Chocoholics watch out! Today I got delicious Brownie Cookies with loooads of chocolate! It’s Vegan Bake Together Week so this means these little fellas are not only super chocolaty but also vegan. I guess you figured that out already from the headline… well, sometimes you have to emphasize the obvious to make sure everybody gets the message. Am I right?! ;P
So this week is all about vegan recipes on the blog. Why? It’s “Veganuary”! For us, always a good reason to switch to vegan recipes for one week. By “us” I mean Andrea from Zimtkeks & Apfeltarte and myself. We are doing this vegan week for the third year already and people seem to really like it. The week started with cooking recipes mostly – today is the first time I got something baked for you. Delicious chocolate “bombs” without any dairy products or eggs. It’s actually quite simple to make cookies with only plant-based ingredients. Dairy products like milk can (almost) always be replaced with plant-based drinks. Instead of eggs, you can use something like apple sauce or bananas, for example. Pretty easy.
In case you’re wondering if you can taste the applesauce – not at all. Not a bit. Is hardly possible with the amount of cocoa and chocolate in the cookies tbh ;P
I recommend serving a glass of (plant-based) milk with these cookies. Everything that has a lot of chocolate – brownies, chocolate cookies, etc. – needs some “moral support” to deal with the sometimes overpowering amount of chocolate flavors. A cup of coffee is also fine ;)
By the way, if you like the cookies bigger and flatter, you should press them down before baking. Some people expect American cookies to be quite large. If you do so, shorten the baking time for 1-2 minutes… just a side note ;)

INGREDIENTS / ZUTATEN
2/3 cup (165g) apple sauce (no sugar added)
3/4 cup (150g) raw cane sugar
1/2 tsp. vanilla extract
10.5 oz. (300g) dairy-free dark chocolate, chopped & divided
1/4 cup (60g) vegan butter
3.5 oz. (100g) all-purpose flour
0.7 oz. (20g) cocoa powder
1 tsp. baking powder
some flaky sea salt for sprinkling
165g Apfelmus (ohne Zuckerzusatz)
150g Rohrohrzucker
1/2 TL Vanille Extrakt
300g vegane Zartbitterschokolade, gehackt
60g vegane Butter
100g Mehl (Type 550)
20g Kakao
1 TL Backpulver
Meersalzflocken zum Bestreuen
DIRECTIONS / ZUBEREITUNG
2. Add the apple sauce, cane sugar, and vanilla extract to a large bowl and mix on high for about 3-4 minutes until smooth and lighter in color.
3. Chop the chocolate and add about 7 oz. (200g) to a microwave-safe bowl. Add the vegan butter and melt the chocolate in the microwave. You want a thick and smooth chocolate sauce. Add to the bowl with the apple sauce and mix until well combined. Mix the flour, cocoa powder, and baking powder, then add to the bowl and fold in – do not overmix. Add about half of the remaining chopped chocolate to the bowl and fold in. Use a cookie scoop and place batter portions with some space in between on the baking sheets, press the remaining chopped chocolate into the batter, sprinkle with some flaky sea salt, and bake one baking sheet at a time for 13-15 minutes. The cookies should have set but can still be a bit soft in the center. Take out of the oven and let cool down for some time on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the second baking sheet.
2. Apfelmus, Rohrzucker und Vanille Extrakt in eine große Schüssel geben und auf höchster Stufe etwa 3-4 Minuten lang aufschlagen, bis die Masse glatt ist und eine hellere Farbe hat als zu Anfang.
3. Die Schokolade hacken und etwa 200g davon in eine mikrowellengeeignete Schüssel geben. Die vegane Butter dazugeben und beides schmelzen – es soll eine glatte, dickflüssige Schokoladensauce entstehen. In die Schüssel mit dem Apfelmus geben und gut unterrühren. Mehl, Kakao und Backpulver mischen, zur Schüssel dazugeben und unterheben – nicht zu viel rühren. Etwa die Hälfte der verbliebenen (gehackten) Schokolade in die Schüssel dazugeben und unterheben. Mit einem Keksportionierer Teigportionen mit etwas Abstand zueinander auf die Backbleche setzen, die restliche gehackte Schokolade in den Teig drücken, mit etwas Meersalz bestreuen und jeweils ein Backblech alleine für etwa 13-15 Minuten backen. Die Kekse sollten am Rand fest geworden sein, können aber in der Mitte aber noch ein wenig weicher anfühlen – das passt dann. Aus dem Ofen holen und einige Zeit auf dem Backblech abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Mit dem zweiten Blech wiederholen.
