Have you ever baked with beer? It’s not done that often, but it works quite well. Dark beer in combination with dark chocolate can turn into something really tasty! You want to try it? Well, how about some Stout Beer (Chocolate) Brownies? They are easy to prepare and really, really tasty. Give it a try! ;)

Brownies are quite popular – they are sold in pretty much every coffee shop around the world, bakeries sell them, and you can even get them in supermarkets these days. Are all brownies made the same? Are all those brownies good? Well… most of them are edible, let’s put it that way. But really good?! IDK.
We might be a little biased here because we prefer homemade stuff, but there are definitely some industrial baked goods that are definitely delicious. However, when it comes to brownies, we honestly haven’t found anything that really knocks our socks off. The perfect brownie texture is also not that easy to achieve, especially when those products have to last longer on the counter of a coffee shop or have to even last for weeks as in supermarkets, for example…

The perfect brownie is baked through, but so moist you can almost see the imprint of your teeth when you take a bite… you know what we mean, don’t you? ;P Brownies should never be as dry as a regular cake, but of course they shouldn’t be wet and soggy either. That would mean they haven’t been baked properly. A test with a toothpick is always recommended for brownies if you want to know whether they have baked long enough.
In addition to the consistency, it is also important for many brownie fans that they have that typical surface that looks smooth and shiny and breaks into large pieces when you cut the brownies into smaller pieces. A good example of this type of brownie are our (World class) Fudgy Brownies. Though… here you don’t have to worry about the surface of the brownies – that is covered with cream cheese frosting anyway. ;P

If you’re worried about tasting the alcohol from the beer in these brownies – forget about it immediately. Most of the alcohol is gone before the beer even gets into the batter. Boiling the beer down almost completely evaporates the alcohol – whatever remains is the slightly bitter-sweet taste of the beer, which harmonizes perfectly with the dark chocolate.

INGREDIENTS / ZUTATEN
For the batter:
1 cup (240ml) stout beer*
3.5 oz. (100g) semi-sweet chocolate (85%)*, chopped
1/2 cup (120g) butter (or margarine)
2/3 cup (80g) cocoa powder
1 cup (200g) sugar
1 medium egg white
1 tsp. vanilla extract
1/4 tsp. salt
1/2 cup (65g) all-purpose flour
For the frosting:
4.2 oz (120g) cream cheese
3.5 oz (100g) confectioner’s sugar
1 tbsp. beer reduction (see directions)
Für den Teig:

100g Zartbitterschokolade (85%)*, gehackt
120g Butter (oder Margarine)
80g Kakao
200g Zucker
1 Eiweiß (M)
1 TL Vanille Extrakt
65g Mehl (Type 405)
1/4 TL Salz
Für das Frosting:
120g Frischkäse
100g Puderzucker
1 EL Bierreduktion (s. Zubereitung)

DIRECTIONS / ZUBEREITUNG
1. Start with the beer reduction. Add the beer to a small saucepan and bring it to a boil. Let the beer cook and boil down to about 1/3rd (80ml) of the original amount. Set aside and let cool down. Take one tablespoon of the beer reduction and set it aside for the frosting.
2. Preheat the oven to 180°C (350°F). Line a square baking tin* (18×18 cm) with baking parchment and set aside.
3. Chop the chocolate and add it to a microwave-safe bowl. Add butter (or margarine), cocoa powder, and sugar and heat up the mixture in the microwave until the chocolate and butter melted completely. You want it to turn into a smooth chocolate sauce. In case you don’t have a microwave, melt everything over a pot with simmering water.
4. Add the chocolate sauce and the beer reduction to a large mixing bowl and stir to combine. Next, add the egg white and vanilla extract and mix until well combined. Add flour and salt and mix until just combined – do not overmix! Transfer the batter to the prepared baking tin and spread evenly. Bake the brownies for about 40-45 minutes – or until a toothpick inserted in the center of the brownies comes out (almost) clean. Take out of the oven and let cool down completely.
3. For the frosting, add cream cheese, confectioners’ sugar and the beer reduction to a bowl and mix until well combined. Remove the brownies from the baking tin and spread the frosting evenly on top before cutting into squares.
1. Als Erstes das Bier einkochen – dafür das Bier in einen kleinen Topf geben, aufkochen und so lange köcheln lassen, bis sich die Flüssigkeit auf etwa 1/3 reduziert hat (80ml). Zur Seite stellen und abkühlen lassen. Ein Esslöffel der Bierreduktion für das Frosting abnehmen und beiseite stellen.
2. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Eine quadratische (18×18 cm) Backform* mit Backpapier auslegen und zur Seite stellen.
3. Die Schokolade grob hacken und in eine große, mikrowellensichere Schüssel geben. Die Butter (oder Margarine), Kakao und Zucker zugeben und in der Mikrowelle erwärmen, bis Butter und Schokolade geschmolzen sind und eine glatte Schokoladensoße entstanden ist. Geht natürlich auch über einem Topf mit köchelndem Wasser, wenn keine Mikrowelle vorhanden ist. Die Mischung ein wenig abkühlen lassen.
4. Die Schokoladenmischung zusammen mit der Bierreduktion in eine große Rührschüssel geben und verrühren. Eiweiß und Vanille Extrakt zugeben und gut unterrühren. Mehl und Salz dazugeben und dann nur noch wenig rühren. Den Teig in die vorbereitete Form füllen, glatt streichen und dann für etwa 40-45 Minuten backen. Mit einem Zahnstocher testen, ob noch Teig kleben bleibt und die Brownies erst herausholen, wenn dieser (fast) komplett sauber herauskommt. Brownies aus dem Ofen nehmen und in der Form abkühlen lassen.
5. Frischkäse, Puderzucker und Bierreduktion für das Frosting verrühren. Die Brownies aus der Form lösen, mit dem Frosting bestreichen und dann in Stücke schneiden.
