Description
An easy and quick salad that’s perfect for a hot summer day: Quinoa Salad with Apple & Mango. So delicious and refreshing! Great as a side salad or small meal during the day.
Ingredients
100g quinoa (tricolor)*
1 cup (250ml) water
1 pinch of salt
4 tbsp. olive oil
2 tsp. agave syrup (or maple syrup)
2 tsp. lime juice
salt, pepper
some soy sauce
1 large apple (Granny Smith), diced
1 small mango, diced
some fresh coriander, chopped
Instructions
1. Rinse the quinoa with water and add it to a small pot with a cup of water and a pinch of salt. Bring to a boil, reduce the heat, and let simmer for about 15 minutes. The quinoa should have completely absorbed the water. Remove the pot from the heat, cover the pot alt let sit for another 10 minutes.
2. In a large bowl mix the oil, agave syrup (or maple syrup), and lime juice, season with some soy sauce, salt, and pepper. Add the quinoa (while still slightly warm) and mix well. Set aside and let sit for some time, so the quinoa can marinate a bit.
3. Quarter and core the apple, then cut it into small cubes. Cut the mango close to the stone to get as much pulp as possible. Separate the pulp from the skin and cut into small cubes. Add apple and mango pieces to the quinoa and mix. Sprinkle with some chopped cilantro and serve.
