You would like to have something sweet for dessert now? No problem. If you have some puff pastry in your fridge, some cream cheese, and an apple you can make these delicious Apple Cheesecake Turnovers in no time. Quick and easy recipe and pretty darn delicious I might add ;) Perfect for your cup of coffee or tea in the afternoon. No need to bake a cake for 10 people if you want a small snack only ;P
Even though it’s fun to bake cakes, pies, and stuff like that – a quick sweet snack definitely has its perks too. Much less time to spend in the kitchen and if someone is coming by for a surprise visit, this can be done in no time and without much effort. Whenever someone calls you and says “… oh we’re close by – should we stop by in 30 minutes for a coffee?” Well, of course! No problem! I am prepared ;P
These little packages aka. turnovers here are made with cream cheese and apples but theoretically, you could use all kinds of fruits and berries if you like. In autumn I think apples are the most obvious filling to choose, but in summer I also like to use raspberries or blackberries. Both are very tasty. If you don’t have a sweet tooth, you can use the same recipe basically for a savory snack as well. Leave out the sugar and add some cheese, sausage, or some sautéed meat and you’re good to go ;)
These apple turnovers can be prepared relatively easily without added sugar, as described in the recipe. They will not be 100% sugar-free though. The apple, of course, has some sugar in it, and also the cream cheese and the puff pastry will not be 100% sugar-free (whatever you use)… but with xylitol instead of the sugar, you will get something sweet without using the white devilish stuff. You could actually leave it out completely if you use an apple that is on the sweeter side of life ;P
INGREDIENTS / ZUTATEN
For the cream cheese filling:
2 oz. (60g) cream cheese
1 tsp. sugar (or xylitol)
1/2 tsp. vanilla extract
For the turnovers:
1 apple, peeled & diced
1 tsp. lemon juice
1 tsp. brown sugar (or xylitol)
1/4 tsp. ground cinnamon
1 pkg. (about 10 oz./280g) puff pastry
1 small egg, whisked
some coarse sugar (optional)
Für die Frischkäsefüllung:
60g Frischkäse
1 TL Zucker (oder Xylit)
1/2 TL Vanille Extrakt
Für die Teigtaschen:
1 Apfel, geschält & gewürfelt
1 TL Zitronensaft
1 TL brauner Zucker (oder Xylit)
1/4 TL gemahlener Zimt
1 Pkg. (ca. 280g) Blätterteig aus dem Kühlregal
1 Ei, verquirlt
Zucker zum Bestreuen (optional)
DIRECTIONS / ZUBEREITUNG
2. For the cream cheese filling mix the cream cheese with sugar (or xylitol) and vanilla extract and set aside.
3. Peel the apple, core and cut into small dices. Add together with the lemon juice, brown sugar (or xylitol), and ground cinnamon to a bowl and mix to combine. Take the puff pastry out of the package and unroll. Cut into 6 equal squares. Spread about a teaspoon of the cream cheese filling on each square – stay away from the edges. Add some diced apples on top of the filling and then fold the pastry over the filling diagonally to form triangles. Press the edges together with a fork and place the turnovers with some space in between on the prepared baking sheet. Brush with the whisked egg and sprinkle with some coarse sugar (optional). Cut small slits into the tops of the turnovers and bake for 18-20 minutes until golden brown and nicely puffed up. Take out of the oven and let cool down on a wire rack. Serve still a bit warm, maybe with some vanilla custard, ice cream, or some whipped cream.
