The closer we get to Easter the less you can avoid chocolate Easter bunnies and chocolate Easter eggs in the stores. They are basically everywhere. As you might know – I am trying to avoid sugar wherever I can, so sweets with chocolate are not always the best option ;) Luckily, you can make some nice Easter sweets/snacks easily at home. These Easter Egg Energy Balls, for example. They are made without any white sugar (also vegan) and really delicious!
If you want to reduce sugar in your diet or skip it completely, you have to avoid sweets from the supermarket. I still buy that stuff but mostly for decorative purposes and then give it away to friends when I’m done taking pictures. I still know enough people that are fit enough to be able to eat some sugary stuff or don’t care at all about their weight or body shape. Lucky b*tches ;P
So far I was not able to find any sweets for Easter that are sugar-free here in Germany. I guess there is not much on the market anyway. Sugar-free sweets are not that popular yet here it seems – compared to other countries we are way behind I think. Similar to internet connectivity and speed ;P Well… fortunately, you can make some (white) sugar-free sweets at home quite easily.
These little Easter eggs are really easy to prepare and done in no time. Provided you have a decent blender/food processor…. otherwise, it could be difficult. The dates have to be pureed and for that, you need a good blender. Luckily, we have an attachment for our food processor* (Amazon Affiliate Link) to do that job. Everything you add and blend with it is a smooth puree within seconds ;) I tried to do that with an immersion blender too, but that was a big fail… so you might want to upgrade your kitchen gadgets for stuff like that. Not only for these Easter eggs, of course ;P
Note: Even though there is no white sugar/refined sugar used in this recipe, the dates contain fructose. That’s better than white sugar, but still not ideal for everyone. If we assume that dates have 1 oz. of fructose per 3.5 oz. that means there is 0.1 oz. of fructose in each egg. Keep that in mind ;)
INGREDIENTS / ZUTATEN
(20 Easter eggs)
For the Easter eggs:
7 oz. (200g) soft dried dates
3.5 oz. (100g) ground almonds
1.8 oz. (50g) ground hazelnuts
2 tbsp. cocoa
2 tbsp. warm water
For the decoration:
2-3 tbsp. pistachios, finely chopped
2-3 tbsp. walnuts, finely chopped
2 tbsp. coconut flakes
2 tbsp. cocoa powder
(20 Ostereier)
Für die Ostereier:
200g getrocknete Datteln (soft)
100g Mandeln, gemahlen
50g Haselnüsse, gemahlen
2 EL Kakao
2 EL warmes Wasser
Für die Dekoration:
2-3 EL Pistazien, fein gehackt
2-3 EL Walnüsse, fein gehackt
2 EL Kokosraspel
2 EL Kakao
DIRECTIONS / ZUBEREITUNG
1. Add the dates to a blender/food processor and chop coarsely, add the ground almonds, hazelnuts, and cocoa and blend until everything has turned into fine crumbs. Add the warm water and mix again briefly until the dough comes together. Shape into a log and cut into 20 slices. Shape each slice with wet hands into a ball and then into an egg. Roll the eggs in the chopped pistachios, walnuts, coconut flakes, or cocoa powder. Store in a tin box in a cool place.
1. Die getrockneten Datteln in einen Mixer/Küchenmaschine geben und grob hacken, dann die gemahlenen Mandeln, Haselnüsse und Kakao dazugeben und so lange mixen, bis alles zu feinen Krümeln verarbeitet wurde. Das warme Wasser dazugeben und noch einmal kurz durchmixen, bis sich eine homogene Masse bildet. Den Teig zu einer langen Wurst formen und in 20 Scheiben schneiden. Die Scheiben mit feuchten Händen erst zu Kugeln formen und diese dann zu Eiern formen. Die Eier dann in den gehackten Pistazien, gehackten Walnüssen, Kokosraspeln und Kakao wälzen und in einer Blechdose an einem kühlen Ort aufbewahren.
