I am a huge fan of everything curry – no matter if it is a mild dish or spicy. Ok… when you start to tear up and breathe fire it might be a bit too spicy. But in general, almost all curry dishes are really good! Often loaded with veggies, a delicious (spicy) sauce, plus some rice… love it! This Vegan Yellow Curry with Tofu makes no exception. Relatively quick on the table and in addition to that, also an eye-catcher with those bright colors. So good!
If you are the type of person that does not want to spend a lot of time in the kitchen cooking, something like a simple soup or stew is always a good choice. In a short time, you can prepare a delicious meal with a few simple ingredients that can feed a large family if you want to ;) This Vegan Chickpea & Potato Soup takes about 1 hour until it’s ready on the table, but the majority of that time you don’t have to do anything. You let the soup simmer away and actually do not even have to pay attention to it until it’s done ;)
It’s always nice to have some small snacks that you can munch on if you have friends over for a party or movie night. If the snacks are delicious this can be a bit tricky though. If you like everything that is lying around the chances are good you eat too much. These Easy Vegan “Sausage” Snack Rolls are especially delicious and dangerous ;P I think I have eaten half of the plate here… if not more. I had to take an extra walk with the dog at the end of the day. These little things are vegan but neither healthy nor without calories ;P
For the past several years already, January turns into #Veganuary in many places all over the world. That’s the reason why you will find some more vegan recipes than usual here on this blog this month. We are starting the week with something for breakfast – in my case some delicious Vegan Apple Pie Oatmeal with Granola. A great dish to start your day ;)
If you’re as lazy as I am (sorry, not sorry), you try to save time and avoid extra work as best as you can. No matter where. Even when baking cookies! Ok… maybe I am not really lazy… just not in the mood to do stuff several times in a row, clean up stuff several times, etc. That’s why I love me some Slice ‘n’ Bake Cookies like these here. One big bowl of dough makes two completely different batches of cookies. One batch with cashews (a bit salty) and the other batch with cranberries and some extra chocolate. That’s great, isn’t it? ;)
Less is more. Famous architect Ludwig Mies van der Rohe said this about simple design and architecture back in the days. And he was/is right. Same can be applied to the food we eat. It does not mean you have to eat less food in general, but more selective. Reduced meat consumption, for example, is good for your health and also better for the environment… and often cheaper. How do I get to the Veggie Bolognese with this introduction? I don’t know ;P
