Description

Easter eggs don’t have to be overly sweet – how about some energy-ball-type Easter eggs? You should try!


Ingredients

For the Easter eggs:
7 oz. (200g) soft dried dates
3.5 oz. (100g) ground almonds
1.8 oz. (50g) ground hazelnuts
2 tbsp. cocoa
2 tbsp. warm water

For the decoration:
23 tbsp. pistachios, finely chopped
23 tbsp. walnuts, finely chopped
2 tbsp. coconut flakes
2 tbsp. cocoa powder


Instructions

1. Add the dates to a blender/food processor and chop coarsely, add the ground almonds, hazelnuts, and cocoa and blend until everything has turned into fine crumbs. Add the warm water and mix again briefly until the dough comes together. Shape into a log and cut into 20 slices. Shape each slice with wet hands into a ball and then into an egg. Roll the eggs in the chopped pistachios, walnuts, coconut flakes, or cocoa powder. Store in a tin box in a cool place.
