Dates Almond Oats Cookies (vegan)

Happy Cookie Friday to all of you out there! I hope you are celebrating this special day each week… If not it were a bit weird if I said, »Happy Cookie Friday to all of you«. Anyway. Today I got some really nice, easy, vegan, sugar-free, and gluten-free, and full-of-flavor cookies for you… if you like. If you are celebrating the day of the cookies. Delicious Date Almond Oats Cookies to be precise. Only a few ingredients, but combined a delicious snacky snack!

Sorry if I write weird shit today – I did not sleep well and that always turns me into a wacky writer. Dunno why. Guess my brain just does not give a flying f*ck anymore when I have not enough sleep. Well… I could take a nap for a minute, but there is no time for something like that. ;P

Anyway. Today’s cookies are really easy to prepare. And somewhat »healthy« if you want to label sweet treats like that. Just because you use some »healthy« ingredients, that does not mean the result is also »healthy«, right? Maybe I should give you a small example here. As some of you might know I am trying to leave out sugar wherever I can because I am a diabetic. That’s why I like to use other ingredients instead that can provide some sweetness… dates, for example. So dates could be called »healthier« for someone like me, but if I eat too much of them they are not good for me either. They are still full of sugar. The body reacts slightly differently compared to refined sugar, but still… those dates are also not good for my blood sugar level if I eat too many of them.

I hope you know what I mean. »Healthy« does not automatically mean »healthy« for everyone or all the time. I think it is more important to keep an eye on what you eat, on how your body reacts, and on what kind of »dosage« is good for you. Why am I always trying to explain something, when my brain is not working properly? I should stop doing that. ;P

Anyway. These Cookies. Delicious. Somewhat healthy if you are not eating too much of it. I normally have two max. a day – that’s my perfect dosage. It might be different for you. These cookies are definitely healthier than other cookies though. The ones with loads of sugar and fat. Certainly better than those.

Anyway. Despite all the confusing writing, I have one recommendation here for you: get a good food processor or mixer if you want to make cookies like these here. Dates are bitches when it comes to blending them. I tried a small mixer and it failed miserably. I also tried an immersion blender – also not a good idea. Both were a huge mess at the end. A good food processor or larger mixer will turn the dates into a nice paste and can mix the other ingredients well with that paste. Don’t even think about a handheld mixer. ;P

INGREDIENTS / ZUTATEN

4.2 oz. (120g) soft dates
3.5 oz. (100g) ground almonds
1.8 oz. (50g) rolled oats

0.7 oz. (20g) semi-sweet chocolate (vegan), melted
a few chopped almonds

(12 Cookies)

120g weiche Datteln
100g Mandeln, gemahlen
50g Haferflocken

20g Zartbitterschokolade (vegan), geschmolzen
ein paar gehackte Mandeln

DIRECTIONS / ZUBEREITUNG

1. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside.

2. Add the dates to a blender and mix until you get a smooth paste. Add the almonds and mix briefly – the result should look like wet sand. Transfer to a bowl, add the rolled oats, and knead into a dough. Divide into 12 portions, shape into balls, flatten them and shape into cookies. Place on the prepared baking sheet and bake for about 12-14 minutes. Remove from oven and cool down on a wire rack.

3. Chop the chocolate coarsely and melt (e.g. in the microwave). Use a spoon to spread some chocolate on each cookie, sprinkle with chopped almonds, and let dry. Store the finished cookies in a well-closing tin.

1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.

2. Die Datteln in einen Mixer geben und zu einer homogenen Masse pürieren. Mandeln dazugeben und kurz mit untermixen – die Masse sollte jetzt wie feuchter Sand aussehen. Alles aus dem Mixer in eine Schüssel umfüllen und dann die Haferflocken dazugeben und zu einem Teig verkneten. Den Teig in 12 Portionen aufteilen, zu Kugeln formen und dann flachdrücken und in Cookies formen. Auf das vorbereitete Blech setzen und für etwa 12-14 Minuten backen. Aus dem Ofen holen und auf einem Kuchengitter abkühlen lassen.

3. Die Schokolade grob hacken und (z.B. in der Mikrowelle) schmelzen. Mit einem Löffel etwas Schokolade auf jeden Cookie auftragen, mit gehackten Mandeln bestreuen und trocknen lassen. Die Cookies in einer gut schließenden Dose lagern.
