Vegan Orange Cookies (Portakallı kurabiye)

    Cookies come in many flavors, shapes, and sizes. These Vegan Orange Cookies aka. Portakallı kurabiye taste, as the name suggests, deliciously fruity-orange, but are unlike similar cookies slightly larger. You could almost say they have the size of small buns. If you let them dry out completely (which is unlikely, because they’re usually eaten in no time), they’d make perfect throwing objects. Just kidding… we do not want to heat up any smoldering conflicts with cookies here ;P

    If you take a look at all the cookies here on the blog, you’ll find a lot of »typical American« cookies. These extra-large cookies, packed chocolate, nuts, etc. – and of course, packed with loads of sugar. If you want to you can add a lot of calories to a single cookie ;P Though I love those cookies I also like cookies from other countries. Cookie Monster loves all cookies! ;P

    I came across similar orange cookies for the first time at the Turkish bakery in our neighborhood. When I saw them I thought » Oh, interesting little buns« – until I noticed the sight that said those buns were actually cookies ;) Very unusual shape and size for a cookie… but that’s actually what made me buy them. I love when bakes are not exactly what you expect.

    Over the past several years I got me a delicious cookie now and then, but depending on the mood of the baker (I suppose), the cookies were mostly nice but sometimes not so good. The flavors were always good, but the texture… sometimes you could have really used them to hurt somebody ;P That’s why I decided to look for a recipe and adapted it to my liking. Now I can bake a batch of cookies that are definitely delicious and not rock-hard or something like that ;P

    Making these cookies is fairly easy. Even though most recipes you can find for similar cookies are made with dairy products, I decided to go the vegan route. Works well here. If you don’t have vegan butter/margarine or oat milk at hand you could switch back to dairy products, of course. The result will not be much different in texture or flavor.

    Amaretti Cookies

    Easy Cantuccini aka. Biscotti with Almonds

    INGREDIENTS / ZUTATEN

    (8 cookies)

    1 3/4 cups (230g) all-purpose flour
    1 tsp. baking powder
    1/4 tsp. baking soda
    1 pinch of salt
    1/4 cup (60g) vegan butter (margarine), at room temperature
    1/4 cup (50g) sugar (or xylitol)
    zest of 1 organic orange
    1/4 cup (60ml) fresh orange juice
    2 tbsp. oat milk

    some coarse (brown) sugar

    (8 Kekse)

    230g Mehl (Type 550)
    1 TL Backpulver
    1/4 TL Natron
    1 Prise Salz
    60g weiche vegane Butter (Margarine)
    50g Zucker (oder Xylit)
    Abrieb von 1 Bio-Orange
    60ml frischer Orangensaft
    2 EL Haferdrink

    etwas grober (brauner) Zucker

    DIRECTIONS / ZUBEREITUNG

    1. Mix the flour with baking powder, baking soda, and a pinch of salt and set aside.

    2. Add the soft vegan butter and sugar (or xylitol) to a bowl and mix until light and fluffy. Next, add the orange zest, orange juice, and oat milk and mix to combine – the liquid will not mix well with the butter, but that is ok. Add the flour mixture and mix in. You will get a pretty sturdy dough. Shape into 8 balls. Place the dough balls on a cutting board (lined with some baking parchment), cover loosely with plastic wrap, and place in the fridge for about 1 hour.

    3. Preheat the oven to 375°F (190°C). Line a baking sheet with baking parchment. Press the cookies into some coarse (brown) sugar, so they are covered with it all around. Place them with some space in between on the baking sheet. Use a sharp knife or razor blade and cut crosses into the top of the dough balls and bake for about 20 minutes until puffed up and slightly golden. Take out of the oven and let cool down for some time on the baking sheet, then transfer to a wire rack and let cool down completely.

    Tip: To get even more orange flavor into the cookies you can add several drops of orange oil to the dough. Not too much though or it will taste artificial ;P

    1. Mehl mit Backpulver, Natron und einer Prise Salz mischen und zur Seite stellen.

    2. Die weiche vegane Butter und den Zucker (oder Xylit) in eine Schüssel geben und hell und luftig aufschlagen. Orangenschale, Orangensaft und Haferdrink dazugeben und verrühren. Die Flüssigkeit wird sich nicht gut mit der Butter vermischen, aber das ist OK. Die Mehlmischung dazugeben und unterrühren – es wird ein recht kompakter Teig entstehen. Den Teig in acht Portionen aufteilen und zu Kugeln formen. Die Teigkugeln auf ein (mit Backpapier ausgelegtes) Brett (o.ä.) setzen, locker mit Frischhaltefolie abdecken und etwa 1 Stunde in den Kühlschrank legen.

    3. Den Ofen auf 190°C (375°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Die Teigkugeln in etwas groben (braunen) Zucker drücken, damit sie rundherum mit Zucker ummantelt sind. Mit etwas Abstand auf das Backblech setzen und dann mit einem scharfen Messer oder einer Rasierklinge Kreuze in die Teigkugeln einschneiden. Für etwa 20 Minuten backen, bis die Kekse schön aufgegangen sind und eine goldene Farbe bekommen haben. Aus dem Ofen holen und kurz auf dem Blech abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen.

    Tipp: Um noch mehr Orangengeschmack in die Kekse zu bekommen, kann man einige Tropfen Orangenöl in den Teig dazugeben. Man sollte allerdings aufpassen, sonst schmeckt es künstlich ;P
