – which release a lot of moisture when baked. This makes the cake nice and moist, but you have to be careful and check several times when baking the cake to ensure the cake is properly baked through. It’s essential to do check the doneness with a wooden skewer or something similar. Baking times may vary slightly depending on the oven used. After all, nobody wants to serve a half-baked cake. Right?! ;P
The sliced almonds give the cake a little extra crunch when added on top. You switch the almonds with some rolled oats if you have a problem with nuts. Oats also get crunch up nicely when baked.
In addition to this delicious apple cake here, there are other cakes that could be described as extremely »moist« (we know that many people don’t like the word moist, but it is what it is… moist!). Our Invisible Apple Cake aka. Gateau Invisible aux Pommes is pretty much 100% apples. Hence, the somewhat strange name even though you can see the cake. ;P
The absolute king among those »moist and juicy cakes« is Grandma’s (French) Apple Cake. That one is made with plenty of apples as well, but it’s the crème fraîche in the batter that makes the difference here. Extremely tasty and awesome texture!
INGREDIENTS / ZUTATEN
For the streusel topping:
3/4 cup (100g) all-purpose flour
1/4 cup (50g) sugar (or xylitol*)
1/4 cup (55g) butter (cold)
1/2 tsp. vanilla extract*
For the cake:
12 oz. (350g) apples, peeled & sliced
a bit of lemon juice (optional)
1/2 cup (100g) sugar (or xylitol*)
1/4 cup (50g) brown sugar
1/2 cup (120g) butter, at room temperature
2 large eggs, at room temperature
1 tsp. vanilla extract*
1 2/3 cups (220g) all-purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1 pinch of salt
3.4 fl. oz. (100ml) milk (or oatmilk)
some sliced almonds (optional)

50g kalte Butter
1/2 TL Vanille Extrakt*

120g weiche Butter
2 Eier (L), Zimmertemperatur
1 TL Vanille Extrakt*
220g Mehl (Type 550)
1 TL Backpulver
1 TL Zimt
1 Prise Salz
100ml Milch (oder Haferdrink)
1-2 EL gehobelte Mandeln (optional)

DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 180°C (350°F). Lightly grease a 20cm (8-inch) springform tin or round baking tin with loose bottom* and set aside.
2. Start with the streusels – add flour, sugar, butter, and vanilla extract to a bowl and rub everything between your fingers until different-sized streusels form. Place in the fridge until needed. Peel the apples, core them and cut into thin slices – drizzle with a bit of lemon juice, so the apples don’t get brown. If you work quickly, you don’t really need it. Set aside.
3. In a large bowl, mix both sugars and the butter until light and fluffy. Add the eggs separately and mix well after each addition. Add the vanilla extract and mix in. Combine flour, baking powder, cinnamon, and salt. Add together with the milk to the large bowl and mix until just combined. Add the sliced apples and fold in.
4. Pour the batter into the prepared baking tin, smooth out the top and sprinkle with the streusels and some sliced almonds (optional). Bake the cake for about 45-50 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. Take out of the oven and let cool down on a wire rack.
1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Eine 20cm Springform oder eine runde Backform mit Hebeboden* leicht einfetten und zur Seite stellen.
2. Mit den Streuseln starten. Mehl, Zucker, Butter und Vanille Extrakt in eine Schüssel geben und alles zwischen den Fingern verreiben, bis sich unterschiedlich große Streusel bilden. Bis zur weiteren Verwendung in den Kühlschrank stellen. Die Äpfel schälen, entkernen und dann in dünne Spalten schneiden – ggf. mit etwas Zitronensaft beträufeln, damit die Äpfel nicht braun werden. Wer zügig arbeitet, braucht das eigentlich nicht. Zur Seite stellen.
3. Beide Zuckersorten mit der weichen Butter in einer großen Schüssel hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Den Vanille Extrakt dazugeben und unterrühren. Mehl, Backpulver, Zimt und Salz vermischen. Zusammen mit der Milch in die große Schüssel dazugeben und nur kurz unterrühren. Die Apfelspalten dazugeben und unterheben.
4. Den Teig in die vorbereitete Backform füllen, glatt streichen und dann mit den Streuseln bestreuen. Wer mag, kann auch noch ein paar gehobelte Mandeln auf den Streuseln verteilen. Den Kuchen etwa 45-50 Minuten backen. Mit einem Holzspieß testen, ob noch Teig kleben bleibt und den Kuchen erst herausholen, wenn dieser sauber herauskommt. Aus dem Ofen nehmen und auf einem Kuchengitter abkühlen lassen.
