Mother’s Day is a day to celebrate all mothers. The day to pamper your mom and make her feel like the queen of the world. To be honest – every day should be Mother’s Day, right? Without them, we all would not be here. So be a nice son or daughter and do something nice. Minimum once a year. More often would actually be better ;) So how about preparing a nice breakfast or brunch for your mom with all the things she likes? Not only on Mother’s Day. Sounds good and not too complicated, right? ;)
If your mom is into flowers and chocolates you can gift that along with the breakfast too, of course. Make mom happy. Make her forget she suffered so much because of you! Just kidding ;P
The options for a delicious breakfast or brunch on Mother’s Day are endless. I am more into a hearty breakfast, but today it’s not about me ;P Mom is the one to please – this means if she likes it sweet, you should give her what she wants. To give you some ideas on what to prepare I collected a bunch of breakfast and brunch recipes here today – sweet and savory stuff. Everything from pancakes to breakfast tacos. I am pretty sure there is something for everyone here…
Let’s start with the sweet stuff. From baked granola to cereal chocolate chip cookies – there are almost endless possibilities on what to serve for breakfast. If your mom has a sweet tooth she might like one or all of the dishes here ;)
Sweet Treats for breakfast
Baked Granola with Berries
Muesli is a simple way to start your day – a small bowl with muesli and some milk on top and you’re done. Or you bake your muesli and turn it into baked granola. Something even better when served with some yogurt and fresh fruits or berries. Extremely delicious and a healthy way to start your day.
Vegan Overnight Oats with Baked Granola
Another recipe from the “cereals category”: Overnight Oats. One of the easiest dishes you can serve for breakfast. The night before serving you just fill up a glass jar with oats, chia seeds, etc., add some (plant-based) milk and let it soak overnight. That’s all. Well almost. Before serving you can add some fresh fruit, berries, and/or granola on top and you’re done. Easy peasy. If you don’t want to prepare and bake your granola for the topping you can use regular (storebought) muesli instead. No problem. Or leave it out completely. This dish is vegan but if your mom does not want/need a vegan breakfast, you can switch the plant-based “dairy” products with regular ones, of course.
Cereal Browned Butter Chocolate Chip Cookies
This is the breakfast for all cookie-loving moms out there (and dads too, of course)! Anyone that likes chocolate chip cookies will definitely like these Cereal Chocolate Chip Cookies to start the day. The cookies require slightly more work than other recipes here on the list because you have to bake all of those little cookies first, but the time is spent well… everyone in our house loves these breakfast cookies ;)
Dutch Baby with Plum Compote
One of my favorite dishes to make breakfast the best meal of the day: Dutch Baby (or Dutch Babies if you want to serve more than one). Huge puffed-up pancakes that are served with all kinds of toppings. So good! f you’re not into the plum compote I suggest in the recipe, you can use lots of other things here. Fresh fruit or berries, your favorite jam, chocolate or nougat cream, lemon curd…. let your imagination run wild here. The best thing about these babies?! Super easy to prepare!
Easy Bread Pudding with Berries
To celebrate your mom you would normally use only the freshest ingredients to prepare breakfast, right? Well… in this case, you need stale old bread/brioche to create the dish. This bread pudding here is the perfect dish for moms that are into recycling and upcycling ;P Take something old and turn it into something new (and delicious). Just kidding… it’s simply a delicious treat your mom will love for sure!
Banoffee Chocolate Pancakes
There is no way I could create a selection of breakfast recipes without having pancakes on the list. If your mom is into sweet breakfast it’s very likely she loves pancakes too. These here are not the good old “regular” buttermilk pancakes with syrup on top. These here are delicious and fluffy chocolate pancakes with loads of whipped cream, bananas, and caramel sauce on top. Also known as Banoffee Chocolate Pancakes. So good! I start drooling just writing about them ;P
Not every mom likes sweet stuff in the morning. Fortunately, there are at least as many savory options to make your mom happy as there are options for sweet treats. By the way, hearty doesn’t always mean bacon and eggs – even if the first recipe is based on this combination. Loads of savory dishes we prepare for breakfast are actually vegan. Savory happiness in the morning
Bacon & Egg Breakfast Bowls
Instead of serving fried eggs with bacon and some bread on the side, this dish combines everything in one. Bread bowls filled with bacon & eggs and topped with a generous amount of cheese. So good! I recommend preparing a whole tray of these little bowls – they normally go quickly ;P
Breafast Tacos with Chicken
I’m a big fan of tacos – even for breakfast. You place all the ingredients you need on the table and then everyone can assemble their own tacos. This can be a bit chaotic sometimes, thb, but I think it’s a lot of fun. A small fight in the morning for the last piece of chicken prepares you well for the day. Just kidding ;P
Vegan Chickpea Turmeric Crêpes with Mushrooms & Spinach
If you (or your mom) prefer something vegan to start your day, you should definitely try these delicious crêpes. They are not only incredibly delicious but also good for your body and your health thanks to chickpea flour and turmeric added to the batter. A delicious and light dish for breakfast.
Vegan Breakfast Bowls with Vegan Scrambled Eggs
These days you get about everything in bowls – from traditional dishes like Bibimbap to smoothie bowls. Everything is served in bowls so it looks nice ;) Well.. the Vegan Breakfast Bowls here with Vegan Scrambled Eggs could actually be served on a regular plate… just saying ;) No matter what shape of ceramics you use to serve this dish – it is definitely delicious!
Breakfast Huevos (Ranch Style Eggs)
Last but not least I have a very simple recipe. Huevos Rancheros is a dish coming from the Tex-Mex cuisine you could actually eat any time of the day. We like to serve it for breakfast because it is so easy to prepare. Whenever we got some refried beans and tortillas at home this is the breakfast we make in the morning. Almost as easy to prepare as making some coffee ;P
