Sometimes quick and easy is all you want – or all you can do. Something basic without any filling, added stuff inside, on top… nothing. Just good old plain chocolate cookies that go along really well with a cup of coffee or tea… or milk ;) Something you can enjoy as a snack if you want something with chocolate. Something you can prepare quickly with ingredients you probably have at home all the time…
Besides having one of these cookies for a snack you can also use the cookies in other bakes like you would do with graham crackers for example. If you need a base for a no-bake cake all you have to do is crush the cookies, add some sugar and melted butter and you are good to go. Or you crush them and make a layered dessert with them. So many options. I’d say you have to bake these cookies and then try everything I mentioned :P
You can easily make more cookies at once and then freeze some of them – that way you always have some on hand if you want something sweet or need something for another bake…
INGREDIENTS / ZUTATEN
1/2 cup (120g) butter, at room temperature
1/4 cup (50g) brown sugar
1 tsp. vanilla extract
1 1/4 cup (160g) all-purpose flour
3 tbsp. cocoa powder
1 1/2 tsp. baking powder
1/2 tsp. salt
120g Butter, Zimmertemperatur
50g brauner Zucker
1 TL Vanille Extrakt
160g Mehl (Type 550)
3 EL Kakaopulver
1 1/2 TL Backpulver
1/2 TL Salz
DIRECTIONS / ZUBEREITUNG
2. Add the butter and brown sugar to a large bowl and mix on high speed until light and fluffy. Add the vanilla extract and mix in. Mix the flour with cocoa powder, baking powder, and salt and add to the mixing bowl – mix until just combined. Shape the dough into 16 walnut-sized balls, flatten them a bit and place on the baking sheet with some space in between. Use a fork to press a criss-cross pattern into the cookies and bake them for 5 minutes. Reduce the heat of the oven to 300°F (150°C) and continue baking the cookies for another 15-18 minutes until the cookies are firm but not hard. Take out of the oven and let cool down on a wire rack.
2. Die Butter mit dem braunen Zucker in eine große Schüssel geben und auf höchster Stufe hell und luftig aufschlagen. Vanille Extrakt dazugeben und unterrühren. Das Mehl mit Kakao, Backpulver und Salz vermischen und dann zusammen in die Rührschüssel geben und unterrühren – hier nur so lange rühren, bis sich alles verbunden hat. Aus dem Teig dann 16 etwa walnussgroße Kugeln formen, diese etwas platt drücken und mit Abstand zueinander auf das Blech setzen. Mit einer Gabel ein Kreuzmuster in die Teiglinge drücken und dann für 5 Minuten backen. Die Temperatur des Ofens auf 150°C (300°F) verringern und dann weitere 15-18 Minuten backen, bis die Cookies fest, aber nicht hart geworden sind. Aus dem Ofen holen und auf einem Kuchengitter auskühlen lassen.
