Do you need something small to snack because there is not enough time to do lunch? Well… how about some Vegan Cinnamon Energy Balls? Those little energy boosters are ready in no time and can then be taken anywhere you go. A convenient snack you can enjoy any time of the day (or night if you need to) ;P
On some days there is just not enough time to do a full lunch. On other days you don’t want to do a full lunch because you want to avoid the “food coma” after a full plate of pasta – maybe because you have a meeting right after or just want your brain to function properly and not check out for an hour because you ate too much ;P
Having a small or light lunch is normally the option I choose. It’s just better if you have a full calendar and want stuff to be done. For the low energy moment in the afternoon after a smaller lunch, you want something to push you a bit – that could be a chocolate bar or… much better… one of these little energy balls ;P
Of course, you can have a cinnamon energy ball at any time of the day or night. Whenever you are feeling low on energy and want to give yourself a little boost – eat one. But not too many a day. I’d say one or two a day are enough here. Unless you are an athlete. Then you can have 2 1/2 I guess. Just kidding ;P
These little energy balls are really quick and easy to prepare. However, you need a good food processor. I always use the blender attachment* of my food processor – that one has enough power and really sharp blades to turn everything into tiny bits and pieces. If you have one of those power blenders this should work as well. Once you got everything chopped up, shape the “dough” into small balls. That’s all you have to do. Really easy. The energy balls should be stored in the fridge and whenever you want one you can take one out and shove it into your face ;P

Description
Sometimes you need a boost of energy – luckily there’s something like these Cinnamon Energy Balls (vegan & free of refined sugar). So delicious!
Ingredients
3.5 oz. (100g) rolled oats
5.3 oz. (150g) soft dates, pitted
1 tbsp. maple syrup
1 tsp. ground cinnamon
1/4 tsp. salt
Instructions
1. Add the rolled oats to a food processor/mixer and mix on high until the oats look like coarse flour. Add the soft dates, maple syrup, cinnamon, and salt, and continue mixing until you get fine and sticky crumbs. The crumbs should stick together if you press them together. If it’s too crumbly, add 1 tsp. warm water and mix a bit longer.
2. Shape the dough into 10 balls and keep them in the fridge (for up to 5 days). If you like it a bit sweeter, you can roll them in some cinnamon sugar as well.
