Homemade Hoagie Rolls aka. Basic Sandwich Rolls

    Have you ever had this problem? You want to prepare a certain dish but somehow you can’t get hold of all of the necessary ingredients? Not talking about fancy spices from India, West Africa, or something like that… those you can normally order online if you really need them ;) I am talking about simple sandwich bread rolls. I wanted to make a certain sandwich the other day and could not find the bread roll I needed for that anywhere. Well… this is still a baking blog here, so why not baking the stuff I need myself? So in case you need Hoagie Rolls and can’t find them anywhere – here is now a recipe you can use to bake them at home ;P

    I guess most of you won’t have that kind of problem. Most of you probably don’t have a problem if a sandwich roll does not look exactly as you imagined. Most of you are probably fine using any other bread roll the bakery has to offer ;P Well… I’m not fine with that ;P I wanted hoagie rolls, so I had to make hoagie rolls.

    In case you have no idea what I am talking about – hoagie rolls are simple sandwich bread rolls that are normally quite soft with a smooth surface. Similar to milk bread rolls. Perfect for many types of sandwiches. Unfortunately, regular bakeries don’t sell these bread rolls here. Here in Germany we normally make smaller sandwiches. Only “Subway” make those oversized sandwiches most of you probably know ;P

    Anyway. No chance to get something like that in a bakery. I could have ordered it online, but that would have been packaged bread rolls and those are… well, not what I wanted ;)

    Oh well. Long story short – this is still a baking blog, so I decided to make those hoagie rolls myself. I needed several attempts to get them right, but now I’m happy with the result. So if you ever need/want to bake some hoagie rolls aka. sandwich bread rolls – you got a recipe now that works well and is not too complicated. You can use those bread rolls for simple sandwiches with cold cuts and cheese (like in the pictures), or e.g. for juicy Meatball Subs (instead of a baguette) or maybe Philly Cheesesteak Sandwiches (there will be a recipe soon) ;)

    INGREDIENTS / ZUTATEN

    • Deutsch
    (4 rolls)

    7 oz. (200g) milk
    1.8 oz. (50g) water
    1 tbsp. honey
    0.25 oz. (7g) active dry yeast
    4 tbsp. olive oil
    14 oz. (400g) all-purpose flour
    1 tsp. salt

    1 medium egg yolk
    some water

    (4 Stück)

    200g Milch
    50g Wasser
    1 EL Honig
    1 Pkg. (7g) Trockenhefe
    4 EL Olivenöl
    400g Mehl (Type 550)
    1 TL Salz

    1 Eigelb (M)
    etwas Wasser

    DIRECTIONS / ZUBEREITUNG

    1. Mix the milk and water and warm up in the microwave (or in a pot on the stove) to about 100°F (38°C). Add together with honey and dry yeast to a large bowl and mix until well combined. Add the olive oil and mix in as well. Combine the flour and salt and add to the bowl. Knead everything for about 2-3 minutes until you get a smooth dough that easily pulls away from the sides of the bowl. Cover the bowl with a kitchen towel and let the dough rise for about 15 minutes, then knead again for about 8 minutes. Cover the bowl and then let the dough rise a second time in a warm place for about 1 hour or until almost doubled in size.

    2. Line a baking sheet with baking parchment and set aside. Transfer the dough to a lightly floured surface and divide into 4 equal pieces. Pull apart or roll out the dough pieces into rectangles of about 7×4 inches (18x10cm). Roll up these rectangles tightly from the long sides, then place the logs you rolled up with some space in between on the prepared baking sheet with the seam side facing down. Cover with a kitchen towel and let rise once more for about 30 minutes.

    3. While the dough is rising again, preheat the oven to 375°F (190°C). Place a heatproof bowl of water in the oven to create some steam. Make several diagonal cuts in the risen dough pieces with a sharp knife. Whisk the egg yolk with some water and brush the rolls with it. Bake for about 20 minutes – the hoagies should have risen nicely with a nice golden brown color. Remove from the oven and let cool completely on a wire rack.

    1. Milch und Wasser in der Mikrowelle (oder auf dem Herd) auf etwa 38°C (100°F) aufwärmen. Zusammen mit dem Honig und der Trockenhefe in eine große Schüssel geben und verrühren. Das Olivenöl dazugeben und untermixen. Mehl und Salz vermischen und zur Schüssel dazugeben. In etwa 2-3 Minuten zu einem glatten Teig verkneten, der sich leicht von Rand der Schüssel löst. Die Schüssel mit einem Küchentuch abdecken und den Teig für etwa 15 Minuten gehen lassen, dann noch einmal für etwa 8 Minuten durchkneten. Die Schüssel erneut abdecken und den Teig dann an einem warmen Ort für etwa 1 Stunde gehen lassen – das Volumen sollte sich in etwa verdoppelt haben.

    2. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Den Teig auf eine leicht bemehlte Fläche geben und in 4 gleich große Portionen aufteilen. Die Teigstücke zu Rechtecken mit etwa 18x10cm (7×4 inches) auseinanderziehen bzw. ausrollen. Diese Rechtecke von den langen Seiten her eng aufrollen und dann mit der offenen Seite nach Unten und etwas Abstand zueinander auf das vorbereitete Blech setzen. Die Teigwürste mit einem Küchentuch abdecken und noch einmal etwa 30 Minuten gehen lassen.

    3. Während der Teig noch einmal geht, den Ofen auf 190°C (375°F) vorheizen. Eine hitzebeständige Schüssel mit Wasser in den Ofen stellen. Die gegangenen Teigstücke mit einem scharfen Messer mehrmals schräg einschneiden. Das Eigelb mit etwas Wasser verquirlen und die Hoagies damit bestreichen und dann für etwa 20 Minuten backen – die Sandwichbrötchen sollten schön aufgegangen sein und eine goldbraune Farbe bekommen haben. Aus dem Ofen holen und auf einem Kuchengitter komplett abkühlen lassen.

      This may seem like a silly question, but are you supposed to keep the steaming water in there for the whole baking process or just for the pre-heat time?

        The water stays in the oven – you want some moisture in the oven throughout the baking time.

            Bei mir sind (fast) alle Rezepte mit Ober-/Unterhitze.
            Steht auch in den Hinweisen auf jeder Seite (web Seitenleiste oder mobil am Ende der Seite).
