I’ve got some brownies for you (again). It’s been quite some time since the last ones – two weeks ;) These here are as delicious as the ones before. Instead of cherries I was going for a more adult ingredient: Stout Beer aka. Guinnes. Do I have your attention now?! ;P
I love drinking beer and sometimes I even bake with it if the recipe works well with this “special” ingredient. Stout Beer or Guinness are really good for baking. Full of flavor and slightly sweet – a combinations that works perfect with chocolate. So using both in brownies seems a good choice! The beer has to be reduced to a beer syrup first. The flavor gets stronger and the alcohol says mostly good bye ;) Not everybody is into baking with alcohol, so this is a good compromise. With that and the chocolate you make a basic brownie batter and the cream cheese frosting gets also some of the reduced beer – everybody is happy with that I guess ;))
One little tip: Keep an eye on the brownies. You don’t want them to be over-baked. The result would be dry brownies. Nobody wants that! Make sure the edges are baked and the center is still slightly soft.
INGREDIENTS / ZUTATEN
1 cup (240ml) dark beer (stout)
3.5 oz. (100g) semi-sweet chocolate (85%), chopped
1/2 cup (115g) Arla Kærgården salted
2/3 cup (80g) cocoa powder
1 cup (200g) sugar
1 egg white
1 tsp. vanilla extract
1/4 tsp. salt
1/2 cup (65g) all-purpose flour
For the frosting:
3.5 oz (100g) cream cheese
1 cup (130g) confectioner’s sugar
1 tbsp. reduced beer (saved from the batter ingredients)
240ml dunkles Bier (Stout Bier)
100g Zartbitterschokolade (85%), gehackt
115g Arla Kærgården Gesalzen
80g Kakao
200g Zucker
1 Eiweiß
1 TL Vanille Extrakt
Prise Salz
65g Mehl (Type 405)
Für das Frosting:
100g Frischkäse
130g Puderzucker
1 EL eingekochtes Bier (vom Teig zurückbehalten)
DIRECTIONS / ZUBEREITUNG
2. Preheat the oven to 350˚F (175°C). Line a 7×7 inch (18x18cm) square tin with baking parchment and set aside. Chop the chocolate and add to a large microwave-safe bowl. Add the spreadable fat, cocoa powder and sugar. Heat up in the microwave for 15-20 sec. and then take out and stir, repeat until you get a smooth mixture – the chocolate should be melted completely. Let cool down a bit, then add 2/3 of the reduced beer and mix in – keep 1 tablespoon for the frosting. Add the egg white, vanilla extract and salt – mix until combined. Add the flour and mix until just combined – do not overmix! You’re done, when you see no more whit spots of flour in the batter. Pour into the tin, smooth out the top and bake for 40-45 minutes or until a toothpick inserted in center comes out clean. Take out of the oven and let cool down completely.
3. For the frosting add the cream cheese, confectioner’s sugar and remaining reduced beer to a bowl and mix until well combined. Frost the brownies, cut into squares and serve.
2. Den Ofen auf 175°C (350°F) vorheizen. Eine quadratische Form (18x18cm bzw. 7x7inches) mit Backpapier auslegen und zur Seite stellen. Die Schokolade hacken und in eine große mikrowellenfeste Schüssel geben. Das Streichfett, Kakao und Zucker zugeben. In der Mikrowelle (alternativ über einem Topf mit köchelndem Wasser) für 15-20 Sekunden erhitzen und dann verrühren. So oft wiederholen, bis eine glatte Masse entstanden ist – die Schokolade sollte komplett geschmolzen sein. Etwas abkühlen lassen und dann ca. 2/3 der Bierreduktion zugeben und unterrühren. Für das Frosting sollte etwa 1 EL vom Bier übrig bleiben. Das Eiweiß, Vanille Extrakt und Salz zugeben und alles gut verrühren. Das Mehl zugeben und nur so viel rühren, dass man keine Mehlklümpchen mehr sehen kann – nicht zu viel rühren! Den Teig in die Form füllen und glattstreichen. Für 40-45 Minuten backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und erst herausnehmen, wenn der Zahnstocher sauber herauskommt. Aus dem Ofen nehmen und komplett auskühlen lassen.
3. Für das Frosting den Frischkäse mit Puderzucker und der übrigen Bierreduktion verrühren. Die Brownies damit bestreichen und in Stücke schneiden.
