Brownies are the perfect sweet treat for many people out there. Packed with chocolate and sugar it’s hard to resist – I have to be honest ;) Today I got a recipe that works without plant-based ingredients only. Very simple Vegan Brownies. Even though the brownies are vegan – do not mistake them for being “healthy” just because they are vegan. The absence of dairy products or eggs does not mean there is not a lot of fat and carbs involved. Be aware of that ;P
Over the last several years we reduced our meat consumption quite a lot. For dinner, for example, we prefer making some salad over burgers or other kinds of meat dishes. Whenever we actually do crave a burger, we often use plant-based patties to make delicious burgers. If you use the right stuff and prepare it well it’s as delicious as a “real” burger ;)
When it comes to baking I am still using a lot of dairy products and eggs. That means the recipes are normally vegetarian but not that often vegan. The number of vegan recipes is still small but constantly growing. I like to bake with butter, milk, and eggs – can’t deny that ;P
But that doesn’t mean it won’t work without. Best example – these delicious vegan brownies!
Instead of butter, oil is used here and the eggs are replaced by some applesauce. You could work with a few other alternatives here, but the combination of oil and apple sauce works really well for these brownies here. They turned out really rich and chocolaty, sweet and compact – just like good old brownies should be ;)
As mentioned above… “vegan” should definitely not be mistaken for “healthy” here. These are still sweet little calorie bombs with all that sugar and fat. You could save some calories by using a sugar replacement if you want to, but to be honest – if you want good brownies you have to live with the consequences. This means doing some extra minutes on the treadmill or walking the extra mile with your doggy. If you do that you can have one of the brownies without regretting it later ;P
INGREDIENTS / ZUTATEN
1 cup (200g) sugar
1/2 cup (120ml) water
1/2 cup (120ml) vegetable oil
3 oz. (90g) apple sauce
2 tsp. vanilla extract
1 1/2 cups (200g) all-purpose flour
3/4 cup (90g) cocoa powder
1/2 tsp. baking powder
1/2 tsp. salt
3.5 oz. (100g) semi-sweet chocolate (vegan), chopped
200g Zucker
120ml Wasser
120ml Pflanzenöl
90g Apfelmus
2 TL Vanille Extrakt
200g Mehl (Type 550)
90g Kakaopulver
1/2 TL Backpulver
1/2 TL Salz
100g (vegane) Zartbiiterschokolade, gehackt
DIRECTIONS / ZUBEREITUNG
2. Add the sugar and water to a saucepan and heat up gently – stir until the sugar has dissolved completely. Remove from the heat and mix in the oil, apple sauce, and vanilla extract. Set aside.
3. In a large bowl mix the flour with cocoa powder, baking powder, and salt. Add the wet ingredients and mix until just combined. Add the chopped chocolate and fold in. Transfer the batter to the prepared baking tin and smooth out the top. Bake for about 35-40 minutes or until a wooden skewer inserted into the brownie comes out clean. Take out of the oven and let cool down completely. Lift the cooled brownie out of the tin with the baking parchment and cut into 12 or 16 pieces. Enjoy!
2. Zucker und Wasser in einen Topf geben und langsam erwärmen – so lange rühren, bis sich der Zucker vollständig aufgelöst hat. Vom Herd nehmen und Öl, Apfelmus und Vanille Extrakt einrühren. Zur Seite stellen.
3. Mehl, Kakao, Backpulver und Salz in einer großen Schüssel vermischen. Die Zutaten aus dem Topf dazugeben und nur kurz unterrühren – auf keinen Fall zu lange rühren! Die gehackte Schokolade dazugeben und unterheben. Den Teig in die vorbereitete Backform füllen und glatt streichen. Für etwa 35-40 Minuten backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und die Brownies erst herausholen, wenn dieser sauber herauskommt. Aus dem Ofen nehmen und komplett abkühlen lassen. Mit dem Backpapier aus der Form heben und dann in 12 oder 16 Stücke schneiden.
