For the batter
- 1 cup (240ml) dark beer (stout)
- 3.5 oz. (100g) semi-sweet chocolate (85%), chopped
- 1/2 cup (115g) Arla Kærgården salted
- 2/3 cup (80g) cocoa powder
- 1 cup (200g) sugar
- 1 egg white
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/2 cup (65g) all-purpose flour
For the frosting
- 3.5 oz (100g) cream cheese
- 1 cup (130g) confectioner’s sugar
- 1 tbsp. reduced beer (saved from the batter ingredients)
Instructions
- Add the beer into a small saucepan and bring to a boil. Let cook and reduce the beer to 1/3rd (80ml) of the original amount. Set aside to cool down a bit.
- Preheat the oven to 350˚F (175°C). Line a 7×7 inch (18x18cm) square tin with baking parchment and set aside. Chop the chocolate and add to a large microwave-safe bowl. Add the spreadable fat, cocoa powder and sugar. Heat up in the microwave for 15-20 sec. and then take out and stir, repeat until you get a smooth mixture – the chocolate should be melted completely. Let cool down a bit, then add 2/3 of the reduced beer and mix in – keep 1 tablespoon for the frosting. Add the egg white, vanilla extract and salt – mix until combined. Add the flour and mix until just combined – do not overmix! You’re done, when you see no more whit spots of flour in the batter. Pour into the tin, smooth out the top and bake for 40-45 minutes or until a toothpick inserted in center comes out clean. Take out of the oven and let cool down completely.
- For the frosting add the cream cheese, confectioner’s sugar and remaining reduced beer to a bowl and mix until well combined. Frost the brownies, cut into squares and serve.
