Easy Apple Streusel Bars

    In autumn, you simply can’t get around cakes and pies with apples – they’re in every bakery’s display (her in Germany), and many people even pop one or two into the oven each season. It’s no different here at home. We love baking with apples. Easy Apple Streusel Bars like these here are quick to make and super delicious. A dollop of whipped cream on top, and the »Kaffeeklatsch« can begin! ;P

    Many bloggers like to claim that their baked goods are »as good as the ones from the bakery«. I think that kind of description is a bit difficult these days. When you look at what you can get from bakeries these days, I don’t think it’s much of an honor. In big cities like Berlin, unfortunately, you will find very few proper bakeries that make everything from scratch anymore. The last one in our neighborhood closed ten years ago – now you only find »bakery shops« and »bread prisons« (the displays in large supermarkets with »fresh« bread and stuff) – both are supplied by large industrial bakeries that are factories and not cute little bakeries.

    You will find cakes and other bakes like these apple streusel bars in many bakeries/bakery shops, but I’d go so far as to say ours are better than the ones from the stores. ;P

    Today’s large (industrial) bakeries have to work cost-effectively – as a baker in your kitchen at home, that’s not always the case. Of course, you shouldn’t throw money away on ingredients and stuff like that, but if you want to add a few more apples to an apple pie, you can simply do so. The baker who supplies the bakery shops and supermarket thinks twice about something like that to keep things cheaper, so the profit is higher. ;P

    We don’t want to accuse anyone of anything, of course, but everything we’ve tried at the bakery so far doesn’t come anywhere close to our slices! You can only get something this delicious and this great texture in your own kitchen. With a generous amount of apples, good butter, real spices, no preservatives, and, of course, lots of love. Our apple streusel bars only need to survive for a short time when baked and not sit in a display case somewhere all day, where they will be (most likely in summer) eaten by wasps. We really have a wasp problem in summer in Berlin. ;P

    Anyway. Our streusel bars are baked in a baking frame – if you already have one sitting around at home, you can use it for this recipe, of course. A large springform tin will do the job just as well, though. Chances are higher you have one of those in your kitchen already. If you want to bake a whole tray of these delicious slices, you can also use our baking pan converter to calculate the ingredient quantities for a larger baking pan or tray. You may need to adjust the baking time slightly, but the toothpick test always helps here…

    A quick tip for the streusel bars: cut the apples into nice and thin slices. The bars will bake more evenly. To change things up a little, you can also divide the apples. Add half of them to the batter and then spread the rest evenly on top of the batter before adding the streusels. This way you have an extra layer of apples. That never hurts, right? ;P

    If you prefer a classic (German) apple cake, you might want to check out our Easy Apple Cake Tray Bake. That one is also a very simple cake that will feed and make a few more people happy. Even with fewer people at the table, it never hurts to have a little backup in case someone asks for seconds and thirds.

    For anyone who wants to serve cake like they do in a Viennese coffee house, we also have a recipe for a delicious Apple Strudel with Phyllo Pastry. It looks absolutely stunning on a plate with a scoop of vanilla ice cream. It’s not a traditional apple strudel recipe, but still awesome and easier to prepare. ;)

    INGREDIENTS / ZUTATEN

    For the streusels:
    5 oz. (140g) all-purpose flour
    1/3 cup (70g) sugar
    1 pinch of salt
    1/3 cup (80g) butter

    For the cake batter:
    1/2 cup (120g) butter, at room temperature
    1/4 cup (50g) sugar
    3 large eggs
    3.5 oz. (100g) Skyr
    1 tsp. vanilla extract
    6.4 oz. (180g) all-purpose flour
    2 tsp. baking powder
    1/8 tsp. salt

    For the apples:
    32 oz. (900g) apples
    1 tbsp. lime juice
    2 tbsp. brown sugar
    1/2 tsp. ground cinnamon

    some coarse sugar for sprinkling

    Für die Streusel:
    140g Mehl (Type 405)
    70g Zucker
    1 Prise Salz
    80g Butter

    Für den Teig:
    120g weiche Butter
    50g Zucker
    3 Eier (L)
    100g Skyr
    1 TL Vanille Extrakt
    180g Mehl (Type 405)
    2 TL Backpulver
    1/8 TL Salz

    Für die Äpfel:
    900g Äpfel (säuerlich)
    1 EL Limettensaft
    2 EL brauner Zucker
    1/2 TL Zimt

    etwas grober Zucker zum Bestreuen

    DIRECTIONS / ZUBEREITUNG

    1. Combine flour, sugar, and salt for the streusels in a bowl. Add the butter in small pieces and rub everything between your fingers to create different-sized streusels. Place in the fridge until needed.

    2. Preheat the oven to 180°C (350°F). Extend an adjustable baking frame* to a size of approx. 26x20cm, secure it, and set it on a baking sheet lined with baking parchment. Set aside.

    3. Add the butter and sugar for the cake batter to a large bowl and mix until light and fluffy. Add the eggs one by one and mix well after each addition. Next, add the Skyr and vanilla extract and mix in. Combine flour, baking powder, and salt – add to the bowl and mix until just combined.

    4. Peel and core the apples, then cut them into thin slices. Drizzle the apples with lime juice and sprinkle them with the brown sugar and ground cinnamon – mix to combine. Add the apples to the bowl with the cake batter and fold them in. Transfer the batter to the prepared baking frame and spread it evenly inside the frame. Distribute the streusels evenly on top and sprinkle everything with coarse sugar. Bake the cake in the preheated oven for about 45-50 minutes – or until a wooden skewer inserted into the cake comes out clean. Take the cake out of the oven and let it cool down completely inside the baking frame. Cut the cake into bars and serve with some whipped cream or vanilla custard.

    1. Das Mehl für die Streusel mit Zucker und Salz vermischen. Die Butter in kleinen Stücken dazugeben und dann alles mit den Händen zu Streuseln verarbeiten. Bis zur weiteren Verwendung in den Kühlschrank stellen.

    2. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Einen verstellbaren Backrahmen* auf eine Größe von etwa 26x20cm aufziehen, feststellen und dann auf ein mit Backpapier ausgelegtes Backblech stellen. Zur Seite stellen.

    3. Die weiche Butter und den Zucker für den Teig in einer großen Schüssel hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Den Skyr und Vanille Extrakt dazugeben und unterrühren. Mehl, Backpulver und Salz vermischen und zum Teig dazugeben – nur kurz unterrühren.

    4. Die Äpfel schälen, entkernen und dann in dünne Spalten schneiden. Mit Limettensaft beträufeln und dann mit braunem Zucker und Zimt vermengen. Die Äpfeln zur Schüssel mit dem Teig dazugeben und unterheben. Den Teig in den vorbereiteten Backrahmen geben und gleichmäßig verstreichen. Die Streusel auf dem Teig verteilen und mit etwas grobem Zucker bestreuen. Den Kuchen im vorgeheizten Ofen für etwa 45-50 Minuten backen – mit einem Holzspieß testen, ob noch Teig kleben bleibt und den Kuchen erst herausholen, wenn dieser sauber herauskommt. Den Kuchen aus dem Ofen nehmen und im Backrahmen komplett abkühlen lassen. Zum Servieren in Stücke schneiden und mit etwas Schlagsahne oder Vanillesauce servieren.
