Description

If it gets hot in summer, these popsicles are here to refresh you. They are based on a drink called Green Beast and made with a tiny bit of absinthe.

Ingredients

Scale

1 1/2 cup (360ml) water
1/3 cup (80ml) fresh lime juice
1/4 cup (60ml) lime syrup*
1/4 cup (60ml) absinthe*
some thin cucumber slices

Instructions

1. Mix the water with lime juice, lime syrup, and absinthe. Fill into popsicle molds* and place the cucumber slices inside the molds. Place in the freezer for about 1 1/2 hours, then stick the wooden sticks into the half-frozen popsicles and continue freezing them for at least 6 hours.

2. To get the popsicles out, put the mold into some warm water – that helps to release the ice.

Notes

Enjoy freezin’!
