Sometimes you need a little cocktail or long drink at the end of the day. Right? Whenever your day was stressful, you’re allowed to treat yourself. Not every evening, of course. That would make you an alcoholic ;P If you come home from work stressed out every evening you should perhaps consider changing jobs and not make cocktails every evening. If you do it only sometimes everything is fine. I guess. Now and then sipping on a little Frozen Watermelon Mojito with your bestie on the balcony? Absolutely OK, I think!
I am not drinking a lot of alcohol in recent years tbh. Mostly because I should not drink much because of my diabetes but I also do not tolerate much alcohol and get quite severe “side effects” ;P I guess everyone of a certain age can relate. We have to admit that we are all no more party animals like we used to be ;P
Anyway. A sip here and there is fine as long as I am not drinking too much. A sip of this delicious drink with lots of watermelons and a little bit of white rum. All nicely mixed and frozen. So cold you could actually eat it with a spoon. Really. Frozen. Let it go frozen… you know? ;P
Well. For drinks like this one here, watermelons are perfect. You can freeze a big bag of watermelon pieces and every time you are in the mood for a drink you just take some, add it to a blender with the other ingredients and you’re basically done. Drinks are ready.
If you want your drinks even quicker – freeze whatever you just mixed and place it back in the freezer for another day. The alcohol in the mix prevents the mixture to freeze completely so you will always have somewhat of a slushy consistency. That you can just spoon into a glass and you are ready to go ;) Does not work as well if you prepare the drink alcohol-free. Then you have to blend the mix once more to get the right consistency.
INGREDIENTS / ZUTATEN
17.6 oz. (500g) watermelon, in cubes and frozen
1/4 cup (60ml) fresh lime juice
1 tbsp. xylitol or sugar
2-3 shots of white rum
2-3 springs of fresh mint (leaves only), plus some more
500g Wassermelone, gewürfelt und gefroren
60ml frischer Limettensaft
1 EL Xylit oder Zucker
2-3 Shots weißer Rum
2-3 Zweige frische Minze (nur die Blätter), plus etwas mehr
DIRECTIONS / ZUBEREITUNG
2. Add the frozen watermelon cubes, lime juice, xylitol (or sugar), and white rum to a blender and blend until thick and smooth. Add the mint leaves and blend a bit more so the mint is chopped but not pureed. Serve immediately and garnish with some more mint leaves.
Note: You can add some additional water (with gas) to get less stronger drinks.
2. Die gefrorenen Wassermelonenwürfel, Limettensaft, Xylit (oder Zucker) und weißen Rum in einen Mixer geben und pürieren, bis die Masse dickflüssig ist. Die Minzblätter dazugeben und kurz weiter mixen – die Minze soll zerkleinert, aber nicht püriert werden. Sofort servieren und nach Belieben mit einigen Minzblättern dekorieren.
Hinweis: Man kann die Drinks mit etwas zusätzlichem Sprudelwasser verdünnen, falls sie zu stark sein sollten ;P

Ingredients
17.6 oz. (500g) watermelon, in cubes and frozen

1. Cut the flesh of the watermelon in small cubes and add to a freezer bag – chill in the freezer overnight until completely frozen.
2. Add the frozen watermelon cubes, lime juice, xylitol (or sugar), and white rum to a blender and blend until thick and smooth. Add the mint leaves and blend a bit more so the mint is chopped but not pureed. Serve immediately and garnish with some more mint leaves.
Notes
You can add some additional water (with gas) to get less stronger drinks. You can also leave out the rum completely.
