If you got a sweet tooth it’s a good idea to have something sweet at home all the time… just in case ;P If you are a fan of white chocolate and Toffifee (that caramel and chocolate candy with a hazelnut inside) you might want to try these Mini Brownie Bites with White Chocolate Toffifee. Very long name for such a small snack, I know ;P These fellas are as quickly baked as they are eaten afterward… at least in our house. You better watch out!

Toffifee is known all over Germany – probably not that much in the rest of the world. If your supermarket has a section for international candy you might find them there. These small bite-size candy thingies are »unfortunately« very tasty. Several years ago I cut back on sweets, but this caramel candy is still very tempting ;P The combination of caramel, chocolate, and hazelnut is excellent. At least for my taste buds ;)
Anyway. The Toffifee I used in this bake here is more or less a »Special Edition«. Instead of regular dark chocolate they are made with white chocolate. Last summer they sold a version made with coconut but unfortunately, I wasn’t able to get my hands on it. I really wanted to try them… but no. Not me. Well… the white ones are nice, a bit sweeter compared to the original ones – if you like white chocolate you are probably used to the extra sweetness ;P

Well. If you are into white chocolate you’ll be probably very happy with these Blondie Bites here. It’s white chocolate »on steroids« ;P They are an update/variation of my Toffifee Mini Brownie Bites – a recipe that has been on the blog for years already. It made sense to turn the brownies into blondies with the white chocolate version of the candy. If you can’t get hold of the White Chocolate Toffifee you could actually make them with the original candy instead… or vice versa – make the brownie bites with the White Chocolate Toffifee. Call it »mix’n’match« or whatever ;P
No matter if you make blondies or brownies – if you are into that type of sweets you will probably like both. Be warned though… they are very small, and it’s easy to eat too many of them. Something you should not do if you want to keep a body shape that resembles a human and not an XXL Brownie Bite.

If you don’t care about calories and sugar – why not try one of these sweet snacks as well? They are made with another sweet temptation I can never resist: Oreo cookies. Evil little cookies! So be warned – those sweets are also not the best if you want to stay in shape or maybe lose weight. They are great for cheat days though ;P
If you are looking for something that’s a little healthier, try my vegan Cinnamon Energy Balls. I can do sweet stuff with less or no sugar as well. Sometimes ;P
INGREDIENTS / ZUTATEN
(16 mini blondies)
1/2 cup (100g) sugar (or xylitol)
1/4 cup (60g) butter, melted
1 tsp. vanilla extract
1 medium egg
1/2 cup (65g) all-purpose flour
1 pinch of salt
1.8 oz. (50g) white chocolate, chopped
16 Toffifee White Chocolate* (or regular ones)
(16 Stück)
100g Zucker (oder Xylit)
60g Butter, geschmolzen
1 TL Vanille Extrakt
1 Ei (M)
65g Mehl (Type 550)
1 Prise Salz
50g weiße Schokolade, gehackt
16 Toffifee White Chocolate*

DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 390°F (200°C). Lightly grease a mini muffin tin* and set aside. Melt the butter and allow cooling slightly. Chop the white chocolate and set aside.
2. In a large bowl, mix the sugar, melted butter, and vanilla extract until light and fluffy. Add the egg and mix until well blended. Add the flour and salt and mix until just combined. Fold in the chopped chocolate, then divide the batter between the molds of the prepared mini muffin tin – you should have enough batter for 16 mini blondies. Bake the blondies for about 9-12 minutes or until a toothpick inserted into the center of the blondies comes out clean.
3. Take the blondies out of the oven and immediately press the Toffifee into the hot blondies. Carefully loosen them from the edges of the tin with a knife (if necessary) and let them cool down in the pan for a while. Remove the blondies carefully from the tin and let cool down completely on a wire rack.
Tip: The (white) chocolate on top of the Toffifee will be melting after you pressed them into the blondies. Keep that in mind when handling them. When the blondies have cooled down completely the chocolate will firm up again.
1. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Ein Mini Muffinblech* leicht einfetten und zur Seite stellen. Die Butter schmelzen und leicht abkühlen lassen. Die weiße Schokolade hacken und zur Seite stellen.
2. Zucker, geschmolzene Butter und Vanille Extrakt in einer Schüssel hell und luftig aufschlagen. Das Ei dazugeben und gut verrühren. Mehl und Salz zur Schüssel dazugeben und nur kurz unterrühren. Die gehackte Schokolade unterheben und den Teig dann auf die Mulden des vorbereiteten Muffinblechs aufteilen – der Teig sollte für 16 Mini Blondies ausreichen. Die Blondies für etwa 9-12 Minuten backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und die Blondies erst herausholen, wenn dieser sauber herauskommt.
3. Blondies aus dem Ofen nehmen und die Toffifees sofort in die noch warmen Blondies drücken. Die Blondies ggf. vorsichtig mit einem Messer von den Rändern der Form lösen und einige Zeit in der Form abkühlen lassen, dann vorsichtig komplett herauslösen und auf einem Kuchengitter auskühlen lassen.
Tipp: Die (weiße) Schokolade auf den Toffifees wird schmelzen, wenn man sie in die noch warmen Blondies drückt – beim Lösen bzw. Herauslösen aus den Formen sollte man das im Kopf behalten. Wenn die Blondies komplett abgekühlt sind, wird auch die Schokolade wieder fest werden.
