Hot, hotter, the hottest… summer finally arrived and is giving us all! Sun, high temperatures but also some cooler days in between with thunderstorms. Yay! Well, not so much the thunderstorms since we are on the top floor with windows in the ceiling… really annoying when there is a lot of rain coming down. Anyway. I did not want to talk about rain – it’s all about ice cream today! Delicious homemade Strawberry Ice Cream – my new favorite treat when it’s hot!

Last year we welcomed a (not so) little ice machine in our kitchen – since that day we eat much more ice cream than before. I mean… who could resist if you can create the ice cream flavor of your dreams? Or the ice cream that consists of stuff you can find in your cabinets and you hope it works as ice cream? Having an ice cream maker results in a lot of experiments… this ice cream here with strawberries was also a test to be honest. Fortunately, it turned out pretty damn good.
I am not the biggest fan of strawberry ice cream – that might come as a surprise now. I love strawberries, don’t get me wrong, but when it comes to ice cream, I prefer vanilla, chocolate, pistachio and stuff like that. Strawberry ice cream kind of tastes artificial to me when you buy it in the supermarket – dunno why. Maybe because they use artificial flavors. If you make ice cream at home you have full control over the flavors and if you use real fruits, ripe and sweet, you will get a really nice result. Probably much better than anything you could buy.

This strawberry ice cream here is one of the good ones! Or should I say »one of the best ones you can possibly find in the whole wide world«? Well, this would probably sound a bit »over the top« but it’s the truth. I would have never thought that homemade strawberry ice cream could taste so delicious! I finally understand why so many people like it.
I mentioned it earlier – this ice cream was kind of a test or experiment. Normally you would use egg yolks as a binding agent in your ice cream so the fat and liquids kind of stay friends during the freezing process, giving the ice a nice and creamy texture – for this ice cream I left out the egg yolks and it worked absolutely fine.
Ice cream like that tends to turn into a solid ice block when in the freezer for a while, but this one here was still creamy and easy to work with after a couple of days. So no egg is needed here. Somehow the ratio of fat and sugar was fine.

INGREDIENTS / ZUTATEN
(4 servings)
14 oz. (400g) fresh strawberries
1/2 tbsp. lime juice
1/2cup (100g) sugar
1 pinch of salt
1 tsp. vanilla extract*
7 oz. (200g) heavy cream
1/2 cup (120ml) milk
(4 Portionen)
400g Erdbeeren
1/2 EL Limettensaft
100g Zucker
1 Prise Salz
1 TL Vanille Extrakt*
200g Sahne
120ml Milch

DIRECTIONS / ZUBEREITUNG
1. Wash the strawberries, remove the green parts and then puree with the lime juice. Set aside.
2. Add the sugar, salt, vanilla extract, heavy cream, and milk to a bowl and mix until well combined. Mix in the strawberry puree. Cover the bowl and place in the fridge for at least 2 hours to cool down.
3. Fill the mixture into your ice machine and let it do its magic for 30-45 minutes depending on the power of your machine. Take the finished ice cream out of the machine and put it into the freezer for at least 30 minutes before serving.
Note: Should work with most ice machines. If you do not have one at home, you can make the ice as well. Just put the mix into the freezer and let it freeze for one hour then mix again. Repeat several times until you get some creamy ice cream.
1. Die Erdbeeren waschen, das Grün entfernen und dann zusammen mit dem Limettensaft pürieren. Zur Seite stellen.
2. Zucker, Salz, Vanille Extrakt, Sahne und Milch in eine Schüssel geben und kurz aufschlagen, bis sich alles gut verbunden hat. Das Erdbeerpüree unterrühren. Die Mischung abdecken und für mind. 2 Stunden in den Kühlschrank stellen.
3. Die Eismischung in eine Eismaschine füllen und gefrieren lassen – dauert je nach Maschine 30-45 Minuten. Das fertige Eis in eine Schüssel füllen und bis zum Servieren mind. 30 Minuten ins Gefrierfach stellen.
Hinweis: Das Eis sollte sich mit jeder gängigen Eismaschine herstellen lassen. Falls ihr keine habt, dann füllt die Mischung in eine große Schüssel und stellt sie für eine Stunde ins Gefrierfach, dann alles kurz aufschlagen und wieder zurück ins Gefrierfach – mehrmals wiederholen, bis eine cremige Eismasse entsteht.
