Easy Quinoa Salad

Ingredients

Scale
  • 100g quinoa
  • pinch of salt
  • 1 large green apple
  • 1 mango
  • 4 tbsp. vegetable oil
  • 2 tsp. agave syrup
  • 2 tsp. lime juice
  • soy sauce
  • cilantro
  • salt, pepper

Instructions

  1. In a sauce pan add the quinoa, pinch of salt and 1 cup (250ml) water. Bring to a boil then lower the heat and let simmer for about 15 minutes until the water is mostly gone. Pour into a sieve and let drain.
  2. In a bowl mix the oil, agave syrup and lemon juice. Season with soy sauce, salt and pepper. Add the quinoa when it is still a bit warm. Set aside and let the quinoa suck up the flavors for a couple minutes.
  3. Chop some cilantro leaves. Remove the center of the apple and cut into small pieces. Cut along the stone of the mango to get as much pulp as possible, cut also into small pieces (if the mango is organic, you can also eat the skin). Add to the quinoa and gently mix. Fill into bowls or glasses and serve with some mango puree.
