Easy Air Fryer Cheesecake

    If you have an Air Fryer at home, you’ve probably asked yourself this question already – what can you cook with this thing? Well… actually, everything you can do in a regular oven. More than just french fries and chicken wings, I’d say! Even delicious cakes, like this simple Air Fryer Cheesecake, are possible in this type of kitchen appliance. The cake is not big enough for a whole soccer team, but definitely enough to feed a small group you can invite for a coffee at home. ;P

    We’ve had Air Fryers at home for quite some time. We were early adopters, you could say. ;) Testing new kitchen appliances is a fun thing to do. As long as they turn out useful, I have to add. Testing and adapting recipes for an Air Fryer was certainly interesting, sometimes challenging. Not all recipes can be done in an Air Fryer the same way you would make them in a regular oven. This type of appliance has its limits – first and foremost the size. You can’t do everything in an Air Fryer. Large cakes? Nope. Not possible. You have to have a soft side for the smaller things in life. ;P

    Even though you might not be able to bake a large cake or casserole in this hot air machine, it’s still useful, even for families with many people to feed. Just think of preparing burgers on the stove, a batch of french fries in the oven and then something else in an Air Fryer on the side – baked veggies, for example. All ready at the same time…

    Anyway. I don’t want to praise Air Fryers to the skies here. I think they are useful, and great for smaller cakes, like this cheesecake here. An Air Fryer needs less time to get ready, uses less energy, and is sometimes faster than a regular oven. Saying that from my experience. Could be different for others. We are only two here, and baking smaller cakes is actually good for us. Much less waste – and by waste I mean cake that has to be given to friends and family to eat because it’s too much for us both. ;P

    I know – that’s not what family, friends, or colleagues from work want to hear. They want a maximum overproduction so the can benefit from the leftovers. So they might not like our Air Fryer that much then. I guess there are pros and cons to everything…

    In terms of ingredients and preparation – this Air Fryer version of a cheesecake is identical to one you would bake in a regular oven. So nothing to adapt there. When it comes to baking times and baking temperature, there is a slight difference – due to the Air Fryer itself and how it works, and due to the size of the cake, of course. If you ever want to adapt a recipe from your Grandma’s recipe book, you have to think of all of that. You might need to test and adapt several times until everything is perfect. Even taking this recipe here for your Air Fryer at home might need small adaptations. Unfortunately, there is no standard for Air Fryers, how they heat up and distribute the heat, so results can vary depending on the appliance you use.

    Saying that – this recipe might not be 101% perfect for your Air Fryer. Think of the baking temperature and baking time as a recommendation. Mine can be used without preheating – that might not work as well for your machine. If you are not sure, let it heat up for a few minutes before adding the cake, and then check from time to time to see if the cake is done already. If you are using your Air Fryer for a while already, I bet you know how it reacts…

    INGREDIENTS / ZUTATEN

    For the base:
    5.3 oz. (150g) butter cookies, crushed
    1 tbsp. brown sugar
    2 tbsp. butter, melted

    For the filling:
    17.6 oz. (500g) cream cheese, at room temperature
    3.5 oz. (100g) sour cream, at room temperature
    3/4 cup (150g) sugar
    1 tbsp. lemon juice
    2 tsp. vanilla extract
    2 large eggs, at room temperature

    fresh strawberries for the topping/decoration (optional)

    150g Butterkekse, zerbröselt
    1 EL brauner Zucker
    2 EL Butter, geschmolzen

    500g Frischkäse, Zimmertemperatur
    100g Schmand, Zimmertemperatur
    150g Zucker
    1 EL Zitronensaft
    2 TL Vanille Extrakt
    2 Eier (L), Zimmertemperatur

    DIRECTIONS / ZUBEREITUNG

    1. Start with the base – add the cookies to a freezer bag and crush them with a rolling pin to get very fine crumbs. Add the sugar and melted butter and mix to combine. Add the crumbs to a 7-inch (18 cm) round baking tin with a loose bottom* and press them down to create a compact and even layer. Set aside.

    2. In a large bowl mix cream cheese, sour cream, sugar, lemon juice, and vanilla extract until well combined – using a spatula only is fine here. Add the eggs one after another and mix well after each addition. Pour the filling into the prepared baking tin and smooth out the top. To make sure you don’t have any air bubbles in the filling, you can tap the baking tin several times on the counter to release any air bubbles.

    3. Set your Air Fryer to a temperature of 150°C (300°F) – do not preheat. Place the baking tin inside the basket of the Air Fryer, set the timer to 20 minutes, and bake the cheesecake. Check a few minutes before the end of the baking time – the cheesecake filling should have set, but still wobble a bit in the center. If the filling is still soft, continue baking the cheesecake in 2-3 minutes intervals until it’s done. The baking time varies depending on the size of the Air Fryer and how the model distributes the heat. Once the cheesecake is done, open the Air Fryer a slightly and let it cool down inside the Air Fryer for about 20-25 minutes. Take out and let cool down completely on a wire rack, when cooled, place the cheesecake in the fridge for at least 6 hours or overnight.

    4. Remove the cooled cheesecake from the baking tin and serve it with your favorite fruits or fruit sauce and some whipped cream (optional).

    1. Mit dem Boden anfangen – dafür die Kekse in einen Gefrierbeutel geben und mit einem Nudelholz zu feinen Bröseln verarbeiten. Die Brösel mit dem braunen Zucker und der geschmolzener Butter vermischen. Die feuchten Brösel in eine runde Backform (18 cm) mit Hebeboden* füllen und zu einer flachen und kompakten Schicht zusammendrücken. Zur Seite stellen.

    2. Frischkäse, Schmand, Zucker, Zitronensaft und Vanille Extrakt in einer großen Schüssel verrühren – ein Gummispatel reicht hier vollkommen aus. Die Eier einzeln dazugeben und jeweils gut unterrühren. Die Frischkäsemischung in die vorbereitete Backform füllen und glatt streichen. Um Luftblasen aus der Füllung zu bekommen, die Form einige Male auf die Arbeitsfläche klopfen.

    3. Den AirFryer auf eine Temperatur von 150°C (300°F) einstellen – vorheizen ist i.d.R nicht notwendig. Die Backform in den Korb des AirFryers stellen und dann für etwa 20 Minuten backen. Einige Minuten vor Ende der Backzeit checken – die Käsekuchenfüllung sollte an den Rändern fest sein, darf in der Mitte aber noch ein wenig wobbeln, wenn man an der Form rüttelt. Sollte die Füllung noch zu weich sein, in Intervallen von 2 bis 3 Minuten weiter backen, bis die Konsistenz passt. AirFryer sind hier recht unterschiedlich. Die Backzeit hängt von der Größe der Leistung Modells ab. Sobald der Käsekuchen fertig ist, den AirFryer einen Spalt öffnen und den Kuchen etwa 20-25 Minuten im Gerät abkühlen lassen. Den Käsekuchen herausholen und dann auf einem Kuchengitter komplett abkühlen lassen, dann für mindestens 6 Stunden oder über Nacht in den Kühlschrank stellen.

    4. Den abgekühlten Käsekuchen aus der Backform lösen und mit Früchten oder Fruchtsoße und etwas Schlagsahne (optional) servieren.

    An Air Fryer is not only good to prepare french fries – you can also use it for baking! This Air Fryer Cheesecake is the best example. Easy and good!
