Baked Granola with Berries

    If you using your granola only in the morning to drown it in some milk, you are doing something wrong :P There is so much more you can do with granola and oats… for example a delicious baked muesli (aka. granola). It’s easy to prepare and definitely a nice change for your meal plan during the week or on the weekends.

    OK – a bowl of granola with some milk is really a time saver if you are in a hurry. Baking your granola is definitely a bit more work and takes some time. So making this recipe is probably only an option for the weekend or any other day you got a bit of time on your hands…

    We make this kind of breakfast quite regular even though it’s a bit of extra work to do. Still pretty easy to prepare. You mix everything and put it in the oven. That’s all ;) In the meantime you can actually prepare the rest of your breakfast or brunch and everything will be ready at the same time.

    We normally do not eat all of the baked granola at once. When we are only two persons for breakfast, there is enough leftover for breakfast the next day (or even days). You can easily store it in some glass or plastic containers and take it to work along with some yogurt or a smoothie. Once you made the baked granola it should stay fresh for about 3 days (if you store it properly in the fridge). So basically what I wanted to say: It is always a good idea to make some baked granola :P

    Regarding the granola/muesli in the recipe – use whatever you like or what you can find in our cabinets – I assume there are always some unfinished boxes somewhere in a kitchen. I used muesli with chocolate pieces which I like a lot. Same for the berries – use whatever you like/have at hand. We normally have some frozen mixed berries in the freezer we also use for smoothies – they are perfect for this recipe… in case you do not have fresh berries/fruits at home. Right now I would probably use some fresh rhubarb and strawberries… mmmm :D

    INGREDIENTS / ZUTATEN

    2 medium eggs
    3/4 cup (180ml) milk
    1/3 cup (80ml) maple syrup
    1.7 oz. (50g) butter, melted
    3.5 oz. (100g) rolled oats
    3.5 oz. (100g) granola (e.g. with chocolate of fruits)
    1.7 oz. (50g) dried fruits
    3 tbsp. brown sugar
    1/2 tsp. cinnamon
    1/4 tsp. salt
    7 oz. (200g) frozen wild berries, thawed

    (für 4 Personen)

    180ml Milch
    80ml Ahornsirup
    50g Butter, geschmolzen
    100g Haferflocken (zart)
    100g Müsli (z.B. mit Schokolade oder Früchten)
    50g Trockenfrüchte
    3 EL brauner Zucker
    1/2 TL gemahlener Zimt
    1/4 TL Salz
    200g Waldbeeren (TK Ware), aufgetaut und abgetropft

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Melt the butter (e.g. in the microwave) and set aside.

    2. Add the two eggs to a large bowl and whisk until slightly foamy. Add the milk, maple syrup, and melted (and cooled) butter – mix until well combined. In a second bowl mix the rolled oats with the muesli, dried fruits, brown sugar, cinnamon, and salt. Add the dry ingredients to the bowl with the wet ingredients and mix until well combined. Fold in the thawed and drained berries. Pour the mixture into an 8×6 inches (20x15cm) baking pan and bake for 40-45 minutes. Take out of the oven and let cool down for some time. Serve still bit warm with yogurt, maple syrup, and fresh fruits or berries.

    1. Den Backofen auf 180°C (350°F) vorheizen. Die Butter schmelzen (z.B. in der Mikrowelle) und zur Seite stellen.

    2. Die beiden Eier in einer großen Schüssel kurz aufschlagen, bis sie leicht schaumig sind. Die Milch, Ahornsirup und geschmolzene (und abgekühlte) Butter dazugeben und alles gut verrühren. In einer zweiten Schüssel die Haferflocken mit dem Müsli, den Trockenfrüchten, braunem Zucker, Zimt und Salz gut vermischen und dann zur Schüssel mit den flüssigen Zutaten dazugeben und alles gut vermengen. Die TK-Waldbeeren (aufgetaut) unter die Masse heben und dann alles in eine etwa 20x15cm (8×6 inches) große Auflaufform füllen. Für 40-45 Minuten backen. Aus dem Ofen nehmen und etwas abkühlen lassen. Das Baked Müsli noch leicht warm mit Joghurt, Ahornsirup und frischen Früchten oder Beeren servieren.
