If you take a look at the pictures you might think »Is that still ok? It’s so green!« ;P Well.. the answer is »yes«, it’s absolutely ok and the color is intentional! If you are coming from Google because you searched the term »Pandan« you will know what’s happening, I assume. This is a delicious Spinach Pandan Loaf Cake. Not the usual box cake your grandma normally puts on the table but certainly no less delicious! ;)
When it’s warm and sunny outside, you want to spend as much time as possible outdoors. Right? We often go to public parks in summer (because we don’t have a garden) – fortunately, we got a nice park right in front of our door. So what’s important when going out to a park – besides taking the obvious after-work beer? Some snacks, of course! Something delicious like these Spanakopita Triangles with Minced Meat, Spinach & Feta. You can prepare them easily in advance and take them anywhere – work, a train ride or to the park ;)
Pita bread is known almost everywhere in the world – it is basically the first type of bread that was made with crushed grains. Flour and some water are mixed and then slapped onto a hot stone. Shortly after that you get something like a pancake/flatbread you can eat. Over the years this type of bread evolved, of course. In Turkey, for example, they serve flatbread with delicious fillings. As an example, I got some flatbread aka. Pide with Spinach, Tomatoes & Feta. Quite easy to prepare and really delicious! Perfect if you got guests coming over ;)
Fall is here. At least in Berlin. Temperatures dropped and it finally started to rain. Not sure if I like that. I appreciate the lower temperatures and the foggy mornings, but I do not like the rain and less light during the day… but it also means you can finally cook hearty meals again. Not only salad because it was too hot to do anything else. Time for stews and soups like this Creamy Potato Soup with Spinach, for example. Not yet a super heavy dish but we are getting there ;P
I always have problems saying the name correctly: Spa-na-ko-pi-ta. I tend to mix up some of the letters and then it’s suddenly something completely different ;) Maybe I should just describe what it is – spinach strudel with filo dough. No. I have to remember the correct name. This dish deserves to be pronounced correctly. It’s one of my favorite pastries from Greece! Spanakopita! ;)
I guess you ended up here because you were looking for something delicious that can be served quickly. Right?! ;) Well… you clicked the right link! Gnocchi are always a good idea for a quick and easy weeknight dinner. They are available (ready-to-use) in most supermarkets and usually only need to be heated briefly – either in a pot with boiling water or directly in a frying pan. I prefer the preparation in a frying pan. Makes everything even easier. These creamy Gnocchi with Chorizo, Sun-dried Tomatoes, and Spinach, for example, are a simple “one-pan-dish” that’s ready in less than 30 minutes.
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
