Anyone can make small cookies, but extra-large cookies… those can be found right here! ;) If you like walnuts, you’ll probably love these Walnut Chocolate Chip Cookies. Crispy on the outside and soft on the inside when they’re fresh out of the oven. Simply delicious and extra-large! The Cookie Monster would certainly love these cookies! ;)
You will find cookies on every website that is out there. When you first enter a website you have to decide whether you want to accept them or not (at least if the website operator plays by the GDPR rules). On this page you get cookies no matter what you do ;P (Yes… that was a bad cookie joke) Not talking about the invisible cookies that websites save, of course. I mean real cookies you can bake and eat. Maybe I should say cookie recipes to avoid confusion ;P
All joking aside. We are not joking about food here, nor we are playing with it. It’s all about (real) oversized cookies here. The bigger, the better, right? ;)
I’m a big fan of simple chocolate chip cookies. If you bake them properly, they’re simply awesome! However, I don’t mind when you add a little something extra to good old chocolate chip cookies… spices, fruits, nuts. It’s actually quite easy to create something delicious and new with only a few changes to a basic recipe.
As the name and pictures suggest, these cookies here have been given some walnuts as a »special ingredient«. They got walnuts added to the dough and quite obviously a good amount of walnuts on top for decorations. The cookie dough was thoroughly tossed in chopped walnuts before baking so (as many) nuts (as possible) would stick to the dough. You won’t get the same results if you just sprinkle some on top. Just sayin’ ;P
If you like to bake cookies more often, you should definitely consider getting some »special« equipment. Many of you will have some of it at home already – mixing bowls, baking trays, baking parchment… and perhaps the most important tool: an ice cream scoop ;) Cookie bakers call them »cookie scoop« instead of ice cream scoop. The perfect device to get the same amount of dough onto a baking sheet over and over again resulting in cookies of the same size. If you have a good eye, you can also use tablespoons (of course), but an ice cream scoop aka. a cookie scoop makes things a lot easier ;P

INGREDIENTS / ZUTATEN
(14-15 cookies)
1/2 cup (120g) butter, at room temperature
1/2 cup (100g) brown sugar
1/4 cup (50g) sugar
1 large egg
1 tsp. vanilla extract
1 1/3 cups (180g) all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1.8 oz. (50g) semi-sweet chocolate, roughly chopped
1.8 oz. (50g) milk chocolate, roughly chopped
3.5 oz. (100g) walnuts, roughly chopped & divided (plus a little more, if necessary)
(14-15 Cookies)
120g weiche Butter
100g brauner Zucker
50g Zucker
1 Ei (L)
1 TL Vanille Extrakt
180g Mehl (Type 405)
1/2 TL Backpulver
1/2 TL Salz
50g Zartbitterschokolade, grob gehackt
50g Vollmilchschokolade, grob gehackt
100g Walnüsse, grob gehackt & aufgeteilt (ggf. etwas mehr)
DIRECTIONS / ZUBEREITUNG
1. Roughly chop the semi-sweet chocolate and milk chocolate, as well as the walnuts. Divide the walnuts – half of them are for the dough, the rest is for the decoration. Set everything aside.
2. Add the butter and both of the sugars to a large bowl and mix on high for a few minutes until very light and fluffy. Add the egg and vanilla extract and mix in. In a separate bowl, mix the flour with baking powder and salt. Add everything to the large bowl and mix until just combined. Next, add the chopped chocolate and half of the chopped walnuts and fold in. Place the dough in the fridge for at least 2 hours (or overnight).
3. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment. Prepare a small bowl with the remaining chopped walnuts for the decoration. Use a cookie scoop* or a tablespoon to scoop dough out of the bowl and then press it into the walnuts. Place the dough portions on the baking sheet with some space in between – the cookies will spread slightly.
4. Bake the cookies for about 12 minutes – the edges of the cookies should be firm and slightly browned. The centers of the cookies should be still a bit soft. Remove the cookies from the oven and let cool down a bit on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough and bake more cookies.
1. Die Zartbitter- und Vollmilchschokolade, sowie die Walnüsse grob hacken. Die Walnüsse aufteilen – die Hälfte ist für den Teig, der Rest für die Dekoration. Alles zur Seite stellen.
2. Beide Zuckersorten und die weiche Butter in einer großen Schüssel einige Minuten hell und luftig aufschlagen. Das Ei und den Vanille Extrakt dazugeben und gut unterrühren. Mehl mit dem Backpulver und Salz vermischen und dann zur großen Schüssel dazugeben und kurz unterrühren. Die gehackte Schokolade und die Hälfte der gehackten Walnüsse dazugeben und unterheben. Den Teig für mindestens 2 Stunden (oder über Nacht) in den Kühlschrank stellen.
3. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Eine kleine Schüssel mit den verbliebenen gehackten Walnüssen für die Dekoration bereitstellen. Mit einem Cookie Scoop* oder einem Esslöffel Teig abstechen und dann in die Walnüsse drücken. Die Teigportionen mit etwas Abstand zueinander auf das Blech setzen – die Cookies laufen etwas auseinander.
4. Die Cookies für etwa 12 Minuten backen – die Ränder der Cookies sollten fest sein und dürfen etwas Farbe bekommen haben, in der Mitte sollten die Cookies allerdings noch leicht weich sein. Aus dem Ofen holen und auf dem Blech kurz abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Mit dem restlichen Teig wiederholen und weitere Cookies backen.
