It has been quite warm already the last several days. It seems summer finally arrived. Unfortunately, this also means hot nights in our apartment! We live directly under the roof and that feels like a sauna sometimes when the day was hot. Well… I guess I have to eat more of these Watermelon Kiwi Popsicles to cool down and compensate :P
During the day you can somehow escape the heat by not being in our apartment. An office with a/c or a nice and cool shop or even better taking a swim in one of the many lakes here in Berlin. But when we are at home there is only one thing you can do – eat ice cream! We don’t have an a/c and the fan that is running constantly is only shifting the warm air from one corner to another. So ice cream is basically the only thing that can cool us down. Or sitting in front of the open fridge :P
To save some money and not spending too much money on the electrical bill we prefer to have popsicles in our freezer. It is normally a small variety of ice – creamy ice cream like these ice pops with skyr or these refreshing popsicles here with watermelon and kiwi. Really nice in summer!
If you take a look at the recipe you will notice that I listed sugar for the ingredients. With sweet fruits, you actually don’t need it. You can keep your ice basically sugar-free if you want to. If the kiwi is not ripe enough it can happen that it tastes a bit bitter – then you definitely need something sweet to balance it out. That can be done with regular sugar or with sweetener – that’s up to you. Just saying ;)
Besides that – a really simple recipe. All you got to do is puree the fruits and fill it into the popsicle molds*. I use one of them for quite some time already and they are quite useful. No need for a big ice machine ;)

INGREDIENTS / ZUTATEN
3 kiwis
1/2 seedless watermelon (about 3 1/2 cups)
3-4 tsp. sugar (or some drops sweetener)
3 Kiwis
1/2 Wassermelone, kernlos (ca. 3 1/2 cups)
3-4 TL Zucker (oder etwas Süßstoff)
DIRECTIONS / ZUBEREITUNG
2. Cut the watermelon into cubes (remove any white flesh or seeds) and add together with 1-2 tsp. sugar (or some sweetener) to a blender and blend until smooth. Fill into the popsicles molds with the kiwi on the bottom, place the wooden sticks in the center of the popsicles and freeze for at least 6 hours or overnight.
2. Die Wassermelone in Stücke schneiden (Schale und weißes Fruchtfleisch und ggf. Kerne entfernen) und ebenfalls mit 1-2 TL Zucker (oder etwas Süßstoff) pürieren. In die Formen auf die fest gewordene Kiwischicht gießen, Holzstiele rein und dann für mindestens 6 Stunden oder über Nacht gefrieren.
