Green Beast Popsicles (with absinthe)

We already had our first little “heat wave” this year. By heat wave I mean one weekend with more than 20°C and no rain ;) Summer is coming pretty late this year it seems. But who cares? We can still have some ice even if there is no sun or heat. How about some Green Beast Popsicles? They are really delicious and quite special ;)

Last year we welcomed an ice maker in our home – her name is Elli ;) In summer she was basically working every day to give us delicious ice cream. For example some delicious Cereal Milk Ice Cream – so good! In autumn she had to leave the kitchen and take a break in our “Rumpelkammer” aka. box room. There is just not enough space in our tiny kitchen ;) Well… bringing her back all the time would be too exhausting, so using popsicle molds is a good option during “ice off season”. You might have to wait a bit longer to actually have some ice in front of you with those molds, but it is much easier to handle. So – deal of the day! ;)

If you want to make ice that is not based on milk or heavy cream these popsicles are better anyway. No need to churn the ice.

In case you wonder why I called these popsicles “Green Beast Popsicles” – they are not the favorite type of ice cream of the “Incredible Hulk”. Well, they could be… but actually the name origins from a cocktail/punch with the name “Green Beast”. A French bartender created this drink more or less 10 years ago by mixing lime juice, simple syrup, and absinthe. Yes, that green stuff that makes you bit dizzy if you drink too much. So no ice for the kids this time ;)

I love me some absinthe from time to time – not because I want to knock myself out – I like the flavors of anise and fennel. Also a big fan of Ouzo or anything else with anise ;) In case you want to make the popsicles and do not have a popsicle mold at home – check this one here* on Amazon. That’s the one I am using and I think it is doing a pretty good job. Just in case ;)

INGREDIENTS / ZUTATEN

(for 8 popsicles)

1 1/2 cup (360ml) water
1/3 cup (80ml) fresh lime juice
1/4 cup (60ml) lime syrup*
1/4 cup (60ml) absinthe*
cucumber slices

(8 Popsicles)

360ml Wasser
80ml frischer Limettensaft
60ml Limettensirup*
60ml Absinth*
Gurkenscheiben/-streifen

DIRECTIONS / ZUBEREITUNG

1. Mix the water with lime juice, lime syrup, and absinthe. Fill into popsicle molds and place the cucumber slices inside the molds. Place in the freezer for about 1 1/2 hours, then stick the wooden sticks into the half frozen popsicles and continue freezing them for at least 6 hours.

2. To get the popsicles out, put the mold into some warm water – that helps to release the ice.

1. Das Wasser mit dem Limettensaft, Limettensirup und Absinth vermischen und dann in die Popsicle Form füllen. Gurkenscheiben (oder Streifen) mit in die Formen geben und dann für etwa 1 1/2 Stunden ins Gefrierfach stellen. Dann die Holzstiele in das halb gefrorene Eis stecken und für mindestens 6 Stunden durchfrieren lassen.

2. Zum Lösen aus der Form etwas warmes Wasser über die Form laufen lassen und dann das Eis herausziehen.

Description

If it gets hot in summer, these popsicles are here to refresh you. They are based on a drink called Green Beast and made with a tiny bit of absinthe ;)


Ingredients

1 1/2 cup (360ml) water
1/3 cup (80ml) fresh lime juice
1/4 cup (60ml) lime syrup
1/4 cup (60ml) absinthe
