What are you normally eating for breakfast? Bread rolls and maybe some cold cuts or jam? Well… how about something new? Something different? How about some Breakfast Quesadillas with Scrambled Eggs? I am pretty sure there are many out there that would like to eat that each morning to start the day perfectly ;)
In Germany, we “normally” have a variety of bread rolls with cold cuts, cheese, or jam for breakfast. I think some would say it is similar to a continental breakfast you know from hotels around the world ;) Nothing wrong with that, but sometimes you want something different, don’t you? Maybe some overnight oats, an omelet, or… breakfast quesadillas, for example. If you prefer a hearty breakfast, this is definitely a nice option – I’m sure you’ll agree ;)
There is one important thing about breakfast for me in the morning: it can’t be too complicated. These Breakfast Quesadillas might look a bit difficult to prepare, but trust me… they are really easy to make. You might need a bit more time to get everything ready but that extra minutes are well spent in my opinion. These delicious quesadillas are not a meal you would make on a Monday morning when you’re in a hurry anyway. More like Saturday or Sunday morning when you are relaxed and ready to enjoy your breakfast ;)
Well… the quesadillas are really not that complicated. Much easier than quesadillas you would make for dinner, for example. All you need is some scrambled eggs and fried bacon (which both can be done in advance actually). Some additional veggie chopping and then you are ready to do the folding process. I made a video to explain this easy task. All easy peasy and delicious ;)
No more complaining about boring breakfast allowed anymore. As you can see you can switch up things pretty easy ;)
INGREDIENTS / ZUTATEN
For the quesadillas:
4.4 oz. (125g) bacon strips
4 medium eggs
1 tbsp. butter, plus more if needed
4 wheat flour tortillas (Ø 9 inches/23cm)
4 tbsp. refried beans
2 medium tomatoes, diced
1.8 oz. (50g) baby spinach leaves
1 spring onion, chopped
3.5 oz. (100g) grated cheese (e.g. cheddar, mozzarella)
salt, pepper
some avocado slices (optional)
some fried pimientos (optional)
Für die Quesadillas:
125g Frühstücksspeck, in Streifen
4 Eier (M)
1 EL Butter, plus ggf. mehr
4 Weizen Tortillas (Ø 23 cm)
4 EL Refried Beans
2 mittelgroße Tomaten, gewürfelt
50g Babyspinat
1 Frühlingszwiebel, in Ringen
100g geriebener Käse (z.B. Cheddar oder Mozzarella)
Salz, Pfeffer
einige Avocadoscheiben (optional)
einige gebratene Pimientos (optional)
Folding these quesadillas is really easy. Just add the filling to the individual sections and fold them on top of each other starting on one side. You can basically use any type of filling you like. Instead of bacon, you could use fried chicken or tofu. If you’re not a fan of beans you can add more veggies (e.g. chopped peppers) or maybe some sautéed mushrooms … or just more cheese. More cheese is always an option ;P
DIRECTIONS / ZUBEREITUNG
2. Add the eggs to a small bowl and whisk, season with some salt and pepper. Add half of the butter to the same pan you used for frying the bacon, let it melt, and then make scrambled eggs. Try to keep as much moisture in the eggs as possible, so don’t overcook them. Take off the heat and transfer to a bowl. Wash and dice the tomatoes, wash and drain the spinach and chop the spring onion. Set aside
3. To assemble the quesadillas place one tortilla on a wooden board and make a cut from the center to the edge. Spread about 1 tbsp. of the refried beans in the quarter section next to the cut you made (left side). Place some of the scrambled eggs in the next quarter section, then diced tomatoes and spinach leaves in the next section and grated cheese in the last section (see pictures). Sprinkle some of the bacon and chopped spring onion on top, season with salt and pepper and begin folding the quesadilla – start with the section with refried beans and fold it on top of the scrambled eggs, then fold both over the tomato and spinach and lastly everything on top of the grated cheese to create one triangular package. Repeat with the other tortillas and ingredients.
4. Add the remaining butter to a large frying pan and heat up over medium heat. Add the quesadillas to the pan (open side down) and fry from both sides for several minutes until nicely browned. Serve warm with some avocado slices and/or fried pimientos (optional). Some hot salsa is also nice with the quesadillas.
2. Die Eier verquirlen und mit etwas Salz und Pfeffer würzen. Die Hälfte der Butter in die noch heiße Pfanne geben und dann Rühreier zubereiten. Das Rührei nicht zu trocken zubereiten, da beim zweiten Erhitzen noch etwas Feuchtigkeit verloren geht. Vom Herd nehmen und in eine Schüssel umfüllen. Die Tomaten waschen und würfeln, Spinat ebenfalls waschen und abtropfen lassen, die Frühlingszwiebeln in Ringe schneiden. Zur Seite stellen.
3. Für den Zusammenbau der Quesadillas einen Tortilla Fladen auf ein Brett legen und von der Mitte zum Rand einmal einschneiden. Links vom Schnitt etwa 1 EL der Refried Beans im ersten Viertel des Tortilla verstreichen, etwas Rührei auf den zweiten Abschnitt (Viertel) geben, dann gewürfelte Tomaten und Spinat in den dritten Abschnitt, geriebener Käse dann ins letzte Viertel (s. Fotos). Ein paar Bacon Stücke und Frühlingszwiebelringe über alles verstreuen, mit Salz und Pfeffer würzen und dann zusammenfalten. Dafür das Viertel mit den Bohnen auf das Rührei falten, dann beides auf die Tomaten und Spinat und dann alles auf den geriebenen Käse – als Ergebnis sollte ein kleines dreieckiges Paket sein. Mit den restlichen Tortillas und Zutaten wiederholen.
4. Die restliche Butter in eine große Bratpfanne geben und erhitzen (mittlere Hitzezufuhr). Die Quesadillas (mit der offenen Seite nach Unten) in die Pfanne setzen dann für mehrere Minuten von beiden Seiten goldbraun und knusprig anbraten. Die Quesadillas warm mit einigen Avocadoscheiben und/oder gebratenen Pimientos servieren (optional). Dazu passt auch prima eine scharfe Salsa.
