Happy Cookie Friday! I hope you all are well and you don’t have gone completely mad yet with the global situation ;) Today I got another delicious cookie recipe that works without flour – I still get many requests for recipes like that since the flour and toilet paper crisis started. You don’t even have to bake these (Sugar-free) Bo-Bake Chocolate Oatmeal Cookies – no flour, no oven… could it be easier?! ;)

Baking without sugar (or using substitutes in some cases) has become quite normal for me. Baking without regular flour is still a bit challenging since it is not something I do willingly. It’s more of a necessary adaption to the situation… but hey – it could be worse :P
These cookies here are easy peasy to prepare. All you need is a saucepan and a wooden spoon. The “baking process” is happening on the stove and not in the oven. You could also say that these are cooked cookies instead of baked cookies. Making them is as easy as throwing a pack of noodles into boiling water… ;)

Even though the cookies are easy to prepare – depending on how much the cookie batter thickens during the cooking process and depending on what kind of oats you use, the time to dry these cookies can vary quite a lot. The two hours in the recipe are the minimum I would say, but it can take much longer to dry those little fellas. Because of that, I recommend a finer more delicate type of oats. We have here in Germany thin ones and thicker ones – the finer oats absorb moisture a bit better than coarse spelt flakes, for example. But even with spelt flakes you can make these cookies work – it probably just takes a bit longer. If they don’t want to dry at all, place them in the fridge – they firm up in the cold environment and should be stored there anyway ;)
INGREDIENTS / ZUTATEN
2.1 oz. (60g) butter
1/2 cup (50g) xylitol
1/4 cup (60ml) milk
2 tbsp. cocoa powder
1/2 tsp. vanilla extract
2.1 oz. (60g) peanut butter* (sugar-free)
5.3 oz. (150g) rolled oats
2 tbsp. toasted hazelnuts, chopped
60g Butter
50g Xylit
60ml Milch
2 EL Kakao
1 /2 TL Vanille Extrakt
60g Erdnussbutter* (zuckerfrei)
150g Haferflocken (Feinblatt)
2 EL geröstete Haselnüsse, gehackt

DIRECTIONS / ZUBEREITUNG
2. Line a baking sheet with baking parchment and drop small amounts of the mixture on the baking sheet – using a cookie scoop works best here. Shape into cookies and let cool down and set for about 2 hours before serving. If your kitchen is warm you might want to do that in the fridge. Store in a cool place.
2. Ein Backblech mit Backpapier auslegen und kleine Portionen der Mischung auf das Blech setzen – ein Eisportionierer funktioniert hier am Besten. Die Teigportionen flach drücken und zu Cookies formen, dann für 2 Stunden abkühlen und fest werden lassen. Wenn es in der Küche warm ist, besser in den Kühlschrank legen. Die fertigen Cookies an einem kühlen Ort lagern.

What is Xylitol.? I haven’t heard of it here in Australia. I’m assuming it is an artificial sweetener but is it in powder form or liquid?
Xylitol is a natural sweetener that is produced from hard wood sources, predominantly Birch and Beech. Looks like regular sugar and can be used the same way.

Sounds good. Except Xylitol is POISONOUS TO DOGS. Artificial Sweeteners scare me.
So is chocolate – would not give either to my dog ;)
