Summer and salad belong together like Bonnie and Clyde. When it’s hot outside it’s never a good idea to eat something super rich/heavy that will stay in your stomach for hours and will probably make you sweat (even more than you would do to the temperatures). Some veggies and salad are best on warm days. This Classic Tabouleh aka. Bulgur Salad is a perfect example – easy to prepare and very refreshing in summer. No “food coma” is gonna happen here ;)
Tabouleh (Taboulé) is a salad from the Arab region and is especially popular in Lebanese and Syrian cuisine. The base for the salad is a combination of bulgur/couscous, tomatoes, onions, parsley, and mint. However, depending on the region where the salad is prepared, other vegetables can also find their way into the bowl… peppers, cucumber, or some grilled veggies, for example. There are many possibilities to adapt this salad to your liking. You can also bring some cheese like feta into play here if you like ;)
In our house, the version here with tomato and cucumber is the one we make all the time. Really nice and refreshing in the summer. Perfect as a light appetizer (Mezze) or as a small/quick dish to serve during the day when you’re hungry but not in the mood to eat a whole meal. Or you could serve the Tabouleh as a side along with your grilled meat or sausages at a bbq party. The salad is very “versatile” ;)
We also like to eat Tabouleh as a main course with some small bites, dips, and some bread on the side. Whenever I serve the salad as a main course, however, I change the recipe a bit, tbh. More tomatoes and cucumber and a bit less parsley and mint. Even though I like parsley in a dish – in this case, it would be too much for me. If you eat a large bowl of Tabouleh with loads of parsley… that can be a bit overwhelming. That’s me. Maybe you like parsley so much you want to add even more… Who knows ;P
Anyway. The Tabouleh as it is here – tastes great! Nothing to complain about. You should definitely try the salad (and maybe adjust the amount of parsley to your liking) ;)
INGREDIENTS / ZUTATEN
1.8 oz. (50g) bulgur
3.4 fl. oz. (100ml) water
14 oz. (400g) tomatoes, diced
1/2 cucumber, diced
1 red onion, finely chopped
1 bunch flat-leaf parsley, chopped
1 small bunch of mint, chopped
5 tbsp. olive oil
2 tbsp. lemon juice
salt, pepper
50g Bulgur
100ml Wasser
400g Tomaten, gewürfelt
1/2 Gurke, gewürfelt
1 rote Zwiebel, fein gehackt
1 Bund glatte Petersilie, gehackt
1 kleines Bund Minze, gehackt
5 EL Olivenöl
2 EL Zitronensaft
Salz, Pfeffer
DIRECTIONS / ZUBEREITUNG
2. Wash and dry the tomatoes and cut them into small cubes. Cut the cucumber in cubes as well. Peel and finely chop the onion. Wash, dry, and then chop the parsley and mint. Mix everything together with the bulgur in a large bowl.
3. Mix olive oil and lemon juice, season with salt and pepper and add to the bowl with the salad – mix everything well and let it sit for about 10 minutes. Tabouleh is great as a side dish for grilling or simply served with some bread.
2. Tomaten waschen, trocknen und in kleine Würfel schneiden. Gurke ebenfalls würfeln. Die Zwiebel schälen und fein hacken. Petersilie und Minze waschen, trocknen und dann hacken. Alles zusammen mit dem Bulgur in einer großen Schüssel vermengen.
3. Olivenöl und Zitronensaft vermischen, mit Salz und Pfeffer würzen und dann über den Salat geben – alles gut vermischen und etwa 10 Minuten ziehen lassen. Tabouleh eignet sich prima als Beilage zum Grillen oder einfach nur mit etwas Brot serviert.

1. Add bulgur and water to a small pot and bring to a boil. As soon as you see bubbles, cover the pot and reduce the heat to a minimum and allow the bulgur to soak up the water for about 10 minutes. Remove from the heat and let cool down.
