Summer is the time for light lunches and dinners, right? When it’s hot you don’t want to eat something heavy like a pot roast or stuff like that. That’s something for winter. We love to prepare salads in summer – almost every day of the week ;) A simple salad with lettuce is already great – but if you want to treat yourself, you should try this Simple Quinoa Salad with Apple & Mango. So easy to prepare and extremely delicious… and also quite healthy. That never hurt nobody ;)
We are really happy with a plain salad with lettuce, cucumber, and tomatoes. It’s basically our number one salad in summer. It’s super easy to prepare and tastes excellent. If the harvest goods are on our side we can even use veggies from our little garden on the terrace. Lettuce and tomatoes are both growing quite well here ;)
Of course, there are many other delicious salads you can make in the summer (as well as in winter). This one here with quinoa, apples, and mango is just one of many tasty examples. Quinoa is generally considered quite healthy, packed with minerals and protein. The small grains contain more protein than rice, for example. On top of that, the »pseudo-grains« (that’s what it’s called sometimes) are also gluten-free. This means quinoa is a fantastic base for a wide variety of diets – vegan, vegetarian, gluten-free, low-carb… and not only great for a salad tbh.
This quinoa salad is also a great option if you are into meal prepping. We often have leftovers when serving this salad because we tend to prepare more than necessary. If you don’t mind eating the same salad two days in a row this might be a recipe for you ;) Normally you have to be a bit more careful when using apples in a meal prep recipe, but thanks to the salad dressing with lime juice that’s not a problem at all here. The apples should not brown much when stored properly (airtight) in the fridge and coated with the dressing ;P
If you want to switch up things (or in case apples are not your »thing«) you can prepare the salad with pears or maybe some (roasted) pineapple as well. Both should work flavorwise well with the mango. I think red bell peppers could work as well… they are also a bit sweeter.

INGREDIENTS / ZUTATEN
(2-3 servings)
100g quinoa (tricolor)*
1 cup (250ml) water
1 pinch of salt
4 tbsp. olive oil
2 tsp. agave syrup (or maple syrup)
2 tsp. lime juice
salt, pepper
some soy sauce
1 large apple (Granny Smith), diced
1 small mango, diced
some fresh coriander, chopped
(2-3 Portionen)
100g Bunter Quinoa*
250ml Wasser
1 Prise Salz
4 EL Olivenöl
2 TL Agavendicksaft (oder Ahornsirup)
2 TL Limettensaft
Salz, Pfeffer
etwas Sojasoße
1 Apfel (Granny Smith), gewürfelt
1 kleine Mango, gewürfelt
etwas frischer Koriander, gehackt
DIRECTIONS / ZUBEREITUNG
1. Rinse the quinoa with water and add it to a small pot with a cup of water and a pinch of salt. Bring to a boil, reduce the heat, and let simmer for about 15 minutes. The quinoa should have completely absorbed the water. Remove the pot from the heat, cover the pot alt let sit for another 10 minutes.
2. In a large bowl mix the oil, agave syrup (or maple syrup), and lime juice, season with some soy sauce, salt, and pepper. Add the quinoa (while still slightly warm) and mix well. Set aside and let sit for some time, so the quinoa can marinate a bit.
3. Quarter and core the apple, then cut it into small cubes. Cut the mango close to the stone to get as much pulp as possible. Separate the pulp from the skin and cut into small cubes. Add apple and mango pieces to the quinoa and mix. Sprinkle with some chopped cilantro and serve.
1. Den Quinoa mit Wasser durchspülen und dann in einem kleinen Topf mit dem Wasser und einer Prise Salz einmal aufkochen lassen, die Hitzezufuhr reduzieren und dann für etwa 15 Minuten köcheln lassen. Der Quinoa sollte das Wasser vollständig aufgenommen haben. Den Topf vom Herd ziehen und abgedeckt noch einmal 10 Minuten quellen lassen.
2. Öl, Agavendicksaft (oder Ahornsirup) und Limettensaft in einer großen Schüssel verrühren, mit Sojasoße, Salz und Pfeffer würzen, dann den (noch leicht warmen) Quinoa dazugeben und alles gut vermengen. Zur Seite stellen und kurz ziehen lassen.
3. Den Apfel vierteln und entkernen, dann in kleine Würfel schneiden. Die Mango nahe am Kern einschneiden, um möglichst viel Fruchtfleisch zu bekommen. Das Fruchtfleisch von der Schale trennen und in kleine Würfel schneiden. Beides zum Quinoa dazugeben und vermengen. Mit etwas gehacktem Koriander bestreuen und servieren.
