Strawberry season has started here in Germany. Yay! Are you one of those individuals that cannot say »no« to those little red fellas? Every time I go shopping somehow one of those little trays/baskets with strawberries ends up in my shopping cart. I do not even notice it until I am out of the supermarket. Well… there are worse things that could happen, right? If you always have some strawberries at home, you always have something nice to snack on, or in my case here you can prepare a nice Strawberry Tiramisu with Baileys Strawberries & Cream.

I really love strawberries and also raspberries. A bowl with these fellas in front of me is gone in no time. That’s the reason I use it fairly regularly in my bakes and desserts in summer. Fortunately, we are pretty close to some strawberry farms in Brandenburg. If you like to you can actually go there and get them directly from the fields where they grow… quite convenient if you don’t have a garden yourself.
For this tiramisu with strawberries, I did not have to go out to the fields. I get something called »Bio Kiste« each week – it’s a box of fruits and veggies from an organic farm close by which is delivered directly to your front door. So this week I was lucky and had some nice organic strawberries in the box and I guess you are lucky because I was able to make this delicious tiramisu with strawberries for you. Well, almost for you… you can make it at home yourself with the recipe if you want to.


For the other ingredients I had to go to the supermarket and kind of hunt them down. Especially the Baileys Strawberries & Cream – that liquor is a limited edition from Baileys (Advertising) and only available for a short time this summer. I really like it and it was a perfect fit for the tiramisu instead of maybe more »traditional« marsala or amaretto. So just in case you want to try yourself – go and grab a bottle. I saw it also online on Amazon* if you can’t get a hold of it in a supermarket close by.
The recipe is made for four servings – I recommend making it in a glass jar or drinking glass so you can actually see the layers of the tiramisu, but small bowls are also fine. At the end it’s all about the flavors and looks are not that important, right? Since the strawberries are already quite sweet right now, I did not add that much sugar to the cream – I suppose you can reduce it even more if you like to. If you want to reduce the fat in the dessert as well, you can change the mascarpone and yogurt ratio to more yogurt. Should make the dessert a bit »lighter«. The only thing you should not play with: the liquor. That has the perfect dosage.

For the cream:
8.8 oz. (250g) mascarpone
3.5 ou. (100g) yogurt alternative (e.g. almond)*
2 tbsp. Baileys Strawberries & Cream*
7 oz. (200g) heavy cream
1.7 oz. (50g) confectioners’ sugar*
For the layers/decoration:
18 oz. (500g) fresh strawberries
1 tbsp. sugar (fine)*
3.5 oz. (100g) Amaretti cookies* (or ladyfingers)
5-6 tbsp. Baileys Strawberries & Cream*
2 tbsp. chopped pistachios*
halved strawberries for decoration
mint leaves (optional)

Für die Creme:
250g Mascarpone
100g Joghurt Alternative (Mandel)*
2 EL Baileys Strawberries & Cream*
200g Schlagsahne
50g Puderzucker*
Für die Schichten/Dekoration:
500g Erdbeeren
1 EL Zucker (fein)*
100g Amaretti Kekse* (oder Löffelbiskuit)
5-6 EL Baileys Strawberries & Cream*
2 EL Pistazien*, gehackt
Erdbeerehälften für die Dekoration
Minzblätter (optional)



DIRECTIONS / ZUBEREITUNG
1. Add the mascarpone, yogurt replacement (or actual yogurt if you prefer that) and Baileys to a bowl and mix until well combined. Add the heavy cream and confectioners’ sugar in a separate bowl and whisk until stiff peaks form. Keep about 2 tbsp. of the whipped cream for the decorations and add the rest to the bowl with the mascarpone and fold in gently. Set aside in the fridge until needed.
2. Wash the strawberries and remove the green parts. Take about half of the strawberries and puree with the tablespoon of sugar, quarter the remaining strawberries and set aside. Crush the Amaretti cookies coarsely and set aside.
3. To assemble the desserts divide about half of the crushed cookies between the glasses you use and add a bit of the Baileys on top. Continue with a layer of mascarpone cream, then strawberry puree and cut strawberries. Repeat the layering by adding the remaining cookies, then Baileys, mascarpone cream, puree, and strawberries again. Decorate the tiramisu with the whipped cream, halved strawberries, chopped pistachios, and mint leaves if you like. Serve immediately.
1. Den Mascarpone und Joghurtersatz zusammen mit dem Baileys in eine Schüssel geben und gut verrühren. Die Sahne in einer zweiten Schüssel zusammen mit dem Puderzucker steif schlagen (etwa 2 EL davon für die Dekoration zur Seite nehmen) und dann vorsichtig unter die Mascarpone-Masse ziehen. Bis zur weiteren Verwendung in den Kühlschrank stellen.
2. Die Erdbeeren waschen, vom Grün befreien und dann die Hälfte davon mit dem Zucker pürieren. Die restlichen Erdbeeren vierteln und zur Seite stellen. Die Amaretti Kekse grob zerbrechen.
3. Für die Desserts als erste Schicht etwa die Hälfte der Amarettini auf die Gläser verteilen und mit etwas Baileys beträufeln. Auf diese Schicht etwas von der Mascarpone-Creme geben und darauf dann Erdbeerpüree und klein geschnittene Erdbeeren. Als Nächstes die restlichen Amaretti Kekse, wieder etwas Baileys, dann Mascarpone-Creme und erneut Erdbeerpüree und Erdbeerstücke. Von der zurückbehaltenen Sahne einen Klecks auf das Dessert setzen und mit einer Erdbeerehälfte, gehackten Pistazien und Minze (optional) dekorieren. Sofort servieren.
